Tangy, sweet pineapple rice with cilantro and lime is a guaranteed win for any pineapple lovers. My family gives it two thumbs up around the table every time I make it.

This is a fun side dish that was originally inspired by this recipe for Hawaiian Huli Huli Chicken. I wanted something sweet and just a bit tangy, and the rice worked out beautifully.

To say that we’re a family of pineapple lovers just doesn’t even do justice to how much we all enjoy fresh, frozen, or canned pineapple. (And speaking of those options, any of them will work nicely in this recipe.)

The much-loved pineapple was a big hit when I added it to the cilantro lime rice. My family informed me that I should probably double the recipe the next time I make it.

If my boys are at home while I’m slicing a pineapple, the odds are good that it will disappear within moments. I’m just as guilty as they are though, seeing how I’ve been known to demolish a batch of pineapple salsa entirely on my own.

Pineapple rice would also be delicious with Sticky Chicken or Sweet and Spicy Glazed Salmon – or honestly, just about any other main dish imaginable. My boys went a little crazy over this rice and repeatedly told me how much they liked it.

Spanish Rice

Spanish rice is exactly the side dish you need with your next Mexican meal! This is a classic with all the flavors you want in a Spanish rice recipe and it’s perfectly moist every single time!

We’ve all been there…your meal arrives at your table, you take a bite of your main course and then tear into the rice and beans. The rice is dry and pasty and you can barely choke it down. Say goodbye to that scenario with this Mexican rice recipe!

This Spanish rice is so dang delicious. It makes a lot, but don’t you worry, we will be using the leftovers for pork tostadas later. The leftovers also freeze well (details below), so it’s actually awesome to have loads of leftover rice!

Make some steak fajitas, smothered chicken burritos, or the best pork carnitas with this Spanish rice for a side and prepare for a fiesta in your mouth! Ole! Cinco de Mayo anyone?!

Oh and don’t forget the refried beans to go with it!

What Ingredients Do I Need to Make Spanish Rice?

All the ingredients are exactly what you would expect in this dish. No surprises here!

  • White Onion
  • Tomatoes (Roma or Vine)
  • Jalapeños
  • Rice
  • Cumin
  • Canola Oil – olive oil can also be used
  • Garlic
  • Chicken Broth (or Vegetable)
  • Tomato Paste
  • Salt
  • Cilantro
  • Limes

How to Make Spanish Rice

Here are all the steps and tips we have for making this delicious rice recipe. For full details, see the recipe card below.

  • Preheat the oven.
  • Puree the tomatoes and onions in a food processor.
  • Measure out 2 cups of the tomato/onion mixture and discard the excess.
  • Mince the jalapeños leaving the ribs and seeds in one of the jalapeños.
  • Rinse the rice through a fine-mesh strainer and shake to remove excess water.
    • Pro Tip: Rinsing the rice removes all the starch on the surface of the rice which can cause the rice to clump and get gummy when cooked.
  • Saute the rice and cumin in a large skillet.
    • Pro Tip: This step is crucial. It adds a boost of flavor that takes this rice to the next level.
  • Add garlic and seeded jalapeño.
  • Add pureed tomato/onion mixture, broth, tomato paste and salt.
  • Bring to boil then cover and place in oven to bake.
    • Pro Tip: You can also cook it on the stove top. We just prefer the taste and tex

Alright, this Cheesy Ground Beef and Rice Casserole recipe is definitely not my norm, but it is who I am and it happens to be a recipe that I get a crazy amount of emails about. I get loads of emails about our fabulous buttermilk pancakes too…have you tried those?! Total comfort food just like this casserole.

People love this cheesy ground beef and rice casserole, and while it’s totally simple I know why. This quick and easy dinner idea with ground beef and melted cheese is in fact the cure for all picky eaters. It’s very dependent on you for the seasoning so for picky eaters it’s perfect, but if you want more flavor season it well or add in more vegetables. Oven. Baked. Rice. This is a game changer, my friends, and there’s no better way to try it for the first time than in this cilantro lime rice. I tried baking rice in the oven once years ago when I first heard about it. But, I was unimpressed.

But, THIS rice? Spectacular. I could have eaten a whole pan full by myself, and my kids really enjoyed it, too. It became an instant staple over here.

Beef Barley Soup

Beef barley soup is a hearty and comforting soup full of tender beef, pearl barley, wild rice, mushrooms and savory umami flavor.

I didn’t even know that beef barley soup was a thing. I guess whenever I heard someone mention a barley soup I just went into a mindless state because barley didn’t sound delicious. But it’s the best soup I’ve had in years and that says a lot considering how much my family loves soup. Have you tried “The Soup“? Or maybe our roasted tomato basil soup? We love soups!

If you search for beef and barley soup recipes, you’ll find a lot of the same style of soup — carrots, celery, beef, barley, etc. We have changed things up for this. This is a little different, and more scrumptious imho, than anything you’ll find out there.

Why is This the Best Beef Barley Soup?

My friend and I decided that there are a few small things that are musts in a beef barley soup…

  1. No carrots or celery. This isn’t stew and we don’t want it to look, smell or taste like stew. That’s a different recipe!
  2. Use wild rice along with the barley. It adds a toothy, flavorful oomph that you will miss if you skip it. You can add as much or as little as you’d like.
  3. WHOLE ROAST slowly cooked. We aren’t cutting this baby up, though if you were short on time you could certainly use stew meat and half the baking time. But a whole roast slowly cooked will bring out far more flavor and tenderness in the meat.

Ingredients for Beef Barley Soup

At first glance, this list may look long, but don’t worry! Most ingredients are pantry ingredients and everything combined creates a depth of flavor that is heavenly. Here is what you will need…

  • Chuck Roast: you will cook this whole like you would a pot roast
  • Olive Oil: helps brown the roast
  • Salt and Pepper: adds flavor
  • Red Wine Vinegar: helps deglaze the pan and adds acidity
  • Water: helps deglaze
  • Red Onion: adds flavor and caramelization
  • Baby Bella Mushrooms: adds earthy flavor and chewiness
  • Pearl Barley: you can find this right by the rice at the grocery store
  • Wild Rice: adds an extra layer of flavor and different texture to the soup
  • Au Jus Packet: adds bold savory flavor
  • Onion Powder: adds flavor
  • Garlic Powder: adds flavor
  • Oregano: you can also use Italian seasoning if you don’t have oregano
  • Balsamic Vinegar: adds a slight sweetness and more acidity
  • Worcestershire: our favorite brand is Lea & Perrins
  • Beef Broth: helps cook
