I’ve been ordering beef and broccoli for years and was pretty confident I could make my own version that would be every bit as good or better than my favorite takeout joint.

I’ve made several different versions of this beef and broccoli stir-fry over the past few years and combined a few I liked to make this version. The meal was an instant hit with my whole family and has become our favorite easy dinners over the past 10+ years.

With the zing of fresh ginger and plenty of garlic, the stir-fry sauce pairs so well with tender strips of beef and crisp broccoli. The broccoli is cooked until tender, without becoming even a little bit mushy.

Next time you get a craving for Chinese food, skip the take-out order and make this instead. It’s just as quick as ordering delivery and tastes even better.

Beef and Broccoli Stir-Fry

Both flank and sirloin steak work equally well in this beef and broccoli stir-fry. Sliced into ultra-thin strips, the beef winds up amazingly tender and full of flavor from the sauce.

I’ve found some stir-fry recipes everything ends up getting overcooked and mushy from the sauce. That is NOT the case here! The broccoli stayed slightly crisp with a nice bite while the meat has a browned exterior and juicy inside.

Spinach Salad with Cranberries

The recipe was inspired by the Cranberry Orzo Salad that Princess Cruises serves in their International Cafe. It’s just so good! Tender pasta in a sweetly tangy dressing, with tart fresh cranberries and sliced almonds. Simple, fresh, and delicious.

I’ve included more cruise details at the bottom of the post here for anyone who is interested. As soon as I got home from our cruise through the British Isles, I immediately recreated the salad for my family.

As always, I loved the salad, but my guys? The kids decided that the fresh cranberries were too tart. (Crazy kids!)

So, the next time I made the salad, I went with dried cranberries and it was a win across the board. I like this salad every bit as much with dried cranberries as I do with fresh cranberries – and that’s an even bigger win, since fresh cranberries aren’t available more than a few weeks a year.

(And unless you’re lucky enough to have cranberries stashed in the freezer for this cake, you’ll be stuck waiting until the holidays to try this awesome salad.)

I love the comforting familiarity of meatloaf. That said, it doesn’t have a reputation for being the most exciting of dinners. This meatloaf with bbq sauce is anything but boring.

You only need a handful of ingredients to make this bacon meatloaf and the result is every bit as delicious as the more complicated traditional recipes.

Oh! And guess what? I have also made this with pre-cooked and crumbled bacon and it works beautifully that way.

BBQ Meatloaf

Once you assemble the ingredients, this BBQ meatloaf recipe takes hardly any time to prepare and most of the cooking time is hands-off. The barbecue sauce provides terrific flavor for the glaze and it is something I always have on hand – making it a very simple meal to pull together.

We are big fans of meatloaf here and this barbecue sauce glazed meatloaf is a new favorite. I first tried a bbq sauce glaze on meatloaf with this very simple five ingredient meatloaf recipe.

That recipe quickly became a go-to super fast meal to pull together, but I’ll tell you now that adding just a few more spices and seasonings takes it to a whole new level. And bacon, let’s not forget the smoky awesomeness that a handful (or three) of chopped bacon delivers.

Chili Garlic Shrimp

My family tends to crowd the stove while this is cooking and we’ve been known to burn our fingers with impatience to eat the shrimp out of the hot pan.

My youngest two boys will eat an entire pound of this shrimp between them, given the opportunity, and they’ve both chosen this as one of their favorite recipes.

Served in tacos, over rice, or tossed into this creamy chipotle pasta, this shrimp is a hit however you make or serve it.

Chili Lime Shrimp

The shrimp can be cooked in a skillet or on the grill, with just enough sugar sprinkled over it to caramelize the outside of each shrimp as it finishes cooking. It is finger-licking good straight out of the pan.

This recipe is very lightly adapted from the chili garlic shrimp recipe in my first cookbook and we’ve been making it for years now. However, I really enjoy the additional flavor that a bit of lime juice contributes to this recipe.
