Beef Pot Pie

Isn’t pot pie just the epitome of cozy comfort food? Rich, savory gravy hugging every chunk of meat, nestled beneath a flaky crust. The vegetables are wonderful, too, but that’s not why I’m making this easy beef pot pie recipe.

The boys at my table don’t think about the vegetables too much when it comes to beef pot pies. They want steak in their pot pie nearly as much as they want it in their chili. It makes the meal, let me tell you.

Ground Beef Pot Pie

This recipe uses steak, but you could easily swap it out and make a ground beef pot pie. The flavors would be very similar.

That said, I highly recommend making it as written with steak. The texture of tender steak that has been properly seared is something incredible to experience in a pot pie.

The first time I tasted this soup, I’d arrived at my aunt and uncle’s house in Arizona around 8pm, after a long flight. I wasn’t especially hungry, but the kitchen smelled so good that I couldn’t resist a bowl of the warm soup that was waiting on the stove.

We sat down to eat and I simply grinned at the first bite. This soup adds up to a whole lot of delicious flavors that are much more than the sum of its parts. It turns out that this was one of my Grandmother’s recipes and I’m thrilled to be sharing it with you now.

Over the past few months, this soup has become a family favorite for my husband and kids, as well as for the friends we’ve shared it with. I hope that you will enjoy it as much as we do!

Creamy Vegetable Soup

It’s honestly kind of rare for dinner at my house to be completely vegetarian. My boys love meatier fare. But, this soup was very well received. It’s hearty even without the inclusion of any meat.

Still, if you want to make it with meat, you could easily add chicken to the recipe. Or, bacon. Definitely bacon. Actually, I may have to make this creamy soup again with bacon just at the thought of it.

There is a reason that Waldorf salad has retained its popularity for over a hundred years. Adding chicken to the classic salad and turning it into a heartier meal, makes it a guaranteed win.

Give it a go and you’ll likely find yourself like me, making it on repeat for two weeks. It’s perfect for a quick lunch or picnic, or make a big bowl for your next potluck.

What is a Waldorf Salad?

The Waldorf salad originated in New York City, specifically at the Waldorf Hotel, which eventually became the Waldorf Astoria Hotel. It was created by the hotel’s maître d, Oscar Tschirky in the late 1800s, using just celery and apples.

Over time, the recipe evolved to include nuts, grapes, and various proteins. This chicken Waldorf salad recipe was inspired by my friend Gina’s Tuna Waldorf Salad. I used canned chicken, but you can use a rotisserie chicken, too.

For what it is worth, I have made this with both types of chicken and it turns out that I prefer it with canned chicken. (Making it about as easy as can be!)

Shrimp Boil

This is a classic shrimp boil with fresh shrimp, potatoes, corn, and sausage, boiled in a flavorful spicy broth, plus an abundance of additional fresh vegetables!

This stovetop shrimp boil is based on my cousin Rick’s crawfish boil recipe which also includes an abundance of vegetables. The vegetables turn out so flavorful, that I’m often left wishing I’d added even more to the pot.

Shrimp Boil on the Stove

I was determined to recreate our Louisiana crawfish boil as soon as we were home again, but guess what? Crawfish are a bit difficult to source in Ohio. Just in case you were wondering.

I’m happy to tell you that after learning from Rick, our family’s crawfish expert, my first attempt at a Louisiana shrimp boil on the stove turned out fabulously and we will be doing this on repeat in the future.

It turns out that a seafood boil is a heck of an awesome experience for everyone – expert or amateur!
