Crunchy greens, juicy tomatoes, and a medley of meats and cheeses are drizzled in a delicious creamy dressing to make this Italian Grinder Salad.

Grinder Salad

Whoa. This salad. It is SO good! As soon as I tasted the Italian Grinder Sandwich that I shared earlier this week, I knew that a salad needed to happen. The tangy slaw mixture topping the sandwiches was my favorite part, so I wanted to make the most of that flavor combination in a loaded salad.

Luckily, I had plenty of extra ingredients on hand, so I was able to make this salad the very next day. The whole family gave it two thumbs up and I’m pretty sure I’ll be making it again soon.

If you don’t need 8 servings all at once, or if you aren’t feeding 3 teenage boys, I suggest prepping all of the grinder salad ingredients and storing them separately in airtight containers, as instructed in How To Eat A Salad Every Day.

Just stash the meats and cheeses in a couple of ziploc bags or containers, and pour the grinder salad dressing into a jar until it is needed. This makes it so much easier to prepare salads consistently and quickly.

When you’re ready to eat a great salad, just combine however much of each ingredient you need in a bowl and toss your individual serving with a bit of dressing. These ingredients should keep well in the fridge for several days.

Ingredients You Need to Make the Best Sauteed Mushrooms:

  • Baby Bella Mushrooms: also called cremini mushrooms, they have a deep earthy flavor and beautiful color
  • Italian Dressing: You can make your own homemade Italian dressing or buy your favorite brand from the store. This is the secret sauce combined with the flavor of the bell peppers and onions…so dreamy!
  • Onion: just a yellow onion works great
  • Red Bell Pepper: you could also use orange or yellow
  • Salt and Pepper: adds flavor
  • Parsley: used for garnish

The measurements for each ingredient can be found in the recipe card at the end of this post. Keep scrolling for all the details!

Substitutions and Variations

If you can’t find baby bella mushrooms, white button mushrooms will work fine. They just will lack a little depth of flavor. Portobello mushrooms can also be used. You’ll just want to cut them into bite size pieces. Porcini, chanterelle or shiitake mushrooms are also options but they tend to be quite expensive. You can also do a combination of any of these.

Fresh parsley can be swapped for any variety of fresh herbs…thyme, oregano, or rosemary will all taste great.

If you want to add a little heat, add a pinch or two of red pepper flakes.

How to Clean Mushrooms

Mushrooms can sometimes have dirt on them when they are packaged. Be sure to wipe mushrooms with a dry paper towel to clean them. Don’t wash them in water or use a damp paper towel. Mushrooms are like sponges and will soak up water. You don’t want to add any extra moisture, and you want the mushrooms to soak up the Italian dressing flavors.

Homemade Cranberry Sauce

This tangy, sweet homemade cranberry sauce with lemon trumps anything you can buy at the store.

Do you know how easy it is to make cranberry sauce? If you can boil water, I promise you can make cranberry sauce.

Homemade cranberry sauce in white bowl with ladle

For years, I bought cranberry sauce in a can and my husband and boys ate every last bit of it. They clearly enjoy cranberry sauce. We even bought an extra can or two every year, just for the leftovers.

I love so many other cranberry recipes, from cranberry apple pie to Christmas cake, cranberry jalapeno dip to cranberry pancakes. But cranberry sauce? That was never my thing. It was only ever something we had for the boys in the house – until now.

Cranberry Sauce with Lemon

About a dozen years ago, that changed for me. I tried a sandwich that stacked turkey with cranberry sauce and I fell in love with the combination.

It was not a sugary sweet cranberry sauce, it was tangy and just a bit sweet at the same time. I now understand why so many people think it just isn’t Thanksgiving without the cranberry sauce.

I’ve made cranberry sauce a few different ways over the past 10 or so years, but this cranberry sauce with lemon is my favorite version. This is the easiest of the Thanksgiving side dishes to make ahead of time for the holidays too.

Whipped Sweet Potatoes

Without any added sugars at all, these Whipped Sweet Potatoes are one of the best sweet potato dishes I have ever tasted. Fluffy, creamy, sweet, and fragrant with vanilla, these whipped sweet potatoes are so good, you just might find yourself choosing a second helping for dessert in lieu of pie.

I know. It sounds made up. Someone would choose a ladle full of sweet potatoes over a slice of pie? With these whipped sweet potatoes, it actually happens. These creamy, fluffy sweet potatoes are far more than your run-of-the-mill mashed potatoes.

Whipped Sweet Potatoes

In this recipe, the sweet potatoes are roasted until they are bursting with rich flavor. The color is intense and the flavor is almost indescribable.

The roasting step makes such a difference to the final flavor compared with boiling or steaming the spuds. That time in the oven brings out a robust flavor that pairs well with the fragrant vanilla whipped in.

Vanilla Whipped Sweet Potatoes

The addition of vanilla provides a delicious undertone to this sweet potato side dish. Then, a generous helping of butter and real cream take these whipped sweet potatoes to a level I can only compare with a warm mousse.

What makes these potatoes whipped? Instead of mashing the roasted sweet potatoes by hand, I used a food processor to combine the ingredients and achieve that fluffy, mousse-like texture.

Herb Mashed Potatoes

Rich with butter and cream, aromatic, and seasoned very simply with salt, pepper, and thyme, these herb mashed potatoes are simply delicious. Mashed potatoes are always a hit with my family, but these are a step above the average.

Homestyle Mashed Potatoes

As much as we love mashed potatoes, I do not enjoy peeling potatoes. To avoid peeling potatoes, I use Yukon or golden potatoes in most of our mashed potatoes. The skins are so thin you can leave them on.

Rich, fluffy mashed potatoes with soft potato pieces and skins that melt into the creaminess are what you will get with this recipe. Yes, skin-on mashed potatoes can still be fluffy.

I’m a great big fan of rustic mashed potatoes. Why do I call them rustic? Because they aren’t supposed to be perfectly smooth, there should be some texture and it shouldn’t be fussy at all.

Mashed potatoes used to intimidate me, but I’m happy to tell you that there is nothing to worry about when making mashed potatoes. Just drain the potatoes and place them back in the pot over very low heat to make sure that any liquid or steam is released while you’re mashing them.
