This creamy blueberry ice cream with dark chocolate chunks has been my weakness for the past couple of years. I haven’t been keeping it a secret from you, but up until recently, I haven’t had the recipe. I’m beyond excited to finally be sharing it with you.

When I tell you that this ice cream is absolutely divine, you can take that to the bank. I first tried this ice cream at Rusconi’s American Kitchen when we lived in Arizona.

Rusconi’s has been my favorite date night restaurant, girls’ night restaurant, happy hour, and special occasion destination for a while now – and I still make a reservation for dinner there every single time I’m back in the valley.

The selection of ice cream on their dessert menu varies according to what the chef has made that day and I always cross my fingers that this flavor will be available when we’re there.

Blueberry Ice Cream

The first time we heard about this ice cream, the couple sitting at the table next to us was asking the waiter if there was any blueberry ice cream available. They ordered a pint to take home and then leaned over to us and told us about it.

They grinned at us as they apologized for taking the last of it home with them and told us that we simply had to try it the next time we were at Rusconi’s.

You can bet that this ice cream lover ordered a scoop of blueberry ice cream to try the next time we ate there. I may have sighed with happiness at the first bite, and the second bite, and every bite down to the very last bite.

From then on, this ice cream has been my favorite ending to every meal at Rusconi’s and I am disappointed when it is not available.

I have made this recipe more times than I can count, over the years. They’re perfect for potlucks and gift-giving. And, I get asked all the time how they are so soft and chewy.

The not-so-secret ingredient is instant pudding mix. It’s that simple. In addition to their incredible chewy texture, these cookies freeze beautifully, making them especially easy to have ready to go when you need them.

And, I happen to know that both the cookies and the dough taste awesome straight out of the freezer. Yes, I did admit that. I often bake about half of the batch and freeze the remaining cookie dough.

When I am ready to use the frozen dough, I set it on the counter for 20-30 minutes to thaw slightly and then scoop out the number of cookies I want to bake.

Philadelphia Style Ice Cream

Did you know that Philadelphia style ice cream is simply ice cream made with no eggs? I have tried some impressively rich ice creams (made with eggs) over the years.

However, we are not used to ice creams that rich, so they are not frequently made in my home. Besides, I’ll be honest, I like to make things simpler and not more complicated in the kitchen wherever possible.

I’ve made this recipe both cooked and uncooked. If you are really in a rush, you can simply stir everything together cold and pour it into the machine. But, simmering just long enough to dissolve the sugar and then cooling it again truly makes it even better. So, that is how I usually make it.

Stir, Simmer, Stir, Chill and Freeze; less than 10 minutes of actual prep time. If I put the mixture together in the morning, and then freeze it in the afternoon, we are easily having Philadelphia ice cream for dessert the same evening.

Lemon Sorbet

My sister and I often talk about that “unforgettable bite.” A special meal or fancy dinner out that you remember fondly often contains a certain food or combination of flavors that simply wows you.

It never fails to impress me when a small number of ingredients are combined to create something truly amazing. I tasted a lemon sorbet for the first time while on a cruise with my sister Jenny and we found ourselves talking about it repeatedly over the next few days.

I got back home from our trip on a Saturday night and on Sunday I was in the kitchen mixing this sorbet together. I simply had to recreate it for my family.
