Lightened Up Healthier Chicken Parmesan Recipe

Chicken parmesan is always a crowd favorite, but sometimes I want a dinner that’s a little lighter. This lightened up healthier chicken parm recipe is so simple and the flavor is delicious.

In fact, I’ll go so far as to say that you won’t even miss the mounds of mozzarella, piles of pasta or the sauce. Even though we have a traditional chicken parmesan recipe that is fantastic, I think we prefer this healthier version. I love how light and fresh it tastes and the chicken is crazy moist. It’s nice to have a meal where you can still eat great tasting food without feeling weighed down and completely stuffed afterwards. I think everyone should make this parmesan chicken!

What is Parmesan Chicken?

Parmesan chicken (or chicken Parmesan or chicken Parmigiana) is a dish that consists of breaded chicken breast covered in tomato sauce and mozzarella, parmesan, or provolone cheese. Parmesan chicken originated in Italy. We are sort of breaking all the rules with this lightened up version except for the breaded chicken part, but it’s so dang good!

This isn’t your average grilled cheese sandwich! We are combining 4 different cheeses with a flavored butter spread and an irresistible mayo to create a grilled Mexican cheese sandwich.

We live right by the mountains and have been loving grabbing the kids and heading up to the mountains to eat and hike or watch a movie. A full-of-flavor soup, like taco stew, is one of those hit-the-spot soups that warms you from the inside out but don’t stop there! Why not go crazy with a Mexican style grilled cheese full of cheese, a killer roasted jalapeno mayo and you guys, the cheesy butter spread on top… I may never leave my kitchen again!

Quick and Healthy Teriyaki Salmon Rice Bowl

Tender chunks of teriyaki glazed salmon over a bed of fluffy rice topped with a sweet chili mayo, and you can add whatever toppings you want! These Quick and Healthy teriyaki salmon rice bowls will be your new favorite dinner!

Our daughter is really trying to learn to like fish and I’m secretly trying to as well. I rarely tell our kids that I don’t like something because I don’t want to hold them back, but seeing as how some seafood is hard for me to gag down, well it’s pretty obvious how I feel about it. The other day I was checking out Oshen Salmon and trying to decide if I should give it a whirl when the image of teriyaki salmon burst into my mind.

If ever you don’t like something, put a sauce on it.

And the funny thing is, I’m actually really starting to love salmon!!

 

So, friends, yay or nay to more salmon recipes?

I’ve mentioned before that I am not a sushi lover. Cade loves it, but I just can’t get behind it. If you’re like me, then this bowl is a great compromise! It has a lot of the signature sushi flavors (rice, salmon, a sweet chili mayo, sesame seeds, cucumber), but without the fish being raw and no seaweed. Winning! Though you can add seaweed on the side if you’re into that sort of thing! 🤢

When all is said and done, this salmon rice bowl is perfect for lunch or dinner and hey, maybe it will even sway you into the world of seafood like it is for me. Kind of, I’m still not behind oysters!

Taco Stew

This taco stew is the recipe most requested by anyone who knows my mom and now you can try it too! It’s like taco soup but thicker like a chili.

Taco stew is an easy weeknight dinner recipe that the whole family loves. We love to top it with our favorite taco toppings and everyone can totally customize their own bowl. 

So I call this a stew because I add potatoes, carrots and peas to it. That totally qualifies as stew, right?! It’s a little more hearty and chunky than our Instant Pot taco soup or even our taco ground beef chili.

Ok, back to the toppings…there’s something about the Fritos and the soup. I’m serious. I never, and I mean never, think to buy Fritos, but they are a total necessity for topping off the taco stew. I think it’s that crunchy corn taste that works so well with everything.

Ingredients for Taco Stew

I love that this recipe is mostly a pantry meal. It is so nice when you’re on a tight budget or just don’t have time to get to the store. It also cannot be easier! Here is what you will need:

  • Yukon Gold Potatoes: yukons have the best flavor and keep the best texture when added to a soup or stew – you could also use red potatoes as a substitute
  • Carrots: peeled and cut into bite size pieces
  • Onion: just a yellow onion works great
  • Hamburger: 80/20 or 85/15 works great – if you want to go a little healthier, try ground turkey or chicken
  • Frozen Peas: just toss them in frozen, and they’ll be heated through in no time
  • Diced Tomatoes: you can use any brand you want
  • Tomato Sauce: any brand works great
  • Taco Seasoning: you can use a store bought packet or make your own
  • Corn: just open a can of corn and toss it in, no need to drain
  • Chili Beans: pinto beans or black beans also will work great, undrained
  • Kidney Beans: no need to drain these either

Linguica or Kielbasa Sausage and Peppers Skillet

Sometimes the simplest recipe can taste the best! Linguica or kielbasa sausage and peppers only requires 5 ingredients and it doesn’t get any easier (or tastier) to get dinner on the table!

Cade spent 2 years serving as a missionary for our church, and he totally fell in love with the food there. I mean, how could you not, right?! It is SO good! I’m trying to add more delicious Brazilian dishes to our dinner rotation, and this linguica recipe is my latest! Cade says that it is spot on!

We used to visit a Brazilian restaurant every January here in Utah to celebrate Cade’s birthday but over the years it’s gone from delicious to downright terrible. So, I’ve started making more Brazilian recipes from home, kind of like our pao de queijo!

Linguica is so good but it can be a bit tricky to find so feel free to use any sausage like a kielbasa for example that you’d like! Just be sure to pair it with black beans and perfect white rice, or better yet, some feijoada!

Ingredients for Linguica Sausage and Peppers

Remember how 5 ingredients is all you need?! I am allllll about a recipe with minimal ingredient but still bold in flavor. Here is the list of things you will need:

  • Linguica Sausage – a flavorful pork sausage that can be tricky to find sometimes, so you can substitute other sausages if you want – chorizo would be a good substitute or a kielbasa
  • Mini Bell Peppers – I love how thin and sweet the mini bell peppers are, but you can totally use a full size bell pepper if you need to. I would do one yellow and one red.
  • Green Bell Peppers – just remove the seeds and slice that baby nice and thin
