What is a Jammy Egg?

If you have never heard of a jammy egg, let me introduce you to your new favorite egg. What is a jammy egg? It’s just another term for a soft-boiled egg with a runny yolk.

I’ve loved boiled eggs my whole life, but I recently discovered this method that delivers jammy hard-boiled eggs every single time. It used to be a happy accident when my boiled eggs turned out jammy, but now? We’ve cracked the secret.

The flavor and texture of the eggs is so much better with a soft, runny yolk. And, this method gets bonus points for requiring very little effort. That’s a win-win, in my book. Jammy eggs are fabulous as a snack with salt and pepper.

Easy to Make Blackberry Lime Bars

These blackberry lime bars are creamy, bright, and super delicious. A little lime juice, a handful of blackberries, a simple graham cracker crust, a few easy steps, and you have sweet, tangy bars that everyone will enjoy.

I learned long ago that women love chocolate and men love berry desserts… supposedly. Things like, Berries and Cream Cheesecake Bars, Razzleberry Pie, or Deep Fried Strawberry Cheesecakes. But that is so not the case with my husband and I.

I definitely prefer all things berry and he is all about the chocolate. Well, unless it’s his favorite Lime Pie Brazil. Which is where this recipe came from. His lime pie recipe that he learned while living in Brazil is made with a cracker crumb crust, sweetened condensed milk, media crema, eggs and lime juice of course.

One day we were trying to decide on dessert and he voted for his pie, but I was in the mood for blackberries. The juicy blackberries were making the filling too soupy when baked, so we took the crema out and it turned out perfect. It totally reminds me of our lemon raspberry bars.

There’s just something about a fresh fruit dessert that makes me feel so light and wonderful. I mean, really. Even if it’s a long and nasty winter I’ll bust out these blackberry lime bars and suddenly winter doesn’t seem so bad.

Oregon Berries

Last summer we had the chance to go to Portland to visit Oregon Berries and it was incredible! The taste of those fresh ripe berries were unlike anything you can buy at the store here. When we buy local we ensure quality and secure the livelihoods of families who are making our country a place of variety and success. Cade and I committed right there to check where our berries are coming from and only buy local.

The blackberries we tasted there made me think of these blackberry lime bars and I just knew I had to reshoot this recipe. So here you go!

Welcome to the weekend, my friends! It’s grad party weekend for my middle son and I’m pretty excited about it. We have family coming into town and friends coming over tomorrow. There is a whole lot of cooking and baking happening over here today. It’s going to be a fun time.

I’m having a bit of a “pinch me, I’m dreaming” moment at the realization that we have two kids done with high school and our youngest will be starting high school this fall. Parenting older kids has been my favorite part of it all. Who knew teens and young adults would be this much fun?? 

And let’s be honest, that might have something to do with the fact that there isn’t nearly so much active parenting required. Life with older kids is approximately 4,729 times less exhausting than actively parenting babies, toddlers, and younger kids. 

So, if you’re closer to the starting line of parenting, just know that young adults you enjoy and want to hang out with are the reward at the end of the parenting trenches. And the ability to sleep in on the weekends? It’s a beautiful thing. 

Now that I’ve been more sentimental than I planned to be this morning, let’s talk about this week’s eats!

Honey Lemon Basil Grilled Chicken [+ Video]

Grilled chicken is the perfect meal for summer! Add a simple marinade of the best flavors, and you’ll be making this Honey Lemon Basil Grilled Chicken all summer long! It is a healthy and easy chicken recipe your whole family will enjoy!

The marinade is made with just 4 ingredients and produces tender, juicy and plump chicken that is delicious on its own, or it can be sliced up and added to your favorite salad or pasta. Pulling the grill out or the Traeger just makes me happy! I love the smoky flavor of food on the grill, and I love getting friends or family together for a fun BBQ. Let’s get to the details of making this simple grilled chicken!

How to Marinate Chicken?

Creating perfectly grilled chicken starts with a good marinade. A marinade infuses the chicken with flavor and helps the chicken stay tender. For this easy grilled chicken recipe, just a few simple ingredients are needed. You probably have them in your house already. No need for a trip to the grocery store!

  • Lemon zest: adds bright fresh flavor
  • Fresh lemon juice: helps tenderize the chicken
  • Honey: adds natural sweetness and helps caramelize the chicken
  • Montreal seasoning: adds flavor

Combine all the marinade ingredients together and reserve a couple of tablespoons for later. Place the chicken thighs in a glass dish and pour the marinade over the chicken. Flip the thighs over so they get coated on each side. Cover with plastic wrap and store in the refrigerator for at least an hour (up to overnight).

Is It Healthy to Eat Grilled Chicken?

Yes! Skinless chicken is a healthy protein, though a chicken thigh is going to have more fat than a chicken breast. If you want a lean meal, go with a chicken breast. Our motto is balance and moderation in all things. Eating grilled chicken for every meal everyday wouldn’t be a healthy practice and pretty extreme, but a nice piece of grilled chicken paired with some healthy fruits and veggie

What’s the difference between Rocky Road and Heavenly Hash?

At their heart, both of these chocolate ice creams contain marshmallows and almonds. Heavenly Hash often contains an additional chocolate add-in, either chocolate chips, flakes, or chunks.

Rocky Road is usually a chunkier ice cream, typically with whole nuts and mini marshmallows, and Heavenly Hash might have smaller pieces of nuts, a marshmallow swirl, and chocolate pieces mixed throughout.
