The Best Ice Cream Cookie Sandwiches start with the best ever perfectly chewy cookies. Over the years, I’ve made ice cream sandwiches using many different cookies.

In the end, I simply love the way the flavor in these oatmeal peanut butter cookies adds to the overall awesomeness of this frozen treat.

Ice Cream Cookie Sandwiches

I’m happy to tell you that I’ve found the cookie recipe that works perfectly every single time. This cookie recipe is adapted from my grandmother’s recipe for Monster Cookies and I suspect that it may have been YOUR grandmother’s recipe as well.

When I discovered that the Monster Cookie recipe in my best friend’s cookbook from her mom was almost the exact same recipe that my grandmother used, it became even more fun every time I made those cookies.

I love that we all have so much sentimental attachment to our family recipes.

In the past, I’ve made Monster Cookie Ice Cream Sandwiches using the original recipe, but I found that with a few tweaks, it was even better.

By adapting that recipe to make it a little bit chewier and less crunchy, it freezes and softens beautifully when it is layered with ice cream.

Ice Cream Sandwiches

I love making ice cream sandwiches with homemade ice cream. This recipe for Homemade Vanilla Ice Cream is hands down the easiest and best one you’ll ever make.

For these sandwiches, I churned a batch of ice cream while I started making the cookies. Then I stashed the ice cream in the freezer while the cookies were baking and cooling. The ice cream was

Lemon Drop Cookies are tangy, sweet, mouthwatering treats

Lemon Drop Cookies

These Lemon Drop Cookies were so irresistible, that I happily ate cookies in lieu of my dinner. (shhhh, don’t tell the kids, they thought I ate my dinner after they went to bed.)

I’ve been craving a lemon dessert for a couple of weeks now and I had the recipe for these cookies scribbled out and waiting to try.

I’m happy to say that the cookies were an awesome success and I managed to eat an embarrassing number of them before I finally packed the remaining cookies in a container and sent them home with friends!

Lemon Drop Cookie Recipe

  1. Preheat the oven to 350°F. Whisk together the flour, baking powder, and salt and set aside. Combine the butter and sugar in a mixing bowl and beat until smooth.
  2. Add the egg, vanilla, lemon juice, and lemon zest. Stir to combine. Add the dry ingredients and mix until combined.
  3. The dough will be somewhat dry and crumbly, but can easily be pressed together. Scoop into 1″ balls and gently roll them smooth between your hands. Place on a parchment paper-lined baking sheet.
  4. Bake for 10 minutes, until the cookies are set, but not browned. These will be small, round cookies and shouldn’t flatten or spread much at all. Remove from the oven and transfer to a wire rack to cool completely.

How it Works

Mom has 5 random ingredients and names in a hat.

Mom pulls a name and that person picks their ingredient. We go until everyone has chosen an ingredient and then separate to make your own creation using anything in the fridge, freezer or pantry.

In the end, we taste, try, and decide on a winner based on our new recipe creations.

It is such a fun an
