My entire family loves this soup, even my non-spice-loving middle son. He says it is a warm mouth feel not a screaming hot need to gulp ice water hot. That description and the immediate visual of him flailing around grabbing for water makes me grin.

I am often surprised by how a few simple ingredients with the right combination of spices can create such amazing flavors. It almost feels like magic. Tomatoes, green chile, corn, and chicken serve as the base of this soup.

When I first made this soup, I used our homemade corn stock. (If you haven’t made corn stock before, put it on your list to do this summer. You literally just boil the corn cobs after the corn is gone. That’s it.)

My husband’s trips to Alaska always result in a freezer full of fish, especially smoked salmon. Its smoked salty goodness is perfect for snacking, lox, and making some of our favorite dishes like this chowder.

It’s been a few years since he was there though, so I’m thinking it’s about time to plan another visit. Pretty sure he won’t mind taking that trip in the interest of more recipe work. This smoked salmon soup is reason enough for me.

It’s hard to believe that it’s been ten years since my sisters and I met in Seattle for a getaway weekend. It was rainy and drizzling almost the entire time and we still had a fabulous three days.

The food I remember most clearly of all was the clam chowder that we ate after spending the morning at Pike Place Market.

This salmon chowder reminds me of that day and as a result, I find myself grinning every time I make it. It’s definitely time for another sister trip.

The chowder was a hit from the very first bite and we’ve made it numerous times over the years since then. The recipe below has been lightly adapted from and with thanks to Boundary Bay Brewery via Big Dude’s Ramblings.

The flavors in this chowder come from white wine, smoked salmon, and dill. They pair together so very well. For the white wine in this chowder, I’ve found that chardonnay goes best with the rich creamy base.

Savory and flavorful, I could happily breathe in the smell of this simmering soup all day long. However, lucky for all of us, a brief simmer is all it really needs to wilt the cabbage, making it tender and not turning it to mush.

The short simmer makes this a great recipe to pull together on a busy night. Start the onion cooking and then prep the other ingredients as you go, adding to the pot as you go along. The whole meal will come together in less than 30 minutes from start to finish.

Years ago, I ran across a recipe for Reuben Soup over at Closet Cooking. I mentioned it to my husband at the time and he did not let me forget it.

His all-time favorite sandwich is a classic Reuben; rye bread piled high with corned beef, sauerkraut, and melting Swiss cheese.

The idea of a soup for winter that delivers everything we love about Reuben sandwiches? There is no resisting that combination. Don’t skip the rye bread for serving with the soup, it adds the perfect final touch.

Stuffed Cabbage Soup

Cabbage rolls have been a long-time part of my frequently made recipe rotation. There is just something comforting about the flavors in these recipes.

Over the years, our recipe has evolved to be a less labor-intense layered cabbage roll casserole. These Unstuffed Cabbage Rolls deliver a quick skillet meal too, when I don’t have time or motivation for much more than that.

Given my love of soups in cooler weather turning cabbage rolls into soup just made so much sense. And boy am I glad I did!

It doesn’t get much better than a simmering pot of soup on a cold day. Or delivering soup to a friend when they have been under the weather.
