Claire’s Favorite Recipe

Our 15-year-old, Claire, is absolutely a chicken salad expert. It’s her favorite recipe, and I am constantly making adjustments to my recipe to make it even better because there is nothing better than a family member going crazy for your cooking.

Ingredients

Oh, I can’t wait for you to try this recipe! It will be a staple in your house. You’ll need the following ingredients to get started:

  • Chicken Breasts: Bone-in and skin-on for maximum flavor and tenderness.
  • Scallions: Adds subtle onion flavor to the cooking liquid.
  • Black Peppercorns: For gentle warmth.
  • Better Than Bouillon Chicken Base: Optional, but deepens the savory flavor.
  • Salt: Seasons the poaching liquid and the chicken.
  • Fresh Lemon Juice: Brightens and balances the richness.
  • Grapes: Totally options, but I love the sweetness and pop of texture they add!

For the Creamy Herb Dressing

  • Mayonnaise: Preferably Duke’s for richness and flavor.
  • Sour Cream: Adds tang and lightens the dressing.
  • Dijon Mustard: Brings a subtle sharpness.
  • Fresh Tarragon: The star herb with a delicate, slightly sweet flavor.
  • Fresh Parsley: Adds freshness and color.
  • Fresh Chives: Mild onion flavor that complements the herbs.
  • Fresh Dill: Light and aromatic.
  • Salt and Ground Black Pepper: To taste.

For Serving

  • Croissants: Buttery and fresh, perfect for sandwiches. We also love a yummy nutty wheat for this recipe.

Easy Cucumber Tea Sandwiches

My mom often worked with a group of young women when I was growing up and on one occasion they held a silly Mother’s Day garden party, complete with garden hats in our backyard. I wanted to go so bad, but I was little and this was something I’d have to wait a few years to attend.

It looked like so much fun to a little girl, and I was beyond thrilled when there were some fresh flowers left over that she let me play with. That’s also the first time I’d ever seen a cucumber finger sandwich and I didn’t know what to make of it. Little white bread squares with a slice of cucumber and plain cream cheese.

The Best Bread for Cucumber Sandwiches

Cade and I both wanted to work with eureka!® Organic Bread, but deciding on a recipe together was tricky. I happened to mention that I remember my Mom having a garden party in our backyard and someone brought cucumber sandwiches and Cade was like, “What’s a cucumber sandwich? Just cucumbers?!” It was decided on, cucumber sandwiches would be our recipe.

With spring in the air, I just had to recreate the classic tea sandwich but with our own twist. Cade was in charge of the bread and I don’t know why, but I was a little nervous he wouldn’t choose a good one, haha I need to be more trusting. He came home with Saaa-Wheat! eureka! Organic Bread because according to him, it’s bursting with rich flavor and tasty goodness and no artificial flavors, colors or preservatives. I’m pretty sold on that!

Bread was totally boring and not super good for you when I was little, but I’m loving how many varieties are out there now. If you’re sitting there thinking that you’re a die-hard fan of the processed white stuff, just trust us this one time, it’s ten times more flavorful of a sandwich when you choose a good bread, like eureka!

What’s Needed for This Cucumber Sandwich Recipe?

These cucumber dill sandwiches require just a handful of ingredients, many of which you may have on hand! Here’s what you’ll need to make cucumber finger sandwiches:

  • Neufchatel Cream Cheese: a little lighter than cream cheese, but regular cream cheese can be used
  • Greek Yogurt: lightens up the cream cheese spread and makes the spread more nutritious and fluffier
  • Lemon

Corned Beef Sliders

Do you like Reuben sandwiches? If so, you just might go crazy over these Corned Beef Sliders – my family sure did!

Reuben Sliders

The soft, sweetness of the slider rolls complements the savory flavors of corned beef and sauerkraut. Add in plenty of melting cheese and you have a fun new twist on a Reuben sandwich. My kids devour these every time we make them.

Sean’s all-time favorite sandwich is a classic Reuben; rye bread piled high with corned beef, sauerkraut, and melting Swiss cheese. We love Reubens so much, Rye bread has become a staple in our freezer – because you never know when the craving will hit.

That said, these Reuben sliders satisfy that Reuben craving and they get bonus points for being easier to make for the whole family. That sprinkling of caraway on top of each corned beef sandwich provides that unmistakable aroma and hint of rye flavor from the classic sandwich.

For the Topping

Italian Grinder Sandwich

Savory deli meats are piled high on a toasted hoagie roll, then topped with an unforgettable tangy slaw and gooey provolone cheese to make this Italian Grinder Sandwich your new favorite lunch.

Italian Grinder Sandwich

The slight crunch and crackle of toasted bread, soft and warm meats topped with gooey, melted cheese, crisp onions and peppers in an incredible slaw. What’s not to love? Put them all together and it’s pure lunch heaven.

Toasted hoagies are bursting with incredible flavor and all of my favorite grinder sandwich ingredients. This Italian grinder sandwich may be the best sub sandwich I’ve had in the past year.

Sliced cold cuts sandwich

This recipe is extremely versatile, making it great for large gatherings. Everyone can pick out their favorite lunch meats, just swap out the turkey for roast beef or pepperoni, etc. Or, you can just pile them on. I won’t judge.

Kids adore this quick lunch. But, especially for little mouths, cured sliced meats can be difficult to chew. If you chop up the meats, it makes it easier to manage. And, what child wouldn’t want their own, special “chopped” grinder sandwich?

Zucchini Quesadilla with Corn and Chicken

Sweet onions, fresh zucchini, and grilled corn along with a bit of chicken and plenty of melting cheese made these some of the best vegetable quesadillas that I have made recently.

Zucchini Quesadilla

Gooey cheese quesadillas have been a classic dinner item in our house for years now, but I’m always looking for ways to change things up.

These quesadillas combine the flavorful pop of fresh zucchini, sweet onions, hearty grilled corn, and (if desired) chicken to create a game-changing mix of flavors.

Vegetable Quesadilla

With only a few minutes of effort, these quesadillas come together easily. All you’ll need to cook this easy dinner recipe is a skillet, a spatula, and a few minutes on the stove.

Because the time required to prep and cook these quesadillas is so short, this is a great recipe to make in bulk. Leftover quesadillas are an easy (and common!) meal option in my house, and we always keep the ingredients at hand in case we need a last minute dinner plan.
