My mom’s classic recipe that I hated for nearly my entire life, yes, even as an adult. I don’t know what has happened but in the last few years I’ve had such a craving for the classic recipes that I grew up on. Call it nostalgia, or maybe I’m just finally growing up and realizing what a gift it was that my mom made dinner literally every night and we always ate around a dinner table together.

This recipe is from her dear friend, Debbie, and I don’t remember a single year of my life that Mom didn’t make it, so it’s been around for a long time.

Ingredients for Ham Potato Broccoli Casserole

Grab your leftover ham and a few other ingredients, and let’s make this comforting casserole for dinner! Here is everything you’ll need:

  • New Potatoes: a little sweeter and less starchy than regular russet or yukon gold potatoes, we love the flavor and texture!
  • Broccoli: fresh or frozen broccoli florets work great
  • Butter: used to salute and onions and mushrooms
  • Onion: just a regular yellow onion
  • Baby Bella Mushrooms: can be substituted with white button mushrooms or omitted if desired
  • Salt and Pepper: adds flavor
  • Ham: adds flavor and protein
  • Cream Cheese: adds richness and creaminess
  • Cheddar Cheese: adds flavor and gooiness

Substitutions and Variations

I love to use leftover ham in this recipe, but any protein tastes great in this casserole. You could use rotisserie chicken, ground beef, bacon, sausage, etc.

Growing up, Mom usually skipped the mushrooms or only put them on half of the casserole in order to please her picky kids, but they are in fact her favorite part. Sautéed with onions in gobs of delicious butter, I mean, what isn’t to love?

You can also change up the vegetables in this casserole. Peas or green beans would be super yummy!

How to Make Ham Potato and Broccoli Casserole

  1. Prep: Butter or spray a 9×13 baking dish and preheat the oven to 350 degrees F.
  2. Parboil: Partially boil the potatoes for 8-10 minutes then drain and set aside. See section below for skipping this step.
  3. Steam: Place the broccoli in a saucepan and steam until bright green.

I love feta and have been trying to think up new ways to eat it. I found a feta zucchini and thought, dude, I can make that into chicken! And so I did and we can’t get enough of this recipe!

Ingredients Needed for Feta Chicken

This chicken recipe uses simple ingredients – chicken, olive oil, seasonings, chickpeas, feta, lemon and fresh herbs. It’s so bold in flavor! Here is everything you will need:

  • Chicken Breasts: boneless, skinless
  • Extra Virgin Olive Oil: helps the chicken crisp up on the outside and helps the seasonings stick to the chicken
  • Seasonings: Chili Powder, Smoked Paprika, Garlic Powder and Kosher Salt

For the Chickpeas

  • Chickpeas: canned chickpeas that have been patted dry with paper towels
  • Seasonings: Cumin, Ground Coriander, Smoked Paprika and Garlic Salt
  • Olive Oil: helps the chickpeas get crispy as they roast

For the Feta

  • Lemon Juice and Zest: adds flavor and acidity
  • Feta Cheese: a block of feta or crumbled feta both work
  • Dill: definitely use fresh dill if you can, use 2 teaspoons of dried dill if you need to
  • Mint: fresh mint is preferred, us 1 teaspoon of dried mint if needed
  • Black Pepper: adds flavor

Welcome to the weekend, my friends! My guys all managed to catch a cold bug over the holidays, but thankfully, everyone seems to be feeling a bit better at this point. There is a lot of comfort food and warm soup on our menu right now and I’m here for every delicious bite of it.

We didn’t put our tree up until late this year, so I’m happily enjoying the lights for a while longer. May this weekend be filled with whatever you like best, be that a fresh house cleared of Christmas already, or a house still glowing with the lights of the season.

ON OUR MENU THIS WEEK:  Dinner tonight is the best ever Green Chile Stew. It is loaded with bite-size chunks of pork that are seasoned with onion and plenty of garlic. The pork is simmered in a green chile sauce until tender enough to almost fall apart when you bite it.

Baked Potato Soup is a favorite with my middle son and when it’s served with all the toppings and a warm loaf of bread, we all enjoy it. Everything you love about a fully loaded baked potato is tucked into this rich and creamy soup. There are fluffy bites of baked potato in every bite.

This Pasta with Cabbage and Sausage is one of the meals I’ve craved the most over the past year and it gets serious bonus points for also being a lightning fast dinner to make.

The first time I baked Sweet Potatoes in the Air Fryer it was a game-changer for me. Over the past couple of years, this has been my lunch at least once a month, if not more often than that. Sometimes I top the sweet potatoes simply with a pat of butter, other times I may fill them with taco beef or stuff them with bbq chicken.

Roasted Sweet Potatoes and Brussels Sprouts with Bacon are pure awesomeness from start to finish. Adding salty bacon and a splash of vinegar makes this one heck of a fantastic side dish – although I eat it as a full meal more often than not.

This easy-to-make Chili is filled with beans, tomatoes, corn, and plenty of Mexican spices. I’ve made this chili with meat and without and it’s delicious both ways. My boys like to top their bowls with shredded cheese, sour cream, and a handful of Fritos.

Our girls have started cooking more and more, and while I love it, I also want to make sure that it always stays fun and not merely a means to eat. I’m getting off topic, this brownie cookbook was a great chance for our girls to spend time together doing something fun. They can choose to cook from the cookbook whenever they want as long as it’s together. It’s so fun trying their new creations and this last weekend it was brownie batter dip. This chocolate dip is so good!!

How to Make Cheese Fondue?

You aren’t going to believe how easy it is to make your cheese fondue at home! Here are the steps:

  1. Toss: Grate all the cheeses and toss with the EZ Gel (or cornstarch) and set aside.
  2. Rub: Slice a garlic clove in half and then rub the exposed side all over inside your fondue pot (or saucepan).
  3. Simmer: Add the broth and vinegar to the pot over medium heat and bring it to a simmer.
  4. Stir: Add the grated cheese mixture to the pot one handful at a time and stir until melted.
  5. Mix: The mustard and nutmeg get added last. Stir them in until smooth.
  6. Serve: Serve with all your favorite accompaniments.
