Insanely Delicious Pumpkin Lava Cake

The recipe that has been hurting my brain for 4 years is finally here. Our insanely delicious pumpkin lava cake is going to blow up Christmas desserts for the rest of eternity. 

Aren’t you a little like me? You get to that big Christmas meal and go back and forth on which dessert you want to bring to the table, something chocolate, a little pie – oh but you ate pie for a week after Thanksgiving, so maybe not…

Pumpkin lava cake to the rescue!

I saw all of those chocolate lava cakes for years but never fully enjoyed one, so I decided that we need a pumpkin version. All the spice of a molasses or gingerbread feel but 100% pumpkin. I wanted to feel the Christmas spirit and for me that means smelling it and tasting it. You know I’m right, you walk into a place that smells of Christmas and you’re instantly all tingly like you are a little kid again. Chocolate is awesome, but Christmas needs spice!

Jewish Apple Cake

Jewish apple cake is a moist, dense cake brimming with chunks of cinnamon sugar coated apple. It is the perfect fall dessert!

Ok, I feel like I have no business writing about a tradition that belongs to another, but every year my instagram starts filling with posts about an apple or honey cake for Shabbat or other Jewish gatherings and celebrations and my curiosity was piqued. What was this glorious dessert and do I dare make my own?

I have spent all year testing recipes and I have to say, a cake filled with layers of apples, HECK YES. You need it in your life!!! It’s such a sweet and simple cake and my goodness does it hit the spot! It’s moist and flavorful, but it’s especially unique in that there’s no frosting! I love a cake that can stand on its own!!

Jewish apple cake is a simple, dense cake believe to have originated in Poland.

Ingredients for Jewish Apple Cake

All you need is simple pantry ingredients for this cake which is why I love it! I can make it anytime because I always have these ingredients on hand. Here is what you will need:

Cake

  • Apples
  • Sugar
  • Cinnamon
  • Flour
  • Baking Powder
  • Salt
  • Brown Sugar
  • Canola Oil
  • Vanilla
  • Eggs
  • Orange Juice

Topping

  • Brown Sugar
  • Flour
  • Butter
  • Powdered Sugar

Halloween Peanut Butter Blondies

Peanut butter blondies that are loaded with Reese’s pieces, peanut butter chips, chocolate chips and Oreos. Yes, you read that correctly! These are fully loaded!

I have refused to post Halloween desserts for years. I am not creative, and I don’t do cute. And I mostly am not at all artistic. Halloween kinda needs all of that. But lately I’ve been all about the mixups of ingredients and I couldn’t help but wonder, could a cute Halloween treat be made just by throwing a lot of goodies into blonde brownies?

Ahhh but there’s the issue, blonde brownies are kind of the worst lately. I think there are far too many recipes out there and the majority are dry. I hate that! Sink-your-teeth-into-them blonde brownies is how they should be. So, until I’m ready to post our favorite blonde brownies I thought I’d start with a peanut butter version. It took many attempts, but these are the best blonde brownies I’ve had and bonus that they not only are peanut butter blonde brownies but they are loaded with Reese’s Pieces, peanut butter chips (my personal favorite part), chocolate chips and Oreos!

On top look for Halloween sprinkles that will pop. I went for a version with purple and green in them so that it was extra colorful and fun.

Mini Cadbury Chocolates Pumpkin Cookies

Just when I thought our chewy pumpkin cookies couldn’t get any better, I had the thought to add chocolate! And not just any ol’ chocolate, Cadbury chocolate!

You know those perfect little candy coated chocolate eggs that flood the grocery stores at Easter time? They are addicting! Now you can find them in the fall in their harvest mix and at Christmas time. It was hard enough to control myself at Easter time with the mini eggs but now fall and Christmas too?!

To heck with! Indulge! Cadbury, I see you! And I’ll add you to my favorite pumpkin cookies! Drooling!

Ingredients for Cadbury Pumpkin Cookies

You’ll need a few ingredients outside of your standard cookie dry and wet ingredients for this cookie recipe…pumpkin puree, of course, pumpkin pie spice, maple syrup, and the Cadbury chocolate. Here is your full shopping list:

Cookies

  • Butter – we will brown the butter first thing, love that nutty flavor
  • Brown Sugar – because of the molasses, it actually works differently in baking. The flavor is warmer, yes, but more importantly it is slightly acidic so the cookies will be moist and chewy versus straight white sugar. That’s why in things like quick breads or pancakes you might see a little white sugar but rarely brown as we want a softer, fluffier texture
  • Dark Brown Sugar – has more molasses than light brown sugar and helps weigh the cookie down keeping it dense
  • Egg Yolk – including only the yolk allows the cookies to be chewy and not cake like
  • Maple Syrup – real maple syrup is ideal, the flavor and color make these cookies heaven
  • Vanilla – flavor
  • Pumpkin Puree – be sure you get plain pumpkin puree and not pumpkin pie filling
  • Flour – just regular all purpose flour
  • Baking Soda – leavening agent
  • Baking Powder – leavening

The Creamiest Pumpkin Ice Cream absolutely must be made with two ingredients or it will not be thick, rich and creamy like you get from a fancy store.

The Creamiest Pumpkin Ice Cream

Have you ever had the creamiest milk shake and once you have had it you can never settle for just any milkshake again? That’s what happened to me. 

Cade and I took our little girl out for her very first milkshake.

I believe she chose bubblegum. 

I cannot ever decide which is worse, cotton candy ice cream or bubblegum. 

Either way, I went for a pumpkin ice cream shake because it was October and that just felt so darn right.
