The Little Things Newsletter #410 – Life, laughter, and lots of great food!

Welcome to the weekend, my friends! Despite the rain in the forecast, we’re hoping to sneak out for a short hike today whenever the weather gives us a break and we might get in some Frisbee golf too. (FYI I’m awful, but it’s still fun.) This is an Easter weekend full of family and friends for us.

I’m simmering some green chile stew for dinner tonight and tomorrow will be a waffle brunch after church followed by country-style ribs for dinner. We don’t have a traditional menu for Easter most years and it’s fun to play it by ear.

ON THE BLOGS THIS WEEK: Whether you’re dressing up a salad or slathering it on a burger, Thousand Island brings a punch of flavor that’s downright irresistible. Creamy mayo meets tangy ketchup along with the pop of diced pickles and a sprinkle of zesty onions in this recipe for Thousand Island salad dressing.

Chocolate dipped Coconut Macaroons are rich, sweet, chewy cookies that are almost candy-like. While they’ve been a holiday favorite for as long as I can remember, coconut macaroons are a treat we enjoy year-round.

Vanilla sweet cream ice cream filled with chunks of birthday cake and plenty of sprinkles is as much fun to make as it is to eat! Birthday cake ice cream is my current favorite flavor. And yes, I just declared a new favorite ice cream for at least the 10th time on this website. How could I possibly choose a forever favorite when I’m constantly trying new flavors to share with you?

What I’m CRAVING: All the shrimp recipes! I like shrimp a lot on an average day, but I’ve been craving it like mad lately. We’re making this fried rice for dinner tonight and I have this Shrimp Avocado Salad on my radar for lunch next week. And lastly, I just put this seriously loaded bacon, bleu cheese, and shrimp chopped salad on next week’s dinner plan too. The whole family loves that salad. 

What I’m WATCHING: Alias: Season 1 As a parent, it has been so much fun introducing my kids to my favorite shows, as they’ve grown old enough to enjoy them as well. My youngest and I watched the pilot episode of Alias this week and I think I’ve hooked him.

The key to enjoying this show is simply suspending disbelief. It’s a TV show and it’s not supposed to be remotely realistic. Jennifer Garner, and everyone else involved, did a fantastic job with this show, and it’s still just plain fun to watch. It’s hard to believe it was produced over 20 years ago. It has aged well and I’ll happily watch the whole series again.

What I’m READING: The Castaway: Shipwreck Key Book 1 by Stephanie Taylor. This book was a fun, clean, light, and fast read. It’s unusual for me to enjoy a book written from multiple character perspectives, but I did enjoy this one. It’s a story about a former first lady who moves to an island off the Florida Keys to open a bookshop and attempt to live her new life without scrutiny. The characters are interesting and I found myself wanting to know more about them all. 

What I’m LISTENING to: My Savior by Carrie Underwood. This entire album is absolutely beautiful. It has been in my regular rotation for almost a year now. I love hymns so much and Carrie did an amazing job with the songs here. The musical arrangements are just a little bit different and the songs feel both familiar and new. How Great Thou Art, Great is Thy Faithfulness, and Because He Lives are just a few of my favorites. (For what it’s worth, there’s only one song on this album that I don’t love.)
