Homemade Rocky Road Ice Cream

Did you know that Rocky Road was one of the first ice cream flavors that mixed in additional ingredients? I’m so glad that became a thing because I am hooked on fully loaded ice creams.

Rocky Road has been one of my top 5 favorite ice cream flavors ever since I was a kid. Although, that may not be saying much because I also adored gumball ice cream and the very thought of it now makes me cringe.

In all seriousness though, who doesn’t love an ice cream loaded with marshmallows? I can take or leave marshmallows in many other recipes, but in creamy chocolate? They are chewy sweet perfection.

Several years ago, a sweet friend of mine requested a Flourless Chocolate Cake for her birthday. I’d never heard of it before, but she told me that she had fallen in love with it at a restaurant once and wondered if I could make her one.

I found a number of different recipes and I tried a couple of them. Then I made this one and it took my breath away. This cake delivers the most intense chocolate flavor you can possibly imagine.

Flourless Chocolate Cake

I’ve made this cake many times over the past 10+ years and every time this is served, the room goes silent. There isn’t a better compliment than knowing that your guests are reveling so happily in what you’ve served them that no one is talking while they eat it.

And when the plates are empty? Oh my, the raves over this cake are always over the top. It’s a timeless recipe for a good reason.

Nutella Ice Cream is what happens when I’m craving something sweet, standing in front of the pantry, and my eyes light on the jar of Nutella that my kids haven’t yet discovered.

Lucky for all of us ice cream addicts, there’s always plenty of heavy cream and milk on hand for when the need strikes. With little more than a few minutes of whisking, I had this ice cream base cooling in the fridge while I dreamed up how I would finish it after it churned.

Nutella Ice Cream

Inspired by the peanut butter ice cream topping and the magic shell that we’ve been making on repeat for years now, I swirled a variation of Nutella magic shell into this ice cream. While that is not technically required, I highly recommend it.

And while we’re on the subject of “not required, but oh-so-dang-good,” I warmed up the last of our peanut butter ice cream topping and swirled it into a second batch of this Nutella Ice Cream along with the Nutella swirl. I handed a spoon and the container of ice cream to a friend last week and her reaction was absolutely priceless.

I believe her words were something along the lines of, “What in the name of holy ice cream magic is this?!” Yeah, it’s magic. And I’m willing to bet you’ll think so too.

Dark Chocolate Ice Cream

While my sweet tooth has mellowed quite a bit over the past few years, I still enjoy a piece or two of dark chocolate most days – just a bite or two goes a long way to satisfy a chocolate craving.

Dark chocolate can be a bit of an acquired taste, depending on just how dark the chocolate happens to be. And two of my kids gravitate to milk chocolate over dark. (Where did I go wrong??) They’d never reach for super dark or bittersweet chocolate on their own.

That said, I’m thrilled to tell you that this dark chocolate ice cream received rave reviews from everyone in the family. The sweet cream balances the dark chocolates excellently.

Dark Chocolate Desserts

Dark chocolate has long been my preference for baking. These Dark Chocolate Toffee Cookies are crispy, chewy cookies with a deep chocolate flavor, toffee crunch, and gooey chips.

Dark chocolate brownies are a dessert I make at least once a month – scoop some of this ice cream over them for a sundae that might make you swoon. Classic blondies are made even better with generous handfuls of chopped walnuts and dark chocolate chips.

The combination of cocoa powder and melted dark chocolate chips in this ice cream creates a deeply rich chocolate flavor. The result is quite possibly the richest chocolate ice cream I have ever made.

As the percentage of cacao increases, the chocolate becomes darker and more bitter. If you’re a die-hard fan of dark chocolate, opt for chocolate with a higher cacao percentage. In my experience making ice cream, I’ve discovered that the sweet spot for dark chocolate is usually around 60% cacao.

This strikes the desired balance between sweetness and bitterness, without veering anywhere near the overwhelming sweetness of milk chocolate. However, if you desire an even more intense and robust chocolate flavor, go for 85% cacao.

No-bake cookies have met their match with these no bake chocolate peanut butter bars. It doesn’t get much easier than just stirring everything together and pouring it into a pan.

Before I tell you more about these amazing homemade candy bars, I’d better confess that no-bake cookies and I have a bit of a love/hate relationship.

I love how easy no bake cookies are to make; I hate how unattractive they tend to be. I love how rich the chocolate and peanut flavors can be; I hate the raw oatmeal that frequently overwhelms the cookies.

(That whole raw oatmeal situation is balanced with the addition of coconut in these no bake chocolate coconut cookies or bars or bites… whatever you call them, the coconut changes the texture (and improves it!) in the best way possible.)

When I ran across these no-bake bars, (a.k.a. “the best recipe I’ve ever messed up“) I couldn’t believe I’d never thought to try making the cookies into bars. At least they would look better, right?

I’m going to be flat-out honest here and tell you my thinking when I started making these treats. (My friend Donna can attest to it because we were talking on the phone at the time.)

I thought, “I’ll make these because the kids will love having a dessert over the weekend and I won’t be tempted to eat more than one.”
