Apple Crisp Ice Cream, the name alone sounds pretty amazing, doesn’t it? 

That’s before I tell you that this ice cream is made with the creamiest of homemade vanilla ice creams, then completely loaded with bits of cinnamon sweet baked apples, and crunchy streusel topping.

There is nothing about this ice cream that I did not love. (Except perhaps the fact that I ate way too much of it.)

The idea for this ice cream popped into my mind a few weeks ago. I tried a couple of different versions using the same ingredients, but not with a real apple crisp. They lacked the authentic apple crisp flavor I wanted.

Apple Crisp Ice Cream

I finally caved and decided to bake an actual apple crisp just for the ice cream. As soon as my apple crisp finished cooling last week, I was chopping it into bits and folding it into this ice cream.

I don’t know when I’ve been more excited about an ice cream recipe. (Spoiler alert – that excitement was fully justified.)

This creamy, rich blueberry ice cream is filled with chunks of dark chocolate that will melt in your mouth. Oh, my friends, make this. You won’t regret it – and I’m willing to bet that you’ll fall in love with it at first bite. I know I did.

This creamy blueberry ice cream with dark chocolate chunks has been my weakness for the past couple of years. I haven’t been keeping it a secret from you, but up until recently, I haven’t had the recipe. I’m beyond excited to finally be sharing it with you.

When I tell you that this ice cream is absolutely divine, you can take that to the bank. I first tried this ice cream at Rusconi’s American Kitchen when we lived in Arizona.

Rusconi’s has been my favorite date night restaurant, girls’ night restaurant, happy hour, and special occasion destination for a while now – and I still make a reservation for dinner there every single time I’m back in the valley.

The selection of ice cream on their dessert menu varies according to what the chef has made that day and I always cross my fingers that this flavor will be available when we’re there.

Blueberry Ice Cream

The first time we heard about this ice cream, the couple sitting at the table next to us was asking the waiter if there was any blueberry ice cream available. They ordered a pint to take home and then leaned over to us and told us about it.

They grinned at us as they apologized for taking the last of it home with them and told us that we simply had to try it the next time we were at Rusconi’s.

You can bet that this ice cream lover ordered a scoop of blueberry ice cream to try the next time we ate there. I may have sighed with happiness at the first bite, and the second bite, and every bite down to the very last bite.

From then on, this ice cream has been my favorite ending to every meal at Rusconi’s and I am disappointed when it is not available.

Lemon Sorbet

My sister and I often talk about that “unforgettable bite.” A special meal or fancy dinner out that you remember fondly often contains a certain food or combination of flavors that simply wows you.

It never fails to impress me when a small number of ingredients are combined to create something truly amazing. I tasted a lemon sorbet for the first time while on a cruise with my sister Jenny and we found ourselves talking about it repeatedly over the next few days.

I got back home from our trip on a Saturday night and on Sunday I was in the kitchen mixing this sorbet together. I simply had to recreate it for my family.

While I typically choose a rich ice cream, a fruit cobbler, or a chewy fudge brownie for dessert, believe it or not, there are times when I crave something lighter.

Blueberry Ice Cream

If you’ve been making ice cream here with me for long, you may recall my long-time love affair with Rusconi’s blueberry chocolate ice cream. That was my introduction to the wonders of blueberry ice creams and gelatos.

I’m grateful to Chef Michael for sharing his recipe with me when we were preparing to move to Ohio. Because once I made my own batch of Blueberry Chocolate Chunk Ice Cream at home, there was no turning back. Blueberry ice creams make regular appearances in our freezer now.

When I’m craving the restaurant’s ice cream and have never time nor motivation to make that custard base, this Blueberries and Cream Ice Cream has become a go-to. With no stovetop time at all and just a blender to whir it all together, you can have that one ready to churn in just minutes.
