This cobbler captures the essence of the best of summer produce under a puffy, tender, sweet cobbler crust. Peaches and blueberries are delightful on their own, but combined, they’re even greater than the already appreciable sum of their parts.

Bluebell makes a strawberry lemonade ice cream that has a strawberry ice cream base with a lemonade sherbet swirl. And while it was tasty, I wanted something a little bit different; something with more oomph.

I wanted to play up the lemon, so I decided to work with a lemon ice cream base (because I already love that one so much!) and then swirl it generously with a strawberry sauce.

Apple Crisp Ice Cream, the name alone sounds pretty amazing, doesn’t it? 

That’s before I tell you that this ice cream is made with the creamiest of homemade vanilla ice creams, then completely loaded with bits of cinnamon sweet baked apples, and crunchy streusel topping.

The idea for this ice cream popped into my mind a few weeks ago. I tried a couple of different versions using the same ingredients, but not with a real apple crisp. They lacked the authentic apple crisp flavor I wanted.
