Chicken Pot Pie (From Scratch!)
I remember my mom bringing home a frozen pot pie from the store on the nights that she was just too crazy busy to make it from scratch. Back then that was the norm, you know? Convenience items weren’t thought twice about because they were there to help moms get dinner on the table.
Since that time, I’d forgotten about pot pie until years and years ago we had a homemade one from a friend and it was comfort food perfection! We’ve had our chicken pot pie soup on the blog for a long time, but we’ve needed a classic chicken pot pie. Sadly it’s taken me until now to develop the perfect pie crust and chicken pot pie filling, but here it is!
I mean, the crust had to be buttery and flaky but still hold up to the filling and my gosh, that filling needed to be perfect! None of this watery mumbo jumbo. And no, it should not taste like chicken gravy either. It should be a perfect sauce with well seasoned big pieces of chicken in it. Rotisserie chicken is a must to achieve that. Not only is it easier, but the flavor and texture are meant to be!

What’s Needed for Homemade Chicken Pot Pie?
This easy chicken pot pie recipe has two main parts: the homemade pot pie crust and the veggie-packed filling. Here’s what you’ll need to make this chicken pot pie from scratch:
For the Crust
- All-purpose flour
- Butter
- Granulated sugar
- Salt
- Water
For the Filling
- Rotisserie chicken
- Carrots, peas, and corn
- Yellow onion
- Celery
- Garlic
- Nutmeg
- Fresh thyme
- Chicken broth

How to Make Chicken Pot Pie
Step 1: Make the Chicken Pot Pie Crust
A pot pie requires a special
Teriyaki chicken stuffed in a cheesy quesadilla…it doesn’t get much better than that! I love the sweet and tangy flavor of teriyaki especially on chicken. Wrap it in gooey, melty cheese and a buttery tortilla, and you have yourself an out of this world meal!
I know this is a little weird to admit as it’s really not at all healthy and I wouldn’t ever make it for my kids after school, but I might as well let you in on my life. So here goes, at least 3-4 times a week when I would get home from high school I’d make myself a teriyaki chicken quesadilla or burrito.
I know, dinner was only a few hours away and most kids were having a snack but I was having a full on meal. But it was good, it was real good!
And then for some odd reason I totally forgot about it. Fast forward 10 or so years and I rediscovered this delicacy. I had some leftover teriyaki chicken from the night our babysitter went into labor at our house, while babysitting. Oh, you missed that?
This Actually Happened
One night I took the hubs to a Utah Jazz basketball game and due to a few changes we ended up having our friend, who was pregnant with her first, babysit for us. She wasn’t having anything happen with baby, the kids would be in bed sleeping and the neighbors had been alerted that a preggers was babysitting just in case anything did happen.
So off we went to the game and I was texting like mad, “Any baby news? How’s baby? Are you in labor? Get that baby out!!” It was all good fun and I was truly just teasing her when suddenly I got a text, “K, this is for reals, I think my water just broke.”
Holy cow!!! Was this for real? You should have seen Cade and I run out of there. I mean seriously. Just minutes before I had told him that I had a feeling that we should head home. I even had my coat in my lap. He had decided to wait a little longer as it was just half time. Nope! My feeling had been right. We ran up the stairs, down the street and straight to our car and then flew home. The next day one of our favorite family’s ever had a beautiful baby girl.
So, here’s to you Ashton and Tyler! Thanks for not giving birth in my living room! Haha, jk. But seriously, love those sweet friends.
What is a Quesadilla?
Now back to the teriyaki chicken I had leftover in the fridge. A light came on and suddenly I remembered that childhood favorite of mine…teriyaki chicken quesadilla!
A quesadilla is a tortilla that is filled with meat, cheese and sometimes other ingredients.
It is then heated on a griddle until the cheesy is melted and the tortilla is crispy.
What Do I Need to Make a Teriyaki Chicken Quesadilla?
If you have your teriyaki sauce ready to go then all you need is 3 more ingredients. Here is what you will need:
- Chicken Breast: You could use chicken thighs if you prefer. I just like how a chicken breast shreds a little better.

I love this even more than our pork chile verde which means I must be going crazy! Usually I’m all about a bunch of tender, shredded pork but there’s just something so good about this chicken dinner recipe that calls my name! What is Chile Verde?
The term “chile verde” translate to “green chile” or “green chili” and is a Mexican stew that is traditionally made with chunks of pork that is simmered until tender in a roasted tomatillo and green chile sauce. For this recipe we are swapping out the pork for chicken.

The Ingredients You Need for Chicken Chili Verde Recipe
I’m going to break up the recipe ingredients into two parts – ingredients for the verde sauce and ingredients for the chicken. Here is your shopping list:
For the Verde
- Vegetable Oil – used to roast the veggies
- Tomatillos – those green tomato looking things in the produce section that have a papery layer on the outside. They are used a lot in Mexican recipes and are so tasty!
- Poblano Chiles – large, mild peppers popular in Mexican cuisine
- Red Onion – these get blended into the sauce and add so much flavor
- Garlic Cloves – flavor of course
- Jalapeño – roasted jalapeño adds heat and tons of flavor to the sauce
- Pepper – flavor
- Cilantro – freshness and flavor
For the Chicken
- Chicken Thighs – boneless, skinless and cut into bite size chunks
- Kosher Salt – helps dry brine the chicken
- Bacon – flavor
- Chicken Broth – helps deglaze the pan after cooking the bacon and adds moisture to the chicken
- Dried Oregano – flavor
- Cinnamon – may seem strange in a savory dish, but trust me!
- Cumin – it has to be in pretty much all Mexican dishes
- Ground Cloves – again, trust me here!
- Sugar – enhances the flavor
