Watermelon Fruit Salad

We’ve made it to the middle of the summer, and along with the heat, comes the perfect excuse to indulge in all the vibrant, sweet fruits the season offers.

Today, I’m sharing a simple yet irresistible recipe that’s already become my favorite snack this summer.

Someone around here may have made this salad three times in the past couple of weeks just because she kept waking up craving it. Go ahead and call me a fruit addict – I’m fine with that.

My husband handles most of our grocery shopping and at this point, he knows there is going to be a watermelon on the list every single time he heads to the store. I never can get enough of it in the summer.

This watermelon fruit salad is not only a feast for the eyes but also a burst of flavors that will leave you feeling refreshed and energized. Whether you’re hosting a barbecue or just looking for a healthy treat, this salad is easy to make and sure to impress.

Any combination of fruits will work nicely in this recipe. You’ll need a total of 12 cups worth of chopped fruits.

Pickle Potato Salad

You can use any potato you like to make this potato salad. However, I like to use thin-skinned Yukon Gold potatoes. There’s no need to peel them and the texture stays nice for the salad.

If you use new or white potatoes, you don’t need to peel those either. However, if you choose to use a russet or red potato, you’ll want to peel the potatoes for the best results.

Potato Salad with Dill and Pickles

You’ll need the following ingredients for the recipe:

  • Yukon Gold potatoes
  • mayonnaise
  • dill pickle relish
  • dried dill
  • salt and pepper
  • baby dill pickles
  • hard-boiled eggs
  • green onions
  • fresh dill OPTIONAL

We enjoy a good amount of hard-boiled eggs in our potato salads. If you prefer fewer eggs, or not to have a bit of egg in every bite, feel free to reduce the number of eggs for your tastes.

Cajun Potatoes

My family can not get enough of the Cajun flavors we’ve grown to love. Whether it’s a shrimp boil at home or a quick sausage pasta, we love these flavors.

Cajun spices are exactly what the blank canvas of potatoes needs in order to shine. All of these herbs and spices provide an abundance of flavor in every crispy on the outside, tender and fluffy on the inside, bite of roasted cajun potato.

I just realized a week or two ago that I haven’t yet shared this recipe here. It’s a family favorite from my first cookbook and we’ve been making these potatoes regularly for at least 7-8 years now. These potatoes are a big hit in our breakfast burritos anytime we have some left over.
