The first time I shared this recipe online, I was overwhelmed by the response, it felt like everyone had a different name for these cookies!

Wedding Cookies

Every time I bite into a wedding cookie, I’m transported to a time when I watched my grandmother roll them between her hands. She was the source of so many delicious foods in my childhood.

She would set the finished cookies on a platter and everything looked so elegant to my young eyes. More than any other holiday treat, these Mexican cookies taste like Christmas to me.

I’d try sneaking them from the tray before it was time but I’m fairly certain that the powdered sugar always left a ring of evidence around my mouth. No matter, Grandmother always made plenty of these cookies to go around.

The first time I tried making these cookies on my own, I was 18 years old and living in my first apartment. I had my grandmother’s Mexican wedding cookies recipe, but I figured I knew best.

Instead of rolling the warm cookies gently through the powdered sugar, I placed them in a Ziploc bag and poured sugar over them. When I shook the bag to coat them with sugar, at least half the cookies broke apart.

The cookies were still delicious, but they were a mess to eat. In the years since I’ve learned that Grandmother knew best. If you follow her directions for rolling the cookies in the sugar, yours will turn out every bit as perfect as hers always did.

The easiest method I’ve found for coating the cookies in powdered sugar is to put about a cup of powdered sugar in a bowl and roll the warm cookies, a few at a time, through the sugar.

Yes, rolling each ball in powdered sugar might take a little more time but the results are so very worth it. These classic cookies are crisp when you bite into them and then they melt in your mouth.

That first bite delivers sweetness from the powdered sugar on both the inside and outside. This light buttery cookie always brings a smile to my face as I think about my grandmother and all those childhood holidays.

However, as much as we love those sink-your-teeth-in sugar cookies, like seriously they are the perfect sugar cookie, just ask our readers, everyone needs a quick and easy Christmas cookie for the family party that won’t suck hours of your time.

Ingredients for Christmas M&M Cookies

There won’t be any surprises here! You’ll need all the usual chocolate chip cookie ingredients plus some Christmas m&m’s. Here is a brief overview of what you will need:

  • Unsalted Butter – using unsalted allows you to control the saltiness of the recipe and make sure it is softened
  • Brown Sugar – you want fresh moist brown sugar for optimal texture
  • White Sugar – just regular granulated white sugar
  • Egg – gives structure to the cookies and helps hold everything together
  • Vanilla Extract – adds to the flavor, and use the real stuff…no imitation vanilla
  • Flour – make sure to measure the flour correctly so they come out chewy and soft and not dry
  • Baking Soda – gives the cookies their rise and fluffiness
  • Cornstarch – acts as a tenderizer that helps make the cookies stay thick but soft and chewy
  • Salt – balances all the sweetness and enhances flavor

That’s right folks, these are not your typical holiday molasses cookie. I know that this is a pretty popular cookie, molasses or ginger snap, for this time of year, but that does not mean that it has to be completely traditional. These white chocolate chewy molasses cookies are actually an adapted recipe from my dad’s side of the family and is over 150 years old! I’ve been holding onto this recipe since I got it from my aunt last year just so that I could share it at the right time of year with all of you.

Creating This Pumpkin Chocolate Chip Cookie Recipe

You know where this all started for us, don’t you? The grocery store. It’s not very often that I buy cookies at the grocery store because:

  1. We enjoy making cookies together.
  2. We love cookie dough (don’t you dare pull the egg thing on me. I know, I know).
  3. I happen to think we make really good cookies, so why buy them?

None of that matters when it comes to pumpkin chocolate chip cookies. We tried so many recipes and just didn’t love them so we kept buying the big, pillowy cookies on a tray from the store. Until last year. Last year everything changed. We discovered the most melt in your mouth pumpkin cookie recipe EVER.

You see, Pinterest was bonkers about pumpkin last year. I’d say it was one of the biggest pumpkin years ever, and with all of the pumpkin chocolate chip cookie recipes we just had to start testing them all. And you know what, it was the one that was plastered all over Pinterest we liked the least.

We discovered that often those really high cookies were either too dense and soggy or 90% of the time way too dry. So scratch that. We needed pillowy but height was no longer a concern.

Too little or too much pumpkin led to flavorless or eating squash tasting cookies. We found that 1 cup was the perfect amount. Recipes that were doubled or even tripled didn’t come out as well so we stuck to our 3 dozen batch.

It took some time and patience, but now that we’ve discovered the secret to making truly phenomenal pumpkin cookies with gooey chocolate chips, we’ll never go back to the store-bought kind.

Not Yo Momma’s Paula Deen Banana Pudding is a fluffy mixture of creamy pudding and whipped cream with cream cheese and sweetened condensed milk. Plus it’s served with Chessman Cookies on the bottom and on top!

I mean, it is. There are banana slices under the pudding. But the actual pudding is a french vanilla pudding whipped up with sweetened condensed milk and cream cheese.

Ingredients for Not Yo Momma’s Banana Pudding

Here’s your quick grocery list to make your banana pudding with Chessman Cookies. 

  • Chessman Cookies: traditionally used in a classic recipe for banana pudding and can be found on the cookie aisle
    • Fun Fact: This recipe is sometimes known as Chessman banana pudding!
  • French Vanilla Instant Pudding Box: make sure it is instant pudding and not cook & serve pudding
  • Cool Whip: if you can’t find a 12oz tub of Cool Whip, use 1 and half of the 8oz tubs
  • Cream Cheese: make sure it is room temperature so that it doesn’t get lumpy
  • Sweetened Condensed Milk: adds sweetness and creaminess to the dessert
  • Milk: combines with the pudding mix the create the pudding
  • Bananas: ripe bananas are the best for their sweetness and bold banana flavor

Substitute for Chessman Cookies

Vanilla Wafers are the best substitute for Chessman cookies if you can’t find them. Chessman Cookies are usually by the Pepperidge Farm brand so look by the Mint Milano cookies.

How to Make Paula Deen Banana Pudding  

  1. Set the Cool Whip in the fridge or on the counter for a faster thaw.
  2. Whisk milk and the instant pudding mix together in a small bowl. 
  3. In another bowl, blend the cream cheese and sweetened condensed milk with a handheld electric mixer.
  4. Fold the Cool Whip into the cream cheese mixture. 
  5. Stir together the vanilla pudding mixture and cream cheese mixture. 
  6. Layer 1 bagof cookies on the bottom of a 9×13 dish, top the cookies with a layer of bananas. 
  7. Pile on the pudding.
