Easy Cucumber Tea Sandwiches

My mom often worked with a group of young women when I was growing up and on one occasion they held a silly Mother’s Day garden party, complete with garden hats in our backyard. I wanted to go so bad, but I was little and this was something I’d have to wait a few years to attend.

It looked like so much fun to a little girl, and I was beyond thrilled when there were some fresh flowers left over that she let me play with. That’s also the first time I’d ever seen a cucumber finger sandwich and I didn’t know what to make of it. Little white bread squares with a slice of cucumber and plain cream cheese.

The Best Bread for Cucumber Sandwiches

Cade and I both wanted to work with eureka!® Organic Bread, but deciding on a recipe together was tricky. I happened to mention that I remember my Mom having a garden party in our backyard and someone brought cucumber sandwiches and Cade was like, “What’s a cucumber sandwich? Just cucumbers?!” It was decided on, cucumber sandwiches would be our recipe.

With spring in the air, I just had to recreate the classic tea sandwich but with our own twist. Cade was in charge of the bread and I don’t know why, but I was a little nervous he wouldn’t choose a good one, haha I need to be more trusting. He came home with Saaa-Wheat! eureka! Organic Bread because according to him, it’s bursting with rich flavor and tasty goodness and no artificial flavors, colors or preservatives. I’m pretty sold on that!

Bread was totally boring and not super good for you when I was little, but I’m loving how many varieties are out there now. If you’re sitting there thinking that you’re a die-hard fan of the processed white stuff, just trust us this one time, it’s ten times more flavorful of a sandwich when you choose a good bread, like eureka!

What’s Needed for This Cucumber Sandwich Recipe?

These cucumber dill sandwiches require just a handful of ingredients, many of which you may have on hand! Here’s what you’ll need to make cucumber finger sandwiches:

  • Neufchatel Cream Cheese: a little lighter than cream cheese, but regular cream cheese can be used
  • Greek Yogurt: lightens up the cream cheese spread and makes the spread more nutritious and fluffier
  • Lemon Juice and Zest: brightens the flavor of the spread
  • Fresh Dill: adds a pop of herbaceous flavor
  • Vinegar: regular white distilled vinegar is all you need
  • Granulated Sugar: adds a little sweetness to balance out the acidity
  • Salt and Black Pepper: adds flavor
  • Cucumber: You can use regular cucumbers or English cucumbers and I prefer to peel them. Cut into thin slices.
  • eureka! Saaa-Wheat Organic Bread: any multigrain bread will also work if you can’t find eureka!

What’s the Difference Between Cream Cheese vs Neufchatel?

We use Neufchatel in these cucumber tea sandwiches because it’s a little healthier than regular cream cheese. So what’s the difference between cream cheese and neufchatel? American Cream Cheese and American Neufchatel are practically the same thing!

Or, at least they taste and work the same.

The biggest difference is that the neufchatel is made using only milk  (23% milkfat), while cream cheese is made with milk and cream (33% milk fat) so it’s a little more fattening that the first.

How to Make Cucumber Sandwiches

This cucumber cream cheese sandwich is a breeze to make. Tea sandwiches in general are so simple, but everyone goes crazy for them!

  1. Whisk together the cream cheese, yogurt, lemon zest, vinegar, sugar, lemon juice, and dill. Sprinkle salt and pepper in to taste.
  2. Cut each bread slice into halves or quarters (it depends on how large you want your cucumber sandwiches with cream cheese to be).
  3. Spread a thin layer of the cream cheese mixture on each half of the bread, then place sliced cucumber on top.
  4. Repeat with the rest of the bread loaf and enjoy!

What to Serve with Cucumber Tea Sandwiches

If you are hosting a brunch or party (a Mother’s Day brunch or a bridal shower or baby shower) and serving these cucumber sandwiches, here are a few ideas for more finger foods to serve with them:

Can I Prep Cucumber Sandwiches in Advance?

You can pre-slice the cucumbers and whisk together the cream cheese spread up to 24 hours in advance. But I recommend waiting to assemble these little sandwiches until you’re ready to serve them.

Tips for Making Cucumber Tea Sandwiches

We prefer peeling the cucumber before slicing it, but you’re welcome to leave the skin on if desired.

Similarly, you’re welcome to use regular cream cheese instead of Neufchatel if that’s what you have on hand. Make sure it is at room temperature so that it creams together well with the other ingredients.

For a thicker, creamier spread, you’ll want to use full-fat cream cheese and full-fat Greek yogurt. You can probably use light versions of both if you want, but full-fat is our favorite.

How Long Will Cucumber Sandwiches Keep?

Once assembled, cucumber sandwiches will not keep for long. the bread starts to get soggy because cucumbers retain so much water. I recommend making the number of sandwiches that will be eaten. The cream cheese yogurt mixture can be made ahead of time and the cucumbers can be sliced. If everything is stored separately, they will keep in the fridge for a day or two.

Ingredients

  • 6 oz Neufchatel Cream Cheese softened to room temperature
  • 2 Tablespoons Greek Yogurt
  • 1/2 Lemon juiced and zested
  • 1/2 teaspoon White Vinegar
  • 1/2 teaspoon Granulated Sugar
  • 1-2 Tablespoons Fresh Dill
  • Salt and Pepper to taste
  • 1 Cucumber peeled and sliced
  • 1 Loaf eureka! Saaa-Wheat Organic Bread crusts removed if desired

Instructions

  • In a bowl, add the cream cheese, yogurt, lemon zest, vinegar, sugar, lemon juice, and dill.
    6 oz Neufchatel Cream Cheese, 2 Tablespoons Greek Yogurt, 1/2 Lemon, 1-2 Tablespoons Fresh Dill, 1/2 teaspoon White Vinegar, 1/2 teaspoon Granulated Sugar
  • Mix with a wooden spoon until smooth and season to taste.
    Salt and Pepper
  • Cut the bread in half or into quarters depending on size you want.

  • Spread the mixture on each half of the bread and add 2-3 cucumber slices on top of one piece.

  • Put the top slice of bread on and repeat with remaining mixture.
