I’ve been making this pasta for company, for myself, for family and friends for almost 25 years now. This is the first recipe I think of when I am craving pasta.

My husband enjoys this with some grilled chicken added to it, but I’m quite happy with this pasta alone most of the time.

When we were first married, I often made this pasta just for myself on weekends when Sean was out of town.

Lemon, butter, and garlic are an awesome combination in pretty much any recipe, aren’t they? They truly shine in this sauce along with the mushrooms and tomatoes.

This lemony sauce coats the thin angel hair pasta perfectly and it’s a terrific match for Last Minute Chicken or Crispy Oven Baked Chicken. Chicken is my go-to option with this pasta.

However, Garlic Butter Steak Bites or Pine Nut Crusted Halibut are a couple more delicious ways to serve this meal.

I’ve been making different variations of our crispy pan-fried chicken and crispy oven-baked chicken for the past few years and it just doesn’t get old. From Crispy Oven Baked Ranch Chicken to Crunchy Baked Chicken, I especially love this method for baking chicken in the oven.

If you think you can only get your chicken thighs crispy by frying them on the stove, you’ll be surprised by this recipe. There’s no standing over a stove frying each chicken thigh one at a time. Best of all, you don’t have to worry about any splashing oil!

Baked Italian chicken is juicy, tender and full of flavor from the Italian herbs, while the skin is just as crispy as your favorite pan fried chicken.

Don’t let the fact that this recipe is so easy to make fool you; this dish is packed with flavor. Chicken stock (or broth) gives the rice a hearty, rich boost; paired with a handful of herbs, this rice is going to take your weeknight dinner to the next level.

One quick note about the herbs used in this recipe: you can use fresh or dried herbs in this recipe (or both!).

When using dried herbs, add them to the saucepan as soon as you start cooking the rice. When using fresh herbs, wait until after the rice has been removed from the heat before stirring them in. Waiting until the end to add the herbs makes a big difference with fresh herbs.

Oh, and don’t make the same mistake I made when I first made this recipe.
