Do You Season Both Sides?

Only the flesh side of the salmon fillet needs to be seasoned since we cook the salmon with the skin on but we won’t eat the skin. And don’t hold back on the seasoning! I love my salmon with lots of flavor!

Do You Remove Salmon Skin Before Cooking?

I always cook salmon with the skin on. It’s almost like a little protective barrier in the air fryer to keep the salmon from getting dried out. Once it is cooked, it is super easy to remove the skin and serve it.

Crock Pot or Instant Pot Cheesy Meatball Soup [+Video]

a metal bowl full of cheesy meatball soup with potatoes and carrots and sliced white bread behind it

A creamy soup is turned into a crock pot or instant pot cheesy meatball soup with just a few pantry staple ingredients like carrots, potatoes, garlic, and corn, then add the cheese!

This year we are making sure we are on top of slow cooker and instant pot meals in case you’re freezing and not feeling like slaving over a stove like we are.

I’m going to include instructions for cooking this meatball soup recipe on the stove top as well.

Ingredients for Creamy Meatball Soup

I love a good hearty soup full of veggies, meatballs and cheese! This easy soup recipe checks all the boxes. Here is what you will need…

  • Meatballs: We just buy a package at the store to keep it easy, but you can make meatballs at home if you want.
  • Butter: used to sauté the veggies
  • Vegetables: garlic, carrots, celery, potatoes and corn
  • Soup Base: beef broth, whole milk, Worcestershire sauce, and Tabasco
  • Salt: adds flavor
  • Cornstarch: thickens the soup
  • Cheeses: sharp cheddar and Monterey Jack

The measurements for all the ingredients can be found in the recipe card at the end of this post. You can also save and print the recipe there.

How to Make Cheesy Meatball Soup – Slow Cooker

While you can totally just dump this all in a crock pot and wait 8 hours to build the right texture and flavor it’s not the way I do it.

I know, you don’t want to dirty another pan, but it’s quick and easy and the flavor will be worth it.

  1. Heat a dutch oven or large skillet over medium high heat and add the butter. Once it’s melted add the onions and cook, stirring occasionally until tender, about 5 minutes.
  2. Add the carrots, celery and garlic and cook for another 3 minutes.
  3. Throw in your frozen meatballs (unless you really want to go through the work of cooking homemade) just to get all of that flavor browning on them.
  4. Dump everything but the cornstarch and cheese into a slow cooker and put it on low for 6 hours or high for 3.
  5. Right before serving, combine the cheese and cornstarch in a separate bowl and then mix to combine.
  6. Add the cheese mixture to the soup and stir until the cheese is melted and the soup has thickened.
  7. Serve with a sprinkle of fresh parsley for garnish and a good hearty bread!

I’m ready for it. Go ahead and let me have it about how darn long I took to post our hoagie roll recipe. And if you’re new here I’ll let you in on my story. It’s not a very exciting one, but it is the truth.

Years ago I posted our favorite recipe for French Dip Sandwiches. It’s a slow cooker recipe with only a few ingredients, all of which are generally on hand anyway, so it makes it easy to bust out a comfort foods dinner without a trip to the grocery store.

Why Make Fresh Hoagie Rolls?

BECAUSE YOU WILL BE A HERO.

We even make our own hoagie rolls because it goes so fast, it’s easier for me than to remember to run to the store. The only problem is, I didn’t think everyone else would want to make them too, but boy was I wrong!

At first there was a comment saying they would like the recipe and I had stated I would post it, but I forgot and got busy aka side tracked with the gazillion recipes always floating around in my head. And then over the past few months that recipe has gotten really popular and I not only started getting more comments, but emails too!

Last week we were eating french dip sandwiches for dinner when, BAM! I remembered that I was going to photograph them. I had hardly any light left and we were literally eating them so I quickly threw the hoagies on a board, snapped a few shots and now here we are.

What’s Needed for Hoagie Rolls?

To make this hoagie bread recipe, you need 9 simple ingredients:

A chicken pot pie, baked to a perfect golden brown with a sprig of fresh thyme on top. The pie dish is sitting on a blue and white striped kitchen towel.

This Homemade Chicken Pot Pie Recipe is made completely from scratch! It has a buttery, flaky crust and the most luscious chicken and vegetable filling!

Between our famous Chili recipe and this chicken pot pie recipe I’M CONVINCED that as much as we are always looking for the newest thing we actually crave the comfort of the past.

Chicken Pot Pie (From Scratch!)

I remember my mom bringing home a frozen pot pie from the store on the nights that she was just too crazy busy to make it from scratch. Back then that was the norm, you know? Convenience items weren’t thought twice about because they were there to help moms get dinner on the table.

Since that time, I’d forgotten about pot pie until years and years ago we had a homemade one from a friend and it was comfort food perfection! We’ve had our chicken pot pie soup on the blog for a long time, but we’ve needed a classic chicken pot pie. Sadly it’s taken me until now to develop the perfect pie crust and chicken pot pie filling, but here it is!

I mean, the crust had to be buttery and flaky but still hold up to the filling and my gosh, that filling needed to be perfect! None of this watery mumbo jumbo. And no, it should not taste like chicken gravy either. It should be a perfect sauce with well seasoned big pieces of chicken in it. Rotisserie chicken is a must to achieve that. Not only is it easier, but the flavor and texture are meant to be!

Gather all your loved ones near and dive in to this homemade pot pie! The crust is flaky and perfectly encases the rich and creamy chicken and vegetable filling. It is comfort in every single bite!

Homemade flour tortillas are easier to make than you think! We have 3 simple secrets that will have you cranking out the most deliciously soft and tender tortillas.

“These are incredible! I have tried for years to make tortillas and they have never turned out better than the store bought ones you cook at home. I followed the recipe exactly and I couldn’t be happier with the end result. Trust me, this recipe is the only one you will ever need for soft, pliable and delicious tortillas.”

Easy Tortilla Recipe

My friend, Shelly, grew up in Mexico and when I heard that she makes the best tortillas I just had to try her recipe. I’d been testing off and on for years and finally decided that homemade tortillas were just not my fave. I loved the uncooked tortillas you get at Costco and had totally given up.

But now that I’ve tried these, I’ll be whipping up tortillas homemade from now on! Well, I’ll probably keep a pack of the uncooked tortillas from Costco on hand for dinner in a hurry, but homemade flour tortillas are SO MUCH BETTER!

These tortillas are perfect for tacos, burritos, fajitas, and of course, quesadillas! The first thing you are going to want to do once you’ve cooked these tortillas is to make yourself a quesadilla full of gooey melted cheese. I know, you’re not 9 years old, but trust me on this, you’ll never want a classic quesadilla more. Check out our quesadilla post if you find yourself in this boat.

If you want a real treat, take one of these tortillas hot off the griddle and spread some butter all over it. Roll it up and devour that baby! Yummmm, I’m totally craving a butter roll-up now!

Flour Tortilla Ingredients

One of my favorite things about this flour tortilla recipe is that they use normal pantry ingredients. Just 5 simple ingredients is all you are going to need!

  • bread flour
  • baking powder
  • salt
  • oil
  • water

That’s it! Can you believe it?! Nothing fancy, just the basics! Now let’s jump in to how to make them…

How to Make Homemade Tortillas

Start by adding the flour (see secret #1 below), salt, baking powder and oil (see secret #2 below) to the bowl of a stand mixer. Add the dough hook attachment and turn the speed to low. The mixture will slowly come together. When it looks like slightly wet sand that holds together when you squeeze it, you know that you have the right consistency.
