Protein Waffles – Easy Healthy Breakfast

Two ingredient protein waffles…2 INGREDIENTS…that’s all you need to make this high protein breakfast! We are eating protein waffles for breakfast, lunch and dinner.

We practically live off of these things. A few times a month I seem to have one of those days where no matter how badly I want to make dinner (or sometimes don’t even want to think about it), it just isn’t going to happen. Or maybe we just got home from vacation or ate super heavy all week, the list goes on and on. Either way, having something in your pocket that isn’t cereal or nachos comes in quite handy. Introducing what we call, “protein waffles”.

We eat protein waffles for dinner, but we also have them regularly for breakfast. A healthy breakfast sets the tone for my day, and I love getting a lot of protein in at breakfast. With this waffles recipe, you get 16 grams of protein in just one waffle.

Ingredients for Protein Waffles

Okay, don’t blink because you might miss it! For these protein waffles all you need is protein powder and eggs. You can use whole eggs or go with just egg whites for an even healthier waffle recipe.

What is the Best Protein Powder?

We use lots of different protein powders and have tried just about everything out. Our favorite brand of protein powder for these waffles is Just Ingredients Vanilla Bean. When you’re picking a protein powder, keep a close eye on the sugar. A lot of protein powders have loads of sugar in them and we don’t want that! Just Ingredients brand has only 2 grams of sugar per scoop.

What Ingredients Do You Need for Taco Sloppy Joes?

Very few ingredients are needed to make this quick and easy dinner recipe! You’ll just need some good ground beef and a few things to make the sloppy joe meat mixture, and then you can go as crazy or as simple as you want with the toppings. Here is your ingredients list:

  • Ground Beef: we prefer 85/15 beef for maximum flavor
  • Onion: just a yellow onion works great
  • Taco Seasoning: you can use store bought seasoning or make your own
  • Diced Green Chiles: I usually go with mild to keep it kid friendly.
  • Worcestershire: deepens flavor and adds richness

20 Minute Sausage and Peppers Gnocchi

Sausage and peppers in the same dish is such a stellar combo! Toss in some crispy gnocchi and a luscious sauce, and you’ll be adding this quick and easy dinner to your menu this week!

Our 20 minute sausage and peppers gnocchi is actually a meal of forgotten things. I found myself standing at the fridge years and years ago staring into a bunch of random ingredients and nothing to pull it all together; a little chicken broth, a chunk of onion and peppers from a taco night, and these random sausages a friend had given us. Not really enough of anything to make a full meal, or so I thought.

I’ve seen sausage and peppers stuffed into hoagie rolls enough to know that I could probably do something similar but without bread or rolls in the house at the time I needed to get creative and as a newlywed that also required cheap. I did not have enough money to go buy a bunch of stuff but I did have a lone package of pasta.

Over the years we’ve changed up this recipe a gazillion times until a little white cooking wine and the switch from pasta to gnocchi brought it all home. This crispy gnocchi with peppers and onions recipe only takes 20 minutes though the first time may be a little longer as you get the hang of it. Once you’ve done it once it’s a breeze.

Cook this, plate it.

Cook that, plate it.

Crisp the gnocchi, plate it.

Add the first two plates and sauce ingredients back in, simmer the sauce and then throw in the gnocchi, seasoning to taste. That’s it!

Leftover Thanksgiving Turkey Sliders

Take your Thanksgiving leftovers and combine them into the most tasty sliders! Turkey, stuffing, cheese and cranberry sauce in a mini sandwich baked in a poppy seed dressing…yummmmm!

For four years now I’ve been playing around with turkey sandwiches and I’ve for sure figured out a few leftover turkey recipes you need to try. For example, have you had a delicious roll with cream cheese, poppy seed dressing, mozzarella or havarti cheese (ohhhh or muenster!) with a nice slice of turkey? Easy and so delicious.

But this is not about that sandwich. This is about the idea I’ve been playing with year after year and finally I just went all in and added every main ingredient, turkey, stuffing, a killer honey mustard sauce, cranberry sauce and especially melty cheese. And THEN!!!! Cover the whole thing in a butter poppy seed dressing and bake it all in the oven.

This is the ultimate leftover Thanksgiving Turkey Sliders recipe!

Turkey pot pie is all the comfort you could imagine bundled in the most perfectly golden crust. It is creamy, full of veggies and perfect for leftover turkey.

Our chicken pot pie was one of our biggest posts last year. We had so many emails around Thanksgiving about using leftover turkey instead of chicken that we decided a turkey pot pie needed it’s own place on the blog.

We are making everything from scratch. From the flaky crust to the turkey and vegetable filling, it’s all homemade and we are going to walk you through each step.

A baked turkey pot pie with a slice removed. The crust is a golden brown and you can see the creamy filling with peas, carrots and turkey. Two forks are next to the pie.

Once I figured that out and the consistency of the filling, the best pot recipe ever came to be. Now we are doing a turkey version and you’re going to love it!
