Quick and Easy Creamy Chicken Pesto Lasagna

We layer lasagna noodles with a homemade creamy béchamel sauce, fresh pesto sauce, chunks of juicy rotisserie chicken and cheese, glorious cheese! It can be made in about an hour and it is a recipe perfect for spring!

Back when we lived in Utah County, there was a great little Italian restaurant (Màstra for the locals, SO GOOD!) with a delicious pesto lasagna. I have thought of how wonderful the lasagna was for over two years now, and while I couldn’t remember all the details about it, I knew I could create a simple lasagna recipe that our fans would fall in love with. I just had no idea it would actually become my favorite recipe thus far in 2024.

Tips for the Best Pesto Lasagna

It is so easy to make and so delicious! I think a few things make a difference… first, go ahead and use shredded chicken breast meat from a rotisserie chicken. I buy mine at Costco and divide it up into freezer bags using our food saver. It makes meals like this easy chicken lasagna a cinch and it’s far more tender and flavorful.

Second, I prefer to make my own béchamel sauce as it’s so darn easy, but if you really want to hurry you can just use Alfredo sauce. Rao’s makes a good one. In fact, did you know you could use evaporated milk and extra salt, pepper and Parmesan if you need to stretch it out even more? Half and half, milk, and heavy creamy would work as well.

Lastly, homemade pesto is always more fresh and vibrant but again, Costco or Harmons in Utah make fantastic pesto that pulls things together in a jiffy. While it’s not shown in the photo, I love to toast pine nuts to sprinkle on top and maybe a little Aleppo pepper flakes too. Totally up to you, but in less than an hour you’ve got dinner with such a small amount of work.

The ingredients list includes a few pantry friendly ingredients to make the béchamel sauce and then a few more ingredients to assemble all the delicious lasagna layers. Here is what you will need:

For the Béchamel Sauce

  • Unsalted Butter: if you only have salted butter, just omit the salt from the sauce
  • Flour: just regular all purpose flour works the best
  • Heavy Cream: makes the sauce extra rich and creamy
  • Salt: adds flavor
  • Pepper: adds flavor and a tiny bit of heat
  • Nutmeg: adds flavor

I always thought that life was busy with kids and that it would slow down a little once they were in school and I was alone at home to get things done. I laugh out loud at my naive self. You don’t get more done with kids in school, you become a taxi, a tutor, a teacher, a maid, a lunch lady, a soccer mom, a shopper, an errand runner, a project planner, a nurse (because heaven knows once they start school they bring home every germ in the world) — and the list only goes on and on. But this Quick and Easy 15-Minute Chicken Stir Fry recipe is totally attainable even with all of that work.

Creating This Quick Dinner Recipe

Between packing and unpacking lunches and backpacks and making sure everyone gets out the door on time with all homework finished, there isn’t a lot of time left for meal planning. And we know you’re in the same boat as us.

I thought I made quick and easy dinners before, but we’ve stepped up our game. Who’s got time for a 30-minute meal on a day when 3 kids have to be in 3 different places all over town between 4-4:30?!

Cade called to see if I needed anything from the store, and when I told him a super quick dinner idea I could make before the girls had dance he showed up with Yakisoba noodles he found in the produce department and that only require a quick rinse in warm water to eat, and all the veggies for a chicken stir-fry.

He rinsed the noodles and chopped the broccolini and peppers. I opened the matchstick carrots, the pre-sliced package of crimini mushrooms, and cut the baby bok choy open. Two minutes was all it took, and I bet you could find a package of stir fry-veggies that would cut back on your prep time even more. 

In a measuring cup, we threw together a little sauce for it all and opened up a package of already cubed chicken from the meat department (which does cost more, so next time we will just use our own. But hey, convenience on a night like that was important).

Ummmmm I could eat this berry cheesecake salad recipe for the rest of my life and die happy. Seven years ago we posted this recipe and I’ve been waiting all winter for berry season to hit so we could bring this recipe back to the front for everyone to enjoy.

It’s sweet deliciousness. It seems a little wrong to take all of those healthy berries and turn them into a calorie fest with everything you put in this dish, but guess what, WORTH IT!!

Seriously, you should all make this on a perfect sunny day and eat outside with the family. Or maybe take it to a BBQ so everyone can ask you what the amazing recipe is.

Cheesecake Fruit Salad Ingredients

This fruit salad recipe is so versatile. I’m going to list out the ingredients that we love, but know from the start that you can totally swap out different fruits or flavors of yogurt. Here is what you will need:

  • Instant Cheesecake Pudding: You want just the pudding powder to add that yummy cheesecake flavor.
  • Cool Whip: adds sweetness and creaminess
  • Strawberry Yogurt: adds more fruity flavor and creaminess to the salad
  • Bananas: cut into 1/2 inch slices
  • Strawberries: stem removed and sliced
  • Raspberries: left whole but rinsed
  • Optional: Blueberries, Blackberries, Peaches, Cherries or Grapes
  • Graham Crackers: If you really want to make this salad taste like a true cheesecake, add crushed up graham cracker.

PRO TIP: After trying many different combinations of fruit in this recipe, I’ve decided my favorite concoction is fresh bananas, fresh strawberries, fresh blueberries, fresh raspberries and fresh blackberries. So fresh! Haha!

How to Make Cheesecake Fruit Salad

One of my favorite things about this side dish is that it couldn’t be easier! Just two quick steps and you have a delicious fruit salad.

  1. In a large bowl, mix the pudding powder, whipped topping and yogurt together.
  2. Add the fruit and carefully fold it into the creamy cheesecake mixture. Then let it chill in fridge until it’s ready to serve (at least 30 minutes).

Every Easter our family makes these sweet empty tomb rolls (aka resurrection rolls) where the marshmallow melts down to a caramel sauce inside the roll. This is one of our all-time favorite Easter recipes!

We usually start our Easter with these sweet rolls for breakfast. They can also be eaten as an appetizer, side dish or dessert. They go great with a honey baked ham and potato casserole. No matter when you eat them, they will make a great addition to your Easter celebration.

What are Resurrection Rolls?

These rolls can be called empty tomb rolls or resurrection rolls, heck you can even call them disappearing marshmallow rolls if you prefer. Either way, they are a soft, homemade roll that has a cinnamon sugar, butter-dipped marshmallow inside. The dough is formed around the marshmallow and dipped in more butter and cinnamon sugar then baked. As the dough bakes, the marshmallow melts into a sweet caramel-like sauce inside the dough. When you open the resurrection rolls the marshmallow is gone but the dough is sweet and sticky.

The empty tomb rolls are meant to symbolize the burial and resurrection of Christ. It is a tender object lesson to teach kiddos what we celebrate on Easter. The marshmallow represents Jesus’ body and the roll dough represents the tomb.

If you aren’t religious it doesn’t really matter because you still get to eat a yummy roll! They are easy and so tasty!

Our Story of Faith While Preparing for Another Baby

Heads up, I’m about to get personal so feel free to keep scrolling if you just want the recipe.

We had a special little conversation while making these resurrection rolls. You see, I’ve been incredibly ill with Hyperemesis Gravidarum with all three of my pregnancies. It’s one of the hardest things I’ve endured in my 30 some odd years of life, but it’s obviously been incredibly rewarding too.

Our oldest daughter witnessed so much this last pregnancy that she was able to grasp what was happening a little more than before. She asked me yesterday why I had been willing to be pregnant a third time knowing that it would be so horrible and I jumped at the opportunity to tell her.

If you’ve been following us for a while now you know that there’s a recipe that almost broke our site, do you know which one it is?

Actually, I lied.

There are a few recipes that continue to bring in millions of views, but we can chat about those later if you’d like. But Empty Tomb Rolls is the one I’m talking about right now. And it’s what inspired this version or Apple Empty Tomb Rolls which I think blows the original out of the water.

Our original recipe calls for roll dough, butter, cinnamon sugar and marshmallows.

Crazy, crazy easy.

All summer the idea kept coming to my mind that it would be really delicious if I could make a new version. That’s kind of hard though because there’s literally nothing to the recipe, but the idea came to my mind so many times I knew it was inspiration.

I kept pondering and pondering over what new idea could be used when I asked a question on Instagram about fall and what flavor you all prefer, apple or pumpkin.

On one post it was overwhelmingly APPLE and on another, PUMPKIN! Seriously? How does that help me know what to make?! LOL, it was awesome. And then it hit me, Apple Empty Tomb Rolls. They are even kind of like our Apple Pie Bombs, but no frying needed!

You see, Empty Tomb Rolls, or as some people call them, Resurrection Rolls (there’s a whole story that you tell your kids as you make them, it’s pretty cute) end up with a caramel-y sauce inside of the roll and it’s so good! What goes better with apples than caramel?!

Actually, hold on a second! Do you know what would be really good? These hot, saucy apple empty tomb rolls are reminiscent of apple pie. In fact, if you made them with two crescent rolls and more filling it would totally look like mini hand pies. But listen, I’m getting too far off here, the point is, it’s like apple pie, so what would really be good is to serve them up with a cold, creamy scoop of vanilla ice cream!

How to Make Apple Empty Tomb Rolls

It’s probably one of the easiest desserts you’ll ever make and it all starts with the apples.

You will need to microwave the apples for about a minutes so that they are beginning to turn tender. The bake time isn’t longing enough to soften them up, so the microwave is going to help out with that.
