Just 8 days before moving to a new city I decided to throw together a quick and easy chicken recipe for dinner that I honestly wasn’t even thinking about what I was doing. I was just trying to finish off things in the fridge, freezer and pantry as that’s always how I move- stop buying food and eat through as much as possible so I have less packing. 

Which means I created a killer chicken dinner recipe

That’s always how it goes, when I’m not thinking and just playing in the kitchen the best recipes emerge. 

Thankfully I had enough thought after hearing Cade say for the 500th time that night, “THIS CHICKEN JUST MELTS IN MY MOUTH! It’s awesome!!!” to pause what I was doing and write it all down in my phone. 

This week I finally busted out the recipe and made magic happen again and I stand by this recipe until the end of time, it’s just that good!

Yes! I just called a “casserole” irresistible and I stand by that. If you love mashed potatoes, chicken, and broccoli, not to mention bacon and cheese, you need to try this recipe! (although, technically, my boys don’t love broccoli and they LOVE this casserole, so….)

This recipe is one of many great ones in my friend Trish‘s cookbook, 100 Creative Ways To Use Rotisserie Chicken. In case you can’t tell from the title, she has literally written the book on ways to cook with rotisserie chicken.

Her book really should be sold next to the rotisserie chicken display in every grocery store. I love how many great ideas she’s packed into this cookbook.

Chicken Potato Broccoli Casserole

This recipe will work well with rotisserie chicken, leftover roasted chicken, or with any cooked leftover chicken.

Monterey Jack, Cheddar, or a Mexican blend shredded cheese will also work with this recipe. I typically use a Mexican blend shredded cheese because I almost always have it on hand and it works great.

This easy-as-can-be Sheet Pan Chicken Thighs with Potatoes and Green Beans has become a favorite in many of your homes over the past two years.

This is such an easy dinner recipe and my family continues to make it at least once a month. It only takes about 5 minutes of effort to toss the chicken, potatoes, and green beans in a simple lemon and herb vinaigrette before roasting until tender and crisp.

Sheet Pan Chicken Thighs and Potatoes

Whoever invented the sheet pan really should be given a medal. I use my half-size sheet pans at least once, if not multiple times a day. Sheet pan dinners are one of my favorite ways to use them.

All other baked chicken aside, this recipe for sheet pan chicken thighs and potatoes is probably going to remain my favorite for a long time.

It takes less than 5 minutes to pull this entire chicken dinner together and get it into the oven. Just scatter the chicken, green beans, and potatoes across the baking sheet. Drizzle with the lemon vinaigrette and bake until done.

The chicken will be crispy, the potatoes with be tender, and the green beans will be cooked to perfection every single time. Every bite will be flavorful and this whole meal is certain to make you smile.

Crisp tortillas filled with saucy bbq chicken and melting cheese add up to these BBQ Chicken Quesadillas. They are a little bit spicy, awesomely cheesy, and they are a very popular lunch in our house.

BBQ Chicken Quesadilla

I am fairly certain that some of the most delicious dishes come from staring into the refrigerator looking for inspiration from leftovers. This was a very successful lunch quickly put together using leftovers from the refrigerator.

This isn’t a complicated meal at all, but it sure was delicious! I’m planning to BBQ some chicken this week, just to have it in the fridge for a couple of easy lunch quesadillas and enchiladas.

Quesadillas are a meal or a snack that once kids can safely use the stove, they can be taught to make. When teaching my boys I started with the skillet on fairly low, basically, let the cheese melt then I would turn up the heat to get it crispy.

I would also suggest a big spatula like my favorite one. A larger spatula makes flipping so much easier without the insides coming out everywhere. A fish spatula does the trick as well.

A recipe really isn’t necessary for quesadillas but it is helpful to have a short guide and inspire new flavor combinations. While there isn’t much traditional about this quesadilla one thing is for certain, be sure to go for a creamy cheese melt.

Combining mozzarella with cheddar or Colby jack gives a creamy melt with a bit of sharpness. And don’t forget to “spill” a little in the pan, those melty cheesy crispy bits are the cook’s snack!

How do you cut your quesadillas? Sometimes I use a big chef’s knife to cut them in one swoop. But I have found that a pizza cutter is even easier and a bit safer for kids too if they are the ones doing the cooking.

If I can turn a dish into something eaten on a tortilla chip I am totally in! Chips and dips get to the core of this savory girl every time. Not to mention, whenever you can turn a snack into a meal, everyone is ready to dive in.

Dippable and snackable is how my family would describe chicken enchilada dip. With all the flavors of my homemade enchiladas without the filling and rolling mess, anyone can make this enchilada dip.

Enchiladas find their way to our table quite regularly we eat them with a fork, scooped up on tortilla chips or rolled and stuffed into burritos. I make them with beef, or chicken, or vegetables. We’ve even been known to eat enchiladas for breakfast.

This dip makes traditional enchiladas even easier to scoop up on tortilla chips; the kids and my husband were raving about this appetizer for a couple of days. Hearty enough for a main dish, this was an enormous success for our family movie night.

Start by sauteeing your onions, bell pepper, and seasonings in a skillet. While your onions are cooking cut up the tortillas into small pieces so that you can add them to the onion mixture.
