I wanted the breading to be light and flavorful and for the fish taco sauce to be perfection. This homemade fish tacos recipe is sure to be a hit for all our seafood lovers! And Cade canā€™t get enough of them!

What is the Best Fish for Fish Tacos?

For fish tacos, you want a white fish that is firm and mild in flavor. For this recipe, we are using cod, but other good options would be tilapia, halibut, or mahi mahi. If youā€™re not in the mood for fish, shrimp would work great for this recipe too!

Ingredients for Fish Tacos

There are three different components to this recipe ā€“ the fish with the ingredients for the breading, the toppings for the tacos, and the items needed to make the fish taco sauce. Here is what you will needā€¦

  • Buttermilk: helps marinate the fish and helps the breading stick to the fish pieces
  • Cod: the fish should be cut into strips that are 1ā€³ by 3ā€³, see section below for choosing good fish
  • Flour: main component for the breading on the fish
  • Seasonings: smoked paprika, chili powder, salt and pepper
  • Peanut Oil: has a neutral flavor, is very affordable and has a high smoke point so that fish cooks quickly
    • TIP: Use corn oil, canola oil or vegetable oil as a substitute if needed.
  • Butter: combines with the oil to pan fry the fish pieces
  • Corn Tortillas: Vista Hermosa brand is our favorite for corn tortillas
    • TIP: If you arenā€™t a corn tortilla fan, flour tortillas work great too.

Toppings:

  • Green and Purple Cabbage: adds freshness
  • Limes: adds acidity
  • Cilantro: adds flavor and freshness
  • Jalapeno Slices: adds heat
  • Avocado: adds creaminess and flavor

For the Sauce

  • Seasonings: garlic powder and smoked paprika
  • Cilantro: adds flavor and color
  • Mayonnaise: adds creaminess
  • Sour Cream: adds creaminess
  • Lime Juice: adds acidity, fresh limes are always preferred

NOTE: If you want to add some heat to the sauce, add a pinch of cayenne pepper or a dash of sriracha sauce.

This is an easy spring salad full of seasonal ingredients like asparagus, radishes, peas, fresh herbs and enhanced with roasted chickpeas, feta cheese, toasted pine nuts, and hard boiled eggs all topped with a bright and tangy lemon salad dressing.

Well, we did it again! We survived winter! And boy was it a doozy here in Utah this year. I have never seen so much snow here and we have lived here a really long time. So the fact that a ā€œspringā€ salad is even a possibility brings a smile to my face! It is time for bright refreshing flavors and warmer temperatures!

What Goes in a Spring Salad?

One of the beauties of a salad is that they are so versatile, so Iā€™m going to share the ingredients for how we like to make this salad, but keep in mind that you can omit or add ingredients to your liking. Here is what we likeā€¦

Dressing

  • Olive Oil: the base of the dressing
  • Dijon Mustard: adds intense mustard flavor
  • Lemon Juice and Zest: adds a bright pop of freshness and acidity
  • Shallot: adds mild onion flavor
  • Champagne Vinegar:Ā if you canā€™t find champagne vinegar, you can use prosecco or white wine vinegar
  • Salt and Pepper: adds flavor

Salad

  • Pine Nuts:Ā adds texture and we toast them for maximum flavor
  • Asparagus: remove the tough stem end and then cut it into 1-2ā€³ pieces
  • Frozen Peas: let them defrost in a bowl of water
  • Baby Salad Greens: this can be any mix of greens you enjoyā€¦romaine, spinach, arugula, chard, etc.
  • Radishes: adds a little heat and gorgeous color
  • Cucumber: we prefer an English cucumber
  • Fresh Herbs: mint, basil, parsley, chives ā€“ this blend is so bright and bold
  • Feta: totally optional, but we love them saltiness flavor it adds
  • Roasted Chickpeas: you can buy roasted chickpeas or roast your own and they add great texture
  • Olive Oil: used to roast the chickpeas
  • Salt and Pepper: adds flavor
  • Hard Boiled Eggs: adds protein and heartiness to the salad

How to Make a Fresh Spring Salad

I like to start salad recipes by making the dressing. It can be made up to a day or two ahead of time, so itā€™s nice to get that made and out of the way. For this salad dressing, just whisk all the ingredients together and set it aside.

Alright, this Cheesy Ground Beef and Rice Casserole recipe is definitely not my norm, but it is who I am and it happens to be a recipe that I get a crazy amount of emails about.   • Crushed Tomatoes: we love the brand Cento but any brand works great
  • Chicken Stock: helps thin out the sauce while adding flavor
  • Sesame Oil: gives that signature Asian flavor to the dish
    • PRO TIP: Donā€™t use sesame oil to sautĆ© the chicken. The flavor will be too overpowering. Sesame oil is best in small quantities!
  • Honey: adds natural sweetness
  • White Vinegar: adds acidity and flavor

Swedish Pancakes are a cross between a crepe and a pancake. They have a delicate texture and my gosh, they are delicious!

I honestly think that Swedish pancakes are superior to every other crepe-like recipe. Iā€™ve said it, Iā€™ve done it, Iā€™ve angered the world. But truly, other than our buttermilk brown butter crepes (would you like the recipe?!) these are the best breakfast from around the world. In my humble opinion. Most Swedish pancake recipes call for only milk but their milk seems to be more full fat so adding sour cream achieved that extra flavor we lack in the states, but you can totally use all milk instead.

Culinary Heritage

Iā€™ve been really intrigued by the idea of getting to know your heritage and ancestors lately. There are so many amazing stories that we are learning, like pulling handcarts across the United States and being trapped in horrendous snow storms with no food or even shoes, yet writing faith-filled journals about trust in God and His love.
