Yes! I just called a “casserole” irresistible and I stand by that. If you love mashed potatoes, chicken, and broccoli, not to mention bacon and cheese, you need to try this recipe! (although, technically, my boys don’t love broccoli and they LOVE this casserole, so….)

This recipe is one of many great ones in my friend Trish‘s cookbook, 100 Creative Ways To Use Rotisserie Chicken. In case you can’t tell from the title, she has literally written the book on ways to cook with rotisserie chicken.

Her book really should be sold next to the rotisserie chicken display in every grocery store. I love how many great ideas she’s packed into this cookbook.

Chicken Potato Broccoli Casserole

This recipe will work well with rotisserie chicken, leftover roasted chicken, or with any cooked leftover chicken.

Monterey Jack, Cheddar, or a Mexican blend shredded cheese will also work with this recipe. I typically use a Mexican blend shredded cheese because I almost always have it on hand and it works great.

Have you ever had the creamiest milk shake and once you have had it you can never settle for just any milkshake again? That’s what happened to me.

I believe she chose bubblegum.

Peanut Butter Dip

Apples and peanut butter are daily snacks around my house. My kids eat a plate of apples with a scoop of plain peanut butter almost every day.

Random but does anyone else have to ration peanut butter at their house? I am not joking when I say my kids treat apples as the condiment on top of peanut butter instead of the other way around.

A few nights ago, I was taking snacks over to a friend’s house for a party and she requested fruit if possible. I had only apples in the house, so I decided to make a quick peanut butter dip to go with them.

I was aiming for something a teeny bit healthier than the Chocolate Chip Cookie Dough Dip that I made last year. While I still love that one, it is definitely a dessert!

Peanut Butter Apple Dip

I bought a huge package of cream cheese a couple of weeks ago; when I was making Cream Cheese Pancakes for the hundredth time – slight exaggeration here, but only slight. I combined the extra cream cheese with the peanut butter and just sweetened it to taste.

Judging from the fact that at least 4 people requested the recipe, (I couldn’t stop laughing when I told them how simple it was) I’m calling this a success.

What’s not to love about an appetizer that takes about 3 minutes to throw together? I learned a long time ago to have a few things in my back pocket that I could whip up at a moment’s notice. This has been added to that pocket.

We were dipping apples and pretzels into this all night and I refilled the bowl a couple of times. If I would have had the ingredients I might have made a batch of Caramel Cheesecake Dip to serve along with this one.

I made a second small batch today and snapped a picture right before my boys inhaled every bite in about two and a half minutes. You can adjust the sweetness as much or as little as you like.

I’ve made this with both brown sugar and honey. Personally, I liked the brown sugar version best, but both are tasty options. (For something a wee bit lighter, try this peanut butter dip made with yogurt.

My go-to pizza at all pizza restaurants is a margherita. It’s my favorite…hands down. Logically I had to create my own classic margherita pizza recipe that rivals the pies I had in Italy.

I honestly feel like you can judge how legit a pizza place is on how good their margherita is. If they can’t make a good marg…pizza in it’s most simple, pure form…then I have little hope for any of their other ‘zas. Might be harsh, but it has worked for me so far!

The crust in this recipe is a Neopolitan crust which means that it is thin. We love it thin and chewy. This pizza crust recipe is flawless and the perfect compliment to the simple and delicate but bold flavor of a margherita pizza.

Ingredients for a Margherita Pizza Recipe

Recipes that are amazing have to be complicated and have a grocery list a mile long, right? Wrong! The crust has just 5 ingredients, the sauce has 2, and for the toppings, there are 3. It really couldn’t be more simple! Here is what you will need:

Dough:

  • Baker’s flour (or 00 flour): essential to getting that chewy crust you want in a pizza, see section below for more details
  • Water: it needs to be warm (105-115 degrees F) to activate the yeast properly
  • Sea Salt: go for fine grain, adds flavor to the crust
  • Sugar: feeds the yeast
  • Instant Yeast: don’t use active dry yeast

Sauce:

  • San Marzano Tomatoes: you can use crushed, whole, diced…whatever you can find…it all ends up in the blender
  • Sea Salt: adds flavor to the sauce

Toppings:

  • Fresh Mozzarella: you can use as much or as little of the cheese as you want
  • Fresh Basil: I like to leave the leaves whole and scatter them over th

Cabbage Rolls are one of Sean’s favorite foods. This recipe simplifies the traditional rolled version down to just a couple of steps and despite appearances, they really are tasty! I’ve been making this version of cabbage rolls for years.

Along with how easy it is to put together, I also really like that I never have to worry about what side dishes to serve. This is an “all-in-one” meal that’s filling, hearty, and completely satisfying.

That’s more than worth the trade-off of not having the most aesthetically pleasing dinner every so often.

Layered Cabbage Casserole

This method of making cabbage rolls is a little simpler than the traditional version which involves rolling tons of individual cabbage leaves.

Ground beef and onions are cooked with herbs and spices in the skillet, then layered on top of cabbage leaves in a casserole dish along with uncooked rice.

After mixing together a simple tomato sauce and pouring it over the cabbage rolls, the whole thing bakes in the oven in one dish. The flavors of the meat and sauce shine against the simple backdrop of tender cabbage and fluffy grains of rice.
