Churro Rice Krispie Treat Recipe

Just when we thought our Rice Krispie treat recipe couldn’t get any better, I decided to try a churro version with the new cinnamon sugar Rice Krispies and life as we know it has changed forever! 

Sometimes I wonder why I even try! Ha! It’s impossible to know what is going to make you all go crazy! I work so hard on developing recipes and taking great photos and then those recipes do nothing. On a whim, I post a video of Grayson’s new favorite Rice Krispie treat and it explodes on Instagram. You just never know!

So we’ve busted our buns to get this post written, photographed and out to everyone so you can enjoy it ASAP! For all our churro and cinnamon sugar lovers out there, this one is for you!

What is a Churro?

If you don’t know what a churro is, I have no words. A churro is a fried dough (similar to a donut) of Spanish and Portuguese origin that is typically coated in a layer of cinnamon sugar. Our family has been obsessed with everything churro for years and years. Let me prove it…

What can Greek philosophy teach us about the art of happiness?

For the vast majority of people, the desire to be happy is one of the core motivators in this life.

Whether we consciously realise it or not, the reason why we work towards certain financial, career, or personal goals, is generally because we believe that achieving these things will help us to become happier than we are now.

And it is the same story with our relationships, social activities, hobbies, interests – and even for when we might decide to just sit around the house all day long, doing nothing.

Yes, we may sometimes seem to make decisions that are not necessarily good for us at all in the long-term. But, even here, the core reason is often because we are simply pining for an as yet unrealised form of happiness.

But this is the problem: the more we pursue happiness in any of its forms, the more we realise just how difficult it is to really hold on to.

What can Greek philosophy teach us about the art of happiness?

I’m sure we have all experienced times when that success we worked so hard for turns out to be, somehow, not as good as we always imagined it to be. Or when a short-term pleasure never quite gives us that lasting happiness that we really need.

So, with that being the case, it is really no surprise that many of us may feel completely lost when faced with the question: “How can I be happy?”

The truth is, happiness means different things to different people – and (sadly) there is no universal key to finding it.

However, we can still give ourselves the best possible chance of finding real happiness by approaching our life in a more philosophical way. And, this is the main purpose of this article. To dive a little deeper into the real ‘art of happiness’ via the insights of an ancient Greek philosopher known as Epicurus.

Now, just as a quick side note, if you have heard the name “Epicurus” or “Epicurean” before, then it may well have been in the context of describing someone who is hedonistic, or living a life of excess.

And, in fact, even since the very earliest days of Epicurean philosophy – which started in a modest garden academy around 300 BC – this has been one of its most common misrepresentations. Because, of course, if we live our life only with the goal of being as happy as we possibly can, then there is a good chance we might stray increasingly towards a life of endless partying, overindulgence, and pleasure-seeking, forgoing all other personal responsibilities.

However, when it comes to Epicurus’ real thoughts on living a happy life, the message could not be more different. Yes, he advocated for happiness being our ultimate goal in life. But he also insisted that the best way to actually approach this “pursuit of happiness” is always with a philosopher’s mindset.

In other words, this is not about living with total abandonment. Rather, it is encouraging us to approach every situation – and every temptation – with a discerning mind. Asking: “Will this particular pleasure really bring me lasting happiness? Or will it only bring temporary pleasure, which might lead to negative outcomes in the long run?”

Welcome to the weekend, friends! I spent the past few days in Rhode Island, exploring my friend Lynne‘s favorite part of the world. The foods we enjoyed this week were truly amazing; from lobster rolls to oysters, stuffies to clam chowder, scallop rolls to dough boys, chocolates, doughnuts, popcorn and Del’s frozen lemonades on repeat.

As much as I enjoy travel, it’s great to be home again. I’m looking forward to a fun weekend with all of my boys.

ON THE BLOG this week: Have you tried Hot Buttered Rum? A warm mug of hot buttered rum brings about a full body coziness that feels like you are being wrapped in a thick warm blanket. (You can make a non-alcoholic hot buttered “rum” as well!)

These chewy, richly spiced Hot Buttered Rum Cookies are the happy result of what can I do with the extra buttered rum batter I don’t want to freeze?

Chicken Enchilada Dip is a creamy, cheesy, spicy chicken-filled enchilada dip, a hit with everyone who tries it. Hearty enough for a main dish, this was an enormous success for our family movie night.

This skillet is a delightful combination of sweet potatoes, fresh corn, asparagus, and bacon with a drizzle of balsamic. It was something unexpected that I pulled together for a dinner side dish a few years ago, using odds and ends from the refrigerator. What resulted was a skillet full of magic. I know that sounds like I am exaggerating but I promise you I am not. This dish is so good it qualifies as a company coming over meal.

Espresso Ice Cream is quite easily one of my favorites. I love a simple, smooth yet rich and creamy authentically coffee-tasting ice cream. This is a simplified and egg-free version of my Cafe con Leche Ice Cream – and we LOVE it. 

What I’m CRAVING: Lobster Rolls! (Thanks a lot, Lynne.) I’m loving this version from my friend Heidi. She combines the buttery awesomeness of a hot lobster roll with the creamy dressing that I love on a cold roll. I need to try these lobster rolls soon!

Hey hey! How are ya? Happy weekend!! What do you have going on? We have a friend’s Air Force retirement party and a soccer team outing. I’m also hoping we can catch a family hike. I hope you have an amazing weekend!

A little Caro update:

Caro saw the vet last Friday and has congenital heart failure and her little body was full of fluid. She started a couple of meds, including a diuretic, and they’ve made a huge difference. Unfortunately, she’s still not eating much. She was eating if I hand fed her, but now she’ll only eat every few bites or so. The vet is coming again this afternoon, so we’ll see what she has to say.
