Peanut Butter Cookie Cups

You only need a handful of ingredients to make these chewy, chocolate and peanut butter filled Peanut Butter Cookie Cups!

Inspired by everyone’s favorite old-fashioned peanut butter cookies, these very simple to make four-ingredient peanut butter cookies are a kid and adult favorite whether you choose to make them with or without the added chocolate.

Made in a mini muffin tin, the small peanut butter cups are the perfect size to hold a peanut butter cup. Press the chocolates into the warm cookies right out of the oven.

I recommend having all the chocolates unwrapped and ready to go when you pull the cookie cups from the oven. Set them on top and press them into the cookies with the back of a spoon to avoid getting chocolate all over your fingers.

The chocolate will melt and then firm up again if the house is cool. When making these in the summer, I like to tuck them into the fridge for an hour or so to speed up the process.

If you choose to make these cookies without the peanut butter cups, the larger cookie cups will sink a bit (you want this to happen!) and create a rich, gooey perfect base for a peanut butter cookie ice cream sundae.

Seriously, what’s not to love about a warm gooey peanut butter cookie, topped with cold ice cream, drizzled with hot fudge or chocolate sauce??

Hi friends! How’s the week going? I hope you’re having a good one so far. We met up with friends for dinner and I caught a glorious hot yoga class.

For today’s post, I’m sharing an updated review of my beloved sauna blanket, the HigherDOSE. Every time I post about this magical wonder on Instagram stories, I’m flooded with questions. I did quite a bit of research before I finally decided to go for it, so I’m breaking it all down in this post.

I’ve now used this beauty for over a year and have so many great things to say about it. It’s become one of the non-negotiables in my weekly health practice and makes a huge difference in my skin and mood.

HigherDOSE Sauna Blanket Review

What is the HigherDOSE sauna blanket and how does it work?

The HigherDOSE sauna blanket is an at-home and portable version of an infrared sauna. It uses infrared heat (which heats your body from the inside out, not the other way around), along with healing tourmaline crystals, clay, and a charcoal layer (which all generate negative ions). It’s made of nontoxic materials and is extremely low EMF, so it’s not emitting radiation throughout your body while you’re relaxing and sweating.

To set it up, you just unroll the blanket and plug it in! You can easily adjust the heat settings with the remote and I usually give it about 10 minutes or so to heat up.

Benefits of infrared sauna:

Sauna means “bath house” in Finnish and heat as therapy has been used for thousands of years. Infrared technology was born in the late 1800s. Over time, saunas have been used for so many things, including healing and preventing illness, for burial preparation, and for childbirth. (It was fascinating to read a bit about the history of saunas here!) It encompassed the circle of life and heat was thought to be a powerful protective and life-giving force.

Obviously technology has changed a ton since then, but today many people still use saunas for the health and restorative benefits. You can find them at gyms, at the spa, and many people own one in their home. Saunas can potentially help with aging, illness, detoxification, healthy skin, increased blood flow, decreased anxiety, muscle soreness, relaxation, and improved mood. Not everyone is on board with the detoxification aspect (some say it’s a myth, but I’m a huge believer in the detoxifying power of a good sweat) and I notice that it makes my skin glow, my mood is improved, and I feel zen and relaxed when it’s a regular part of my routine.

What is pleasanteeism and how is it impacting mental health at work?

If I was to ask you, “How are you doing?” What would your response be? Now, imagine I’m a manager at work asking the same question – has your response changed?

There’s a new ‘ism’ in the workplace: pleasanteeism. This refers to the pressure many of us feel to conceal any stress, anxiety or low mood we may be feeling, choosing to hide behind pleasantries instead. This grin-and-bear-it workplace culture is on the rise, according to healthcare provider Lime Global. Surveying workers in the UK, in February 2022, Lime Global found that 75% of respondents admit to putting on a brave face at work, increasing from 51% in May 2021.

Looking at the causes of this rise, financial concerns and the cost of living were high on the list, with over a third of those surveyed saying they were worried about money. But, while recent economic shifts no doubt have a part to play, concealing negative emotions is something we learn early on.

“We’re taught to hide our feelings from an early age. To stop crying when we’re upset or in pain, to not be angry at people who hurt us,” burnout prevention coach Gaby Grzywacz explains.

“It’s no surprise we take those lessons into the workplace. While at work, we are expected to be professional – and we usually don’t see displaying our feelings as professional. So the thought of being open and honest about it doesn’t cross people’s minds.”

Gaby also notes that there is still a great amount of stigma surrounding mental health, with some fearing that they may be perceived as ‘weak’ – though she notes that it takes courage to be open about your feelings at work.

The fear that’s driving pleasanteeism may be palpable, but hiding your feelings isn’t the answer. Suppressing negative emotions can impact our mental health, affecting our self-esteem, and causing a rise in anxiety and depression. It can also harm our physical health, leading to increased blood pressure and memory problems.

So, how can we find that courage to be more open at work? First, let’s look at the root of the problem: workplace culture.

“If the company has the culture of pushing through all difficulties, delivering perfection, the whole ‘work hard, play hard’ nonsense, it’s unlikely that an employee would feel comfortable disclosing their feelings to their boss until they’re at a point where they can’t do their job,” says Gaby.

Employers need to take the reins when it comes to preventing pleasanteeism, cultivating a culture of openness. “It starts with simple things, for example, a manager admitting that they have a headache, or are feeling a bit down, so they won’t be at their best that day,” Gaby explains. “That shows their team it’s OK not to be at 100% all the time.”

We have taken our buttery delicious coffee cake recipe and transformed it into a convenient muffin. You can grab one on the way out the door to work or send it with your kiddo in their lunch.

Ok, every time we travel there’s a little bit of a fuss about who wants to eat what as we are stuck in the airport waiting on a layover. Thankfully the layovers are never too crazy, but with a little time to kill and hungry bellies to feed, I don’t mind grabbing a few things from a few places and everyone meeting back at the tables to eat together. Every single time someone doesn’t think anything at all sounds good and that’s usually the one that ends up with a bagel or muffin. It’s generally a certain child, but I’ll keep HER name a secret. 

Coffee cake muffins are a go-to but I’m learning that not all are very moist. In fact, many end up pretty darn dry and bland so last year I set out to make a perfect coffee cake muffin that would rival any ol’ coffee shop in town, and this is it.

Why the wait? It kept disappearing before I could get a picture of it. (That tends to happen when I bake at night because we can never resist the warm fragrant bread!)

Determined to share this on the blog with all of you, I strategized before baking it this time. I baked during the day and made two loaves, planning that we’d eat one and then freeze the other loaf for another time.

That may have been a little optimistic considering how irresistible we find this blueberry banana bread. In one sitting, my crew devoured the first loaf and half of the next!

To say this bread is a huge hit every time I make it, doesn’t even begin to express how much we enjoy it. The contrast of the berries and the coconut made this my newest favorite banana bread from the very first bite.

However, the addition of shredded coconut takes this blueberry banana bread to the next level of awesomeness. Made as a loaf or as muffins, this recipe is a sure-fire hit.
