Affogato

As a bona fide, lifelong lover of homemade ice cream, Affogato is an absolute dream come true. It’s the perfect blend of hot and cold, as the warm espresso meets cool ice cream.

Because the ingredients are not mixed or blended, you end up with a wonderful range of colors, textures, flavors, and temperatures in this recipe. Eating it is such a treat, because each bite is a slightly different experience.

What is an Affogato?

If you’re wondering “What is an affogato?”, it’s really quite simple. Affogato is simply a shot of espresso poured of a scoop of gelato or ice cream. That’s it. No stirring required, just start eating.

The hot and bitter espresso is cooled and sweetened by the ice cream, while the freezing cold ice cream is softened and warmed by the espresso. Together, they become something more, something magical.

We love pasta salads as the weather warms up. There aren’t many things that beat having a meal ready-to-go in the fridge on a hot summer night.

Part of that is the fact that we lived in Phoenix for so many years. When it’s 108 degrees outside and muggy from a thunderstorm, you learn to eat as light as possible. And, you keep the oven off as much as possible.

No Mayo Pasta Salad

This recipe is great for a summertime gathering because it is simple to make, loaded with flavor, and you don’t have to worry about it sitting in the sun. No mayo is perfect for a potluck pasta salad.

And the best part? This recipe scales easily, making it a great dish to prep in bulk for future meals. My kids love it anytime there is extra rice on hand.

We add it to burrito bowls, stir fry dinners, or toss it with a bit of leftover grilled chicken or taco meat. There really is no wrong way to use leftover rice.

Don’t let the fact that this recipe is so easy to make fool you; this dish is packed with flavor. Chicken stock (or broth) gives the rice a hearty, rich boost; paired with a handful of herbs, this rice is going to take your weeknight dinner to the next level.

One quick note about the herbs used in this recipe: you can use fresh or dried herbs in this recipe (or both!).

When using dried herbs, add them to the saucepan as soon as you start cooking the rice. When using fresh herbs, wait until after the rice has been removed from the heat before stirring them in. Waiting until the end to add the herbs makes a big difference with fresh herbs.

Oh, and don’t make the same mistake I made when I first made this recipe.

This recipe was a spur-of-the-moment dinner years ago that turned out deliciously. While looking through the refrigerator for inspiration one night, I paused at a package of egg roll wrappers.

That was when I discovered that egg roll wrappers are technically a form of pasta. Did you already know that? Well, one thought led to another and I decided to try an Italian Eggroll combination.

I serve these Italian Eggrolls with 5 Minute Marinara Sauce on the side for dipping and they disappear FAST every time we make them.

The kids, my husband, and I absolutely devoured these eggrolls the first time I made them. My youngest son ate three of them! (The photo at the bottom of this post still makes me grin. I can hardly believe it’s been 11 years since my baby was that small!)

Italian Dressing Marinade for Chicken

This dressing is fabulous on salads. And, it is also makes an awesome marinade for chicken, too. You don’t need to change a thing. Just shake it together, pour it over the chicken, and let it marinate.

You can use this zesty Italian dressing recipe on a pasta salad, too. Just add enough dressing to make it shiny when you toss it. The pasta doesn’t need to swim in it. Give it a bit of time to rest in the fridge and the flavors will mingle beautifully.

Is Italian Dressing Gluten Free?

For those of you with gluten concerns, I’ve got good news! While most big brands may contain gluten, this recipe makes a 100% gluten-free Italian salad dressing. And, it tastes better than anything you’ll find on store shelves.

This simple Italian dressing works just as well with gluten-free noodles. Or, give Zucchini Noodles a try for a refreshing twist in your favorite pasta salad.
