Strawberry Jello Cake

This delicious strawberry Jello cake is the perfect summer dessert! Made with a white cake mix and strawberry Jello, this dessert is sure to be a hit at your next gathering. It is quick and easy and a moist cake with a hint of strawberries and cream!

Years ago our friend Sarah gave us her family recipe for Lemon Jello Cake (I know you’re supposed to write, Jell-O, but no one actually follows that rule, right??) and it’s been one of the most popular recipes on our site year after year. We’ve experimented with Pineapple Crush Jello cake, orange Jello cake, strawberry lemonade jello cake, even a festive 4th of July Jello cake and now a strawberries and cream jello cake!

It’s important to use a white cake mix and strawberry jello for this recipe as it will tone down the strawberry flavor and allow you to taste that “strawberries n creme” thing.

What Does Adding Jello to Cake Do?

There are several reasons to add Jello to a cake. Jello enhances the flavor and color of a cake. It also helps the cake be more moist and dense in texture. I highly recommend it!

Ingredients for Strawberry Jello Cake

I hope you’re sitting down because you aren’t going to believe that you only need 7 ingredients to make this jello cake recipe! Keep in mind that when you make the glaze, you have a few different options. I’ll explain that more below. Here is what you will need:

CAKE

  • White Cake Mix: A vanilla cake mix is our preferred flavor, but yellow works fine too. The color will just be a little more orange with a yellow cake mix. We use Duncan Hines brand.
    • NOTE: You will use just the box cake mix powder when making the batter for this cake. You will not follow the directions for making the cake on the box.
  • Eggs: Gives the cake structure and richness.
  • Water: Adds needed moisture to create a perfectly moist cake.
  • Oil: Canola oil or vegetable oil both work great and don’t alter the flavor of the cake while still keeping it moist and fabulous.
  • Strawberry Jello: You just need the small box (3 oz) and you will only be using the jello powder. Don’t use the sugar free jello. It doesn’t set up the same.

ICING

  • Heavy Cream: Helps bind the icing together and adds richness to the flavor and texture. Save some extra cream to whip up and spread on top of the cake after cooling.
  • Powdered Sugar: Acts as the base for the icing and provides all the sweetness.

I’ve said it before and it bears repeating, you just can’t go wrong with the classic flavors of a BLT. What’s not to love about bacon, lettuce, and tomato in pretty much any combination?

The answer is nothing. There’s nothing not to love here. I’ve eaten this BLT Salad for lunch three days in a row and I have no regrets about that. None at all.

Peach Cobbler French Toast Casserole [+Video]

This peach cobbler french toast casserole is loaded with cinnamon-y peaches, tender sweet bread and a crumb topping that will knock your socks off.

I love that we are starting to get fresh peaches from the local farmers and there’s nothing like peaches and fresh whipped cream. If you’ve never made your own, well you have missed out. I love everything about fresh whipped cream including (and I know this is a little silly) knowing that some sweet dairy farm here in Utah worked hard just for you and me. It’s why I teamed up with the Dairy Council to talk about delicious dairy products.

I wait all summer for the farm stands to start carrying peaches and as soon as they do I’m all over it like flies on a porta potty….er that’s gross but I’m all over it, and that’s the point. This Peach Cobbler French Toast Casserole is seriously the perfect breakfast to celebrate such a lovely, luscious fruit.

Good heavens, just look at all of that buttery cobbler, crumble topping and it’s swimming in our favorite buttermilk syrup. Mmmmm, buttermilk syrup. Shall we have a moment of silence for the world’s best syrup? Even my Aunt Jemima lovin’ husband (no joke, he’d rather have store bought than homemade maple syrup) prefers buttermilk syrup over all else. It’s fantastic.

At first glance, this list is going to look long, but there is a lot of overlap between the three different parts of the recipe. Here is what you will need:

French Toast Casserole

  • Sour Dough Bread: day old bread is even better and French bread works fine too
  • Eggs
  • Milk
  • Heavy Cream
  • Brown Sugar
  • White Sugar
  • Spices: Cinnamon and Nutmeg
  • Extracts: Vanilla and Almond Extract

Peach Filling

  • Peaches
  • Cornabys EZ Gel: or flour for thickening

Chocolate Chip Cookies with Nuts

Most folks have robust opinions about whether chocolate chip cookies are better with or without nuts. We’re pretty firmly in the “yes, please!” camp.

Putting nuts in cookies makes them more substantial as a snack. Now they’re not quite health food even with nuts, but they do fill you up faster!

And the buttery, tender, rich macadamia nuts are a perfect complement to decadent, melted, gooey chocolate chips and crisp edged cookie.

Of course, you can leave the nuts out if you are Team No Thank You to nuts in cookies. You don’t have to change anything else in the recipe; just omit the nuts.
