Easy Dinners

I remember as a kid my mom would occasionally bust out a very easy dinner, which looking back now I know that meant she was probably exhausted from being our mom, but back then I thought she was just being awesome. Easy dinners would range from sausage links and Grandma’s Czech fried potatoes (you MUST make them), or baked bbq chicken to things as easy as hot dogs and mac n cheese in that big silver pot, chicken nuggets or even fruit and toast. You see, fruit and toast was actually a favorite Saturday night dinner at our house growing up. Our family had 5 kids, 2 bunnies, a cat, and later a dog. Which is hilarious if you know me now. Anyway, Mom would be so busy and by the time Saturday hit dinner was the last thing she wanted to worry about.

All summer she had worked hard to bottle (can) fruit for us and we loved busting out a can of raspberries and some hot, buttered toast. Now that I’m the mom I’ve tried to do the same, but Cade will not have it. “Fruit and a piece of toast is not dinner. I’ll be starving!” has been heard coming from Cade’s mouth. He would much rather go out to eat, but I grew up in a home where we NEVER went out to eat. Or at least rarely. So I would rather stay in.

I’ve given up on fruit and toast but I still keep things simple like baking a few chicken thighs and serving them with a side of fruit or fresh cut veggies, which Cade does because heaven knows that’s just far too much work for a Saturday. Am I right?

Ingredients for Baked Chicken Thighs

  • Chicken Thighs: boneless, skinless
  • Olive Oil: helps stick the dry rub to the chicken and keeps the chicken from sticking to the pan
  • Dry Rub: Kosher Salt, Smoked Paprika, Ground Mustard, Garlic Powder, Onion Powder, Ground Cumin, Italian Seasoning
  • Red Onion: adds a little pop of flavor and texture

Foil Baked Mustard Maple Bacon Salmon

My friend Megan swears by her dad’s salmon and bacon. I only like salmon when it’s got enough flavor to mask the fact that it’s actually fish. Bacon to the rescue! Everything is better with bacon!

My friend Janet makes a good one, and I love a few of our own recipes like our Salmon Bowls and Asian Sticky Salmon, but when Megan said there was bacon in her dad’s recipe, I was so intrigued!

If you have been an OSB follower for long, you will know that I am not a seafood person. It’s just not my thing. Even salmon…I have been trying to love salmon for years, and I have to say that this baked maple mustard salmon has won me over!

Grab four sheets of foil that are big enough to wrap each of your fillets in and lay 2 slices of bacon vertically on each piece of foil.

How to Pick Good Fresh Salmon

Buying salmon at the grocery store can be intimidating, but it doesn’t need to be! There are a few things to look for…

  • Smell – good fresh salmon should not have a fishy smell
  • Color – vibrant, deep shades of red/coral/pink is what you are after and there shouldn’t be any brown spots anywhere on the fillet
  • Appearance – it should look moist and not dried out
  • Touch – when you gently press the salmon, it should bounce back and not leave an indentation

What Do I Need to Make This Baked Salmon Recipe?

All the ingredients are easy to find and create the most amazing flavor. Here is what you will need:

  • Salmon Fillets
  • Lemon
  • Kosher Salt
  • Pepper
  • Olive Oil Mayonnaise
  • Maple Syrup: Grade A
  • Garlic
  • Dijon Mustard
  • Yellow Onion
  • Bacon
  • Thyme: or parsley

How to Make Baked Maple Salmon

  1. Prep: Preheat the oven, get foil pieces ready and place the bacon on each piece of foil. Season the salmon fillets.
  2. Sauce: Whisk all the ingredients of the sauce together and pour the sauce on each fillet.
  3. Assemble: Top the fillets with the onions and wrap the bacon around the fillets. Fold the foil around each piece of salmon.
  4. Bake: Place the sheet pan in the oven and bake, then open the foil and change the oven to broil to crisp up the top for about a minute.
  5. Season: Sprinkle each fillet with fresh herbs and serve!

I like to make the crema before I start doing anything with the avocados or the grill. The flavors meld together if you let it set for a few minutes so the flavor is more bold and fabulous. Our favorite brand of crema is Cacique!

How This Recipe Came to Be

I once had a roommate who made avocado tacos. At first appearance it seemed almost too easy to me, but then she let me try one. And try it I did, over and over, and over again. They were delicious, light, easy and surprisingly flavorful. And then I got married, moved out and totally forgot about them for a few years.

And then enters my darling friend, Lisa. Lisa is a vegetarian and although I’m all about the meat I find myself frustrated for her when people or restaurants don’t have options for vegetarians. I actually think there is no excuse for a restaurant to not have at least a couple of vegetarian options unless it’s something like a place that specializes in just meat, like J Dawgs.

I’m constantly trying my hand at vegetarian recipes ever since meeting Lisa, kind of like this Roasted Red Pepper Pasta, and then one day I remembered the avocado tacos. I’m not saying that these are the most over the top, crazy delicious dinner recipe you could make, but they really are super delicious, and perfect for both vegetarian and meat eaters at get-togethers or BBQ’s.

In fact, we eat them all the time, and if it’s lunch and we don’t want to heat up the grill we just cook the tortillas and skip grilling the avocados. It’s still delicious, I promise. And because Lisa started this new search in us, we’ve actually found that we prefer to not eat meat every single night. Our bodies seem to respond better to meat sparingly. Go figure. But I will say, meat and protein in the form of meat is still essential for us. And Lisa doesn’t mind.

All these years I’ve thought sloppy joes were the worst dinner ever, but after months of testing I’ve finally found a recipe I LOVE!

Every time I heard that we were having sloppy joes for lunch at school as a kid, I cringed.  I was never too excited for sloppy joes at home either. Not knowing what was in the sloppy joes made it harder for me to eat — it should have been called “Mystery Joes” or something along those lines.

For years, we tried new recipes and each one was getting closer and closer to me finally accepting the sloppy mess of a meal. Everyone went crazy for them at school and families we knew loved them, clearly I was missing something. 

We have finally found the best sloppy joe recipe EVER! Not just the best, but a totally crave-able recipe! It’s the perfect balance of sweet and salty and a little spicy.

Creating the Best Sloppy Joes Recipe

As a teenager, I watched Adam Sandler and Chris Farley perform “lunch lady land” on Saturday Night Live. Interestingly enough, this skit gave me a new outlook on sloppy joes, not sure why.

Well, a couple decades later this bad boy lands on my plate and a whole slew of feelings came rushing back: disgust, anxiety, unpleasant crunchy things, failure after failure of trying this recipe in the past, and almost complete despair of ever finding a Sloppy Joes recipe that actually tasted good.

Would this one be another flop? I sat down to the dinner table with that fake smile, that “thanks honey, this looks great” face on that I had nailed down over my childhood years. The smells began to hit my nostrils and to my surprise they were pleasant, smokey richness, grilled onions and peppers, almost like a bbq restaurant smell.

I began to feel a little excitement in this Mystery Joe. I went in for the first bite and it was all over from there, seconds and thirds landed on my plate and my taste buds were chest bumping each other.

What is a Sloppy Joe? 

To be clear, a sloppy joe is not a sandwich with chili piled on top. A sloppy joe is a sandwich consisting of ground beef or pork, onions, tomato sauce or ketchup, Worcestershire sauce, and other seasonings, served on a hamburger bun. 

The dish originated in the United States during the early 20th century. According to legend, a cook named Joe at Floyd Angell’s café in Sioux City, Iowa, added tomato sauce to his “loose meat” sandwiches and the “sloppy joe” sandwich was born. And the rest, as they say, is history!

Healthy Greek Turkey or Chicken Tostadas

We are stealing tostadas from Mexican cuisine and piling them high with Greek-inspired toppings for the most delicious Greek turkey or chicken tostadas!

I’ve never been to Greece, but I picture it to be perfection. I don’t eat seafood much, so that part may be difficult. I just keep picturing a beautiful, light and breezy room that looks out over the most serene water with a stunning sunset and relaxation all around. My goodness we want to visit.

I wish someone would just plan a trip for us. Tell us where to go, what to see and especially what to eat. I’m bound and determined to make it happen. It’s a dream I can’t let go of. In the meantime I’ll keep making these healthy Greek turkey tostadas with lemon tzatziki sauce.

Recommended Equipment

Before You Start…

I like to start this recipe by making the tzatziki sauce! The flavor really elevates if you make it and let it sit for an hour or so.

You’ll also want to roast the chickpeas by tossing them with some olive oil, salt and pepper, Italian seasoning and some canned grated parmesan cheese. Roast them at 425 degrees for 20-30 minutes on a baking sheet.

What is a Tostada?

A tostada is basically an open faced taco where a crunchy corn tortilla is piled high with all the typical taco toppings. In this case, we are swapping out the ground beef, cheese, lettuce, tomatoes and sour cream for ground turkey, feta, spinach, cucumbers and tzatziki.

Ingredients for Greek Tostadas

At first glance this may look like a lot of ingredients, but most of the ingredients are toppings and you can pile your tostada with as much or as little toppings as you want. Here is what you will need:

Tomato Cucumber Salsa

  • Olive Oil: combined with the vinegar, this creates a simple dressing to amp up the flavor of the cucumber and tomatoes
  • Red Wine Vinegar: combines with the oil to create the dressing
  • Cucumber: I like to use English cucumbers so I don’t have to worry about peeling or seeding them.
  • Tomatoes: you can use grape tomatoes, cherry tomatoes or dice up some roma tomatoes
  • Olives: I just diced up a few black olives, but you could definitely go more Greek and use kalamata olives you want.
  • Salt and Pepper: just adds a little flavor boost

Chicken or Turkey

  • Chicken Thighs: you can use the marinade for the chicken souvlaki if you want or just brown ground chicken thighs or ground turkey
