Sweet Potatoes with Sausage

Sweet Potatoes with Sausage is an easy-as-can-be one pan dinner that my family would willingly eat every night.

I get it, weeknight meals especially need to be quick and easy, not only on the prep but the clean-up as well. This easy sheet pan dinner with baked chicken thighs, baby potatoes, and fresh green beans has become a favorite in many of your homes over the past two years.

Sheet Pan Sausage and Potatoes

Tender sweet potatoes, crisp bell peppers, sweet onions, and spicy sausage are roasted together in this simple and flavorful meal that my family just can’t get enough of lately.

I make a variation of this sheet pan supper at least a couple of times a month. I typically use whichever sausage I have in the refrigerator: andouille, kielbasa, spicy chicken, pork, or beef links will all work well.

Sweet potatoes and peppers have become a go-to combination for their savory yet sweet qualities. Roasted sweet potatoes get perfectly soft inside with a crispy exterior. The bell peppers and onions bring a nice peppery bite and a layer of flavor.

There are a few tricks to your sheet pan dinners coming out perfectly. You want all of the ingredients to be perfectly cooked and not have something be almost uncooked and raw and another item turned to mush.

It has taken me a bit of tinkering with the size of the pieces and the amount of time in the oven to master the perfect combo. But let me tell you. . . I think I’ve nailed it this time.

Start with sweet potatoes cut into 1/2 inch pieces. Coat them in olive oil and roast for 20 minutes by themselves on the sheet pan. Then stir them around and flip them on the pan before adding the sausage, peppers and onions.

By doing this in two steps you will get the perfect soft yet crispy sweet potatoes. Along with properly cooked sausage and nice slightly charred peppers.

The last time I made this, I used cheese and jalapeno stuffed chicken sausage, so your favorite sausage should work as well. I always have assorted sausages on hand just for meals like this; most unopened sausage will keep in the refrigerator for quite a while before needing to be used.

Sheet Pan Sausage and Vegetables

  • sweet potatoes or jewel yams
  • andouille kielbasa, or polish sausage (pork or chicken)
  • bell pepper 
  • onion
  • olive oil 
  • smoked paprika
  • granulated garlic or garlic powder
  • kosher salt
  • freshly ground black pepper

Sausage Sheet Pan Dinner

  1. Preheat the oven to 425°F. Place the potatoes on a large baking sheet and drizzle with 1 tablespoon of oil. Toss with your hands to coat. Spread across the sheet and roast for 20 minutes.
  2. Slice the sausage in half, or into 3-inch sections. Slice the peppers and onions. Stir together the oil, garlic, paprika, salt, and pepper in a large mixing bowl. Add the sausage and vegetables to the bowl and toss with your hands to thoroughly coat everything with the spices. Set aside.
  3. When the potatoes have been in the oven for 20 minutes, use a spatula to stir them gently and flip them over. Add the sausage, peppers, and onions to the baking sheet. Stir to combine and spread everything across the baking sheet.
  4. Roast an additional 20 minutes. The potatoes should be slightly crisp, the sausage should be plump and juicy, and the peppers should be slightly shriveled and beginning to brown. Enjoy!

Note: The sweet potatoes require the longest roasting time, so toss them in the oven while you prep the rest of the ingredients. Then add the sausage and vegetables halfway through the roasting time. The hands-on time for this meal is minimal.

Pay attention to the size of the potato pieces for this recipe. If the pieces are much larger than ½-inch, the cooking time will be longer than noted above. White potatoes can be substituted for the sweet potatoes in this recipe as well. Fresh green beans or asparagus can be substituted for the peppers in this recipe.

Easy One Pan Dinners for Family

Dinner time can be kind of crazy at my house. The goal is usually easy, nutritious and a thumbs up from the crew is a good bonus. Since no one wants to spent the night doing dishes here are some more of our quick meals.

Ingredients

  • 3 small sweet potatoes or jewel yams, about 1 pound, chopped into ½-inch pieces
  • 12-16 ounces andouille kielbasa, or polish sausage (pork or chicken)
  • 1 bell pepper sliced into 1-inch wide strips
  • 1 small onion cut into wedges
  • 3 tablespoons olive oil divided
  • teaspoon smoked paprika
  • ½ teaspoon granulated garlic or garlic powder
  • 1 teaspoon kosher salt divided
  • ½ teaspoon freshly ground black pepper divided

Instructions
