How to Make Chicken Caprese Sandwich

Make Ahead and Storage Instructions

This Caprese sandwich is best enjoyed fresh, but a few components can be prepped ahead to save time. The chicken can be marinated and cooked up to 2 days in advance, then stored in an airtight container in the refrigerator.

You can also slice the cheese and tomatoes ahead of time and keep them chilled until ready to assemble. For the best texture, wait to toast the bread, spread the pesto, and assemble the sandwich just before serving. Once assembled, these sandwiches don’t store well, as the bread can become soggy, so it’s best to enjoy them right away.

Ingredients

  • 2 Chicken Breasts large
  • ¼ Cup Olive Oil
  • 1 Clove Garlic
  • Pesto
  • Mozzarella Cheese fresh, sliced
  • Tomatoes fresh Roma, sliced
  • Balsamic Glaze
  • 4-5 Rolls Ciabatta or Kaiser rolls, toasted

Instructions

  • Make the marinated grilled chicken.
    2 Chicken Breasts
  • Slice the bread in a half and brush each side with olive oil. Pan fry the bread in a cast iron skillet (or grill) over medium heat.
    4-5 Rolls, ¼ Cup Olive Oil
  • Rub each side of the bread with half of a garlic clove.
    1 Clove Garlic
  • Lather one half of the bread with pesto.

  • Layer the chicken, mozzarella, and tomatoes and drizzle with a little balsamic glaze.
