Crisp warm tortillas filled with chicken, bell peppers, and plenty of melting cheese are a terrific dinner or an excellent way to use up just a bit of leftovers. Who would turn down a piping hot chicken fajita quesadilla for lunch? (Not me!)

Fajita Quesadilla

My sister taught me how to make absolutely irresistible quesadillas many years ago and ever since then, they’ve been a regular breakfast, lunch, and dinner option in our home.

Quesadilla fillings are endlessly fun to play with and we’re really loving these fajita quesadillas lately. Grilled bell peppers or roasted peppers and onions are excellent in quesadillas.

But, if you don’t happen to have these on hand already, it will only take a few minutes to toss the peppers and onions in a hot skillet and saute them.

Add some beef, chicken, pork, or shrimp and you’ll quickly be holding a fajita quesadilla that will put anything you can order in a restaurant to shame.

What are fajitas?

Fajitas are a Tex-Mex dish, typically centered around thinly sliced grilled meats served with bell peppers and onions on a tortilla. While traditionally, everything is grilled, there are endless ways to combine meats and vegetables for quick and easy fajita dinners at home.

We are long-time fans of fajitas and we’ve been making these chicken fajitas for over 12 years now. (And yes, it’s desperately in need of new photos.)

Quick and Easy Cashew Chicken

I have no idea why this is, but Christmas always makes me crave Japanese and Chinese food. Yup, not an Asian ancestor in me, but the holidays, a time when we reflect on family and make family favorite recipes, always makes me want Chinese food like our crispy honey chicken. I have never had cashew chicken at home until now, and I’m sure there are gobs and gobs of recipes out there, but this one is our personal favorite, especially because it’s quick and easy. For real.

I adore cooking, but there’s nothing I love more than a delicious dinner that took no time at all to clean up and then busting out our pajamas and relaxing. It’s my favorite time of day. I love sending everyone upstairs to hop into pajamas.

Especially during the winter because it means I can really get cozy and warm. I have the worst circulation and unless one of you know of some secret way to fix that I depend on layers all winter long. In fact, even during the summer you’ll always catch me in slippers or socks because my feet are freezing. I can’t be the only one, don’t any of you love getting into your pajamas and snuggling up?

Cashew Chicken Ingredients

3 Ingredient Easy and BEST Grilled Chicken Marinade

Want the juiciest chicken recipe ever?? Then you’ve got to make this 3 ingredient chicken marinade. It’s the most simple combination of garlic and herbs, a hint of buttery-melt-in-your-mouth flavor and then that pop of the champagne vinegar. Which is a must if you haven’t ever tried using different vinegars.

Last summer we were crazy busy trying to move and I needed some fast and easy dinner recipes. On a whim I bought a bottle of Champagne vinegar and whipped up a lazy, 3 ingredient chicken marinade that ended up being the best chicken marinade EVER. In fact, I even caught a short little video of the process so scroll down and check out a blast from the past in our old house.

So right now it’s September 2022, and I’m sitting at the counter of the rental house we finally found after the most insane summer. Did you follow that story? Talk about stressful chaos! Chicken Marinade Ingredients

You can’t get any more simple than just 3 ingredients for the most delicious chicken marinade! This is all you will need:

  • Olive Oil – the base of the marinade and helps the chicken stay moist and juicy
  • Champagne Vinegar – this can be hard to find sometimes, but it really is the best flavor for this marinade
  • Kinder’s Buttery Steakhouse Seasoning – we buy ours at Costco, but I’ve seen it at Walmart and Smith’s, and of course there is always Amazon

How to Make a Grilled Chicken Marinade?

I like to throw all three of the ingredients into a shallow baking dish and to whisk it all together. Then place the chicken breasts into the marinade and give them a flip to coat both sides. Then let it marinade in the fridge.

You can also use a ziploc bag to marinate the chicken. Just whisk all the ingredients together in a glass measuring cup and pour the marinade over the chicken in the bag and let it sit in the fridge until you’re ready to grill.

Can Other Types of Vinegar Be Used?

The best substitute for champagne vinegar is Asian rice vinegar. White wine vinegar or sherry vinegar are also good substitutes.

Red wine or apple cider vinegar are ok substitutes but they are less sweet and pack bolder tangy vinegar flavor.

Can Other Cuts of Chicken Be Used?

You can absolutely use this marinade on chicken thighs, wings, or drumsticks.

How to Make Chicken Stir-Fry

We almost always have avocados in the house these days, because I buy as many as possible every time they’re on sale. I do my best to use them before they are overly ripe, but occasionally we wind up with several ripe avocados that need to be used asap.

When I made this avocado chicken salad recipe for the first time, we couldn’t believe how great it turned out! Everyone in my family opted to eat their chicken salad in a different way, so we can vouch that it’s delicious however you consume it.

My boys enjoyed theirs on top of toasted slices of sourdough bread. I ate mine with a handful of multi-grain crackers and Sean opted for eating it lettuce wrap style.

This would also be tasty in a wrap or on top of a garden salad. The last time I made this chicken salad, we ate it layered in between a couple of slices of bread for more traditional chicken salad sandwiches.
