Apple Chutney Pork Chops

Don’t let the simplicity of this recipe fool you. It is delicious! In fact, I kept munching on those apples while they were simmering and they made the house smell like heaven! It just screams fall and the sweet and tangy apples are perfect for kids and adults.

My daughter is obsessed with pork chops. She begs for them, yet barely eats chicken. It doesn’t make sense to me but whatever! She loves this version. Her other favorite is our stuffed pork chop dinner! If you need a new dinner recipe that the whole family will love, then this apple chutney version needs to be on your recipe rotation!

Apple Sausage Breakfast Burritos

An apple chicken sausage burrito stuffed full of sausage, eggs, peppers, and cheese.

Well, I’m hooked. These Apple Sausage Breakfast Burritos are the yummiest Breakfast Burritos I’ve had so far. It’s a little cheesy, a lot of fluffy eggs and Aidell’s Chicken Breakfast sausage which completely makes the whole meal. I’ve already got my mind whirling with new recipes to use that breakfast sausage in and I’m generally not a very big breakfast meat person. I’ve had too many flavorless, overly greasy sausages that I kinda just stopped eating it. Then Macey’s was sampling Aidell’s and it was wonderful.

Motherhood with Joy

My friend recently had her little boy in the hospital with a bad case of pneumonia. Anytime a child, especially one that’s still a young toddler ends up in the hospital, my heart lurches into the reality of time and love. It seems only yesterday and somehow a million years ago that I was lying in a hospital fighting to survive along with an unborn baby doing the same thing, but at my own expense. I lack an awful lot in life, certainly when it comes to parenting, but times like these always remind me of one thing, and I hope it will make sense to say it, at least I’m here.

I may not make perfect decisions or respond to situations perfectly, but oh how I perfectly ache to be a good mother. To remember to love them and to strive a little more to extend that love to those outside of my home. As I honor the gift of motherhood I find myself wondering, what is the secret to motherhood with joy?

My friend’s son made it out of a much longer stay in the hospital than expected. She had so much on her plate and could have lost faith in tomorrow, in medicine, even in God, but she continued on, giving all she could muster each day for him.

I guess that’s it. All I can do it strive each day to begin again and remember that though tempted to lose faith in many things, myself, people and the world, God never loses faith in those things. Maybe I won’t end up with adult children that think I was the best mom, but maybe they will think I was trying to love them. Maybe that’s enough. Just to try to love.

Asian Steak Marinade

We love our steak fajitas marinade recipe but I couldn’t stop thinking about putting an Asian twist on it, and thus, our Asian steak marinade was born!

We have a little secret with the steak too, so keep reading to get all the dets.

The Secret is in the Steak

I couldn’t find plain skirt or flank steak at the store, so I bought carne asada instead. Just the store brand raw meat but it was already flavored. Worked amazing!!! So if you’re short on time, definitely go with this option. If you want to go totally homemade, I’ll include our own spice rub recipe in the recipe card below. You’ll apply the rub before putting the steak in the marinade.

Ingredients for Asian Steak Marinade

This dry rub and marinade is so easy! All you do is combine everything together and rub it on the steak and then pour the marinade on the steak in a plastic bag.

  • Skirt or Flank Steak – either one will work, and look for a pre-seasoned one for extra easy cooking

  • Rice Vinegar – adds acidity
  • Pineapple Juice – adds a little sweetness and tang
  • Soy Sauce – low sodium, great for tenderizing the meat because it breaks down the tough proteins
  • Garlic – freshly minced
  • Ginger – adds that signature Asian flavor
  • Light Brown Sugar – adds sweetness and richness
  • Red Chili Flakes – adds a little heat, feel free to add more if you like it spicy
  • Scallions – for garnish

Italian Pressed Sandwiches

For years and years I’ve wanted to share these fantastic Italian Pressed Sandwiches with you all but never took the time to snap pictures.

Layers of Italian meats, roasted red peppers, tomatoes, spinach and fresh mozzarella all pressed between tender slices of Italian bread. Oh baby, these sandwiches are so yum!

You see, picnics are kind of my thing. I adore them. I always have. Growing up we would make a delicious bowl of potato salad, pick up KFC (I KNOW, but don’t judge, KFC and picnics was a thing and I bet you did the same thing!) and head to some park or up into the mountains. Especially in July when our church would hold a huge Stake picnic, an entire day of games, water slides, family activities etc. It was incredible!

Sometimes when we would ditch KFC, we would haul sandwiches and sides and that was truly my favorite kind of picnicking. There’s something so free and wonderful about unplugging and finding respite in the hills. So, in case you’ve forgotten that joy-especially the one you were reminded of during quarantine (come on, did we so quickly forget the lessons we learned?!) then let me remind you, a stacked sandwich, a bunch of fresh fruit, salty chips and maybe a dessert like our lemon drop cookies will bring all kinds of happy to you and your favorite people.
