I’m so thrilled that stores have started making knock off Girl Scout cookies so that I don’t have to wait until March to devour all my favorite Girl Scout cookie flavors. Keebler has a version of the Samoa cookie and Walmart even has it’s own Great Value version. So you can make these Samoa cupcakes all year round!

Samoa Cookie Inspiration

I love cupcakes and Samoa cookies so why not mash the two together?! Voila! It’s seriously a party in your mouth. I chose to use a yellow cake for the cupcake to mimic the shortbread in the cookie and then I dipped it in ganache similar to how the bottom of a Samoa is covered in chocolate.  

I was going to top the cupcake with just a caramel/coconut mix but what kind of cupcake would that be without a buttery frosting?! The caramel buttercream is divine! I could eat it by the spoonful! And we top it with a sprinkle of toasted coconut!

Oh and for extra good measure I drizzled more caramel and ganache on top of the cupcakes creating a delicious mess.  These Samoa Cupcakes are going to blow your minds!  Enjoy!

Ingredients for Samoa Cupcakes

There are a few steps that go into making this cupcake recipe, but don’t worry, every ingredients and step is worth it! Here are the ingredients you will need:

Cupcakes:

  • Dry Ingredients: All-Purpose Flour, Cornstarch, Baking Powder, Baking Soda and Salt
  • Wet Ingredients: Butter, Sugar, Eggs, Vanilla and Sour Cream

Ganache:

  • Milk Chocolate Chips
  • Semi-Sweet Chocolate Chips
  • Heavy Whipping Cream

Caramel Frosting:

  • Butter
  • Powdered Sugar
  • Caramel Sauce
  • Vanilla

Topping:

  • Samoa Girl Scout Cookies
  • Sweetened Coconut Flakes
  • Caramel Sauce

How to Make Samoa Cupcakes

Now that you know all the ingredients you need, here is the step-by-step guide to making them:

Cupcakes:

  1. Prep: Preheat the oven to 350 degrees F and line muffin tins with paper liners.
  2. Combine: Add all the dry ingredients to a large mixing bowl and mix to combine.
  3. Beat: Add the butter and sugar to the bowl of a stand mixer with the paddle attachment and beat until light and creamy.
  4. Mix: Add the eggs one at a time mixing thoroughly between each egg. Then mix in the vanilla and sour cream.
  5. Combine: Add in the flour mixture and mix until just combined.
  6. Bake: Spoon the batter into the cupcake liners

I like to use dark chocolate when making these, as the bittersweet chocolate balances the sweetness of the coconut, and the flavors work very well together.

I’ve made these macaroons at Christmastime for the past 15+ years. (In addition to making them for pretty much every other occasion too.) If you love coconut anywhere near as much as we do, you will fall in love with these cookies.

How To Make Coconut Macaroons

There are a few different ways to make macaroons and I’ve tried plenty of them. Many of the macaroon recipes that I’ve seen require beating the egg whites before adding them to the mixture. I’ve tried this method myself.

In the end, I don’t find it makes enough of a difference to justify the extra effort. They will turn out just a tiny bit lighter, but like I said, for me? Part of the fun in macaroons is in how simple they are to make.

All you need to do is dump all of the ingredients in a bowl, give it a quick stir with a spoon, and scoop them out onto a tray. Easy peasy and you’ll be enjoying the macaroons before you know it.

Years ago, when I first put this recipe on the blog, I had just made this piña colada smoothie and churned it into ice cream. I can still remember how my little boys jumped up and down with excitement.

They loved the sweetness of this refreshing ice cream treat during the heat of a Phoenix summer. I loved that it had no refined sugars.

I had been on a bit of a smoothie kick, back then. But, I’d never tried freezing a smoothie recipe before that. The result is a creamy texture that is more like soft-serve ice cream.

The twist of lime in this Pina Colada Smoothie gives it a unique taste that is more complex than the simple combination of coconut and pineapple. And, the tiny pinch of sea salt likewise enhances all of the flavors.

Be aware that different manufacturers produce their coconut milks at varying levels of creaminess and thickness. My favorite is the canned coconut milk from Thai kitchen.

I typically use store-bought frozen pineapple chunks for smoothies, but you can also freeze fresh pineapple chunks with the banana. Also, the honey could be swapped out for another natural sweet

Sweet gooey Chex mix recipe – One of those classic party or holiday snacks that seems so lame when you look at it, but you can’t stay out of it once you try it.

We had a friend bring over a bag for Christmas this last year. I grabbed a handful and then the next thing I knew, the whole bag was gone. My husband and kids didn’t even get a bite. Oopsies…a classic snaccident!

It’s really that good and that addicting. You have to try it!

This is such a yummy treat to eat while watching a movie or hanging at a party etc! The ultimate party mix! It’s so simple and it’s a nice change from popcorn. You could totally mix things up and add nuts too.

Ingredients for Sweet Chex Mix

It’s the simple things that are the best, right?! There is nothing crazy in this recipe, just simple ingredients blended together in the perfect way. Here is your grocery list:

  • Unsalted Butter
  • Vanilla Extract
  • Light Corn Syrup
  • Sugar
  • Corn Chex
  • Rice Chex
  • Golden Graham Cereal
  • Slivered Almonds
  • Shredded Coconut Flakes

Variations and Substitutions

Feel free to add or swap any of the ingredients you want. Peanuts or cashews would be a great addition or mini pretzels. You can also swap the cereals for other ones you love…Wheat Chex, Crispix, Cheerios or Cinnamon Toast Crunch. I’ve seen people use those crunchy chow mein noodles in this mix too or Bugles for a little more salty taste.

If you want to play with the flavor a little, swap the corn syrup for honey and/or the granulated sugar for brown sugar.

Not a coconut fan? Just omit it!

How to Make Sweet Chex Mix Recipe

Snack foods should be simple and quick in my book. Otherwise, you’ve missed the point of a snack. Am I right? Yes, yes I am! Here are the basics:

  1. Combine the cereals, nuts and coconut in a bowl and line two cookie sheets with parchment.
  2. Add the butter, corn syrup, vanilla and sugar in a saucepan and bring to a boil.
  3. Boil for 1 minute.
  4. Remove from the stove and pour over the cereal mixture.
  5. Stir together and then spread out on the parchment paper to cool.

Ingredients for Coconut Curry Chicken Burgers

  • Naan: You can buy naan at the store or use flatbread or pita bread. It is a fun change from a typical hamburger bun and tastes delicious!
  • Ground Chicken: Chicken tastes great with the curry. You can also use ground turkey if you want.
  • Coconut Curry: If you make curry at home, you will need: curry powder, garam masala, yellow onion, garlic, sweetened coconut milk, tomato paste, salt, pepper, sugar, water, and cornstarch.
  • Salt and Pepper: adds flavor to the patties
  • Radicchio: or red cabbage works great too
  • Red Wine Vinegar: helps pickle the radicchio for extra flavor
