We went to Mexico a few year ago and these easy 3 ingredient chorizo potatoes had to be recreated for a savory breakfast or side!

We had the most amazing meals while staying in Mexico. Maybe the location helped a bit, maybe it was the sun, the pool at our side and the absolute peace of having nothing on our schedules to distract us from just loving and being together, but either way these Easy 3 Ingredient Chorizo Potatoes tasted like one of the most simply delicious things ever. We just had to recreate them!

Let me tell you a little bit about what I’m talking about. Cade and I did a speaking tour a few years ago. It was amazing. Have you heard of Time Out for Women before? It really is the most amazing weekend to go and fill up your tank to be a better person.

However, when you’re one of the speakers that comes with an extra load to carry as it means finding sitters to stay with your kids while you fly out of town. Praying and writing to come up with the best talk to give to the women who have sacrificed time, money and efforts to be there. It means staying up late and getting up early, worrying and working through nerves, etc.

It was the best experience of our lives, but by the end of the tour we knew we needed to get away as a family. And get away we did!!

We are going to be writing an entire post on why we chose the location we chose, where we stayed (Casa Mariposa is already being booked by our family for next year it was seriously that amazing!!!!) and what we did, but for now let me say this, it was everything you’ve always dreamed a vacation would be.

At Casa Mariposa there is a small staff to help you with what you need, the concierge is Carlos and Lupita does all the cooking. I’ll be honest with you, I thought for sure that we wouldn’t use them. Cade and I are so easy going and we love to cook and go out to eat so why would we need anyone?

We were wrong.

Lupita cooked breakfast and lunch for us every day, and it was not only delicious but made for an unforgettable experience. One morning she made us these easy 3 ingredient chorizo potatoes with simple huevos rancheros and I’m pretty sure Cade fell in love.

So what are Lupita’s papas con chorizo (or chorizo con papas)? Well, to be fair, we forgot to ask her how she made them, but I carefully ate them, savoring every bite and while our chorizo probably isn’t as good as theirs I’m pretty sure hers was the same as this recipe, or only slightly different.

All you need is 3 Ingredients:

  1. Yukon Gold Potatoes
  2. Minced, Fresh Garlic
  3. Chorizo

How to Make Chorizo Potatoes

These potatoes are first pan fried creating a roasted, caramelized flavor on the potatoes, and then spicy chorizo is thrown in along with a little garlic to bring out everything you’d want in a simple Mexican breakfast. Here is a little more detail:

This is a super easy-to-make potato salad with bacon, eggs, and ranch dressing and it’s been a huge hit with everyone who tries it.

One day a few years ago, while I was making a fresh batch of Ranch Dressing, my eye fell on an enormous leftover baked potato and a few hard-boiled eggs waiting in the refrigerator.

The ingredients were almost begging me to make a potato salad. I won’t pretend that the bacon here was leftover, I cooked it fresh. Who ever heard of leftover bacon?!

Even with cooking the bacon, this ranch potato salad came together so easily that I instantly knew it would be one that would show up in the future on our lunch and dinner menus. This recipe multiplies beautifully and I usually double or triple it for get-togethers with friends.

I’ve served this to plenty of guests, brought it to potlucks, and made it as a dinner side dish just for the family. It’s a guaranteed hit every time.

Potato Salad with Bacon

When I decided to make a ranch potato salad that first time, my mind immediately turned to bacon. There simply isn’t a bad way to include bacon in a salad, right?

I wanted a salad with the flavors of ranch dressing, but also with some smokiness from the bacon. I used just a bit of the bacon grease to season the dressing and the whole salad picked up that slightly smoky flavor that we love.

With a few leftover hardboiled eggs and baked potatoes, this salad comes together quickly. Rather than using a storebought or pre-made ranch dressing, I made an extra thick dressing with mayonnaise and all the usual ranch seasoning suspects like dill and parsley.

We had received so many messages about our readers making our mega viral busy day casserole with potatoes instead of rice that I just had to try it for myself. This casserole is full of creamy potatoes, seasoned ground beef and melted cheese for days.

We are giving you two versions of this recipe…a quick version with cream of mushroom soup and a totally made from scratch version where you make the creamy sauce yourself. You can choose whatever you have time for!

Now if you force me to choose between the rice version and the potato version of this casserole, I will have to give the slightest edge to the original rice version. It’s probably nostalgia for me, but I just like it a little better. This potato version is pure comfort food and it reminded me of camping and eating a tinfoil dinner. It tastes so similar!

What Ingredients Go in Cheesy Hamburger Potato Casserole?

For the quick version, you’ll only need 7 simple ingredients. For the homemade version, you’ll need a few more ingredients to make the cream of mushroom soup from scratch, but all the ingredients are easy to find. Here is what you will need for both versions:

Quick Version

  • Cream of Mushroom Soup, Russet Potatoes, Milk, Carrots, Ground Beef, Onion, and Cheese (Cheddar or Colby Jack)

From Scratch Version

  • Sauce: Butter, Onion, Garlic, Mushrooms, Flour, Cream, Chicken Broth, Pepper, Salt, and Milk
  • Casserole: Ground Beef, Salt, Garlic Powder, Onion, Carrots, Cheese (Cheddar or Colby Jack), and Russet Potatoes

Crock Pot or Instant Pot Cheesy Meatball Soup [+Video]

Ingredients for Creamy Meatball Soup

I love a good hearty soup full of veggies, meatballs and cheese! This easy soup recipe checks all the boxes. Here is what you will need…

  • Meatballs: We just buy a package at the store to keep it easy, but you can make meatballs at home if you want.
  • Butter: used to sauté the veggies
  • Vegetables: garlic, carrots, celery, potatoes and corn
  • Soup Base: beef broth, whole milk, Worcestershire sauce, and Tabasco
  • Salt: adds flavor
  • Cornstarch: thickens the soup
  • Cheeses: sharp cheddar and Monterey Jack

How to Make Cheesy Meatball Soup – Slow Cooker

While you can totally just dump this all in a crock pot and wait 8 hours to build the right texture and flavor it’s not the way I do it.

I know, you don’t want to dirty another pan, but it’s quick and easy and the flavor will be worth it.

  1. Heat a dutch oven or large skillet over medium high heat and add the butter. Once it’s melted add the onions and cook, stirring occasionally until tender, about 5 minutes.
  2. Add the carrots, celery and garlic and cook for another 3 minutes.
  3. Throw in your frozen meatballs (unless you really want to go through the work of cooking homemade) just to get all of that flavor browning on them.
  4. Dump everything but the cornstarch and cheese into a slow cooker and put it on low for 6 hours or high for 3.
  5. Right before serving, combine the cheese and cornstarch in a separate bowl and then mix to combine.
  6. Add the cheese mixture to the soup and stir until the cheese is melted and the soup has thickened.
  7. Serve with a sprinkle of fresh parsley for garnish and a good hearty bread!

I have not had many pork tenderloins and it hasn’t helped that Cade hasn’t been interested in them either. Every now and again I’d step into the ol’ Pinterest app and sure enough another pork loin was front and center. Now I know all about algorithms and that Pinterest had caught on that I slowed my scrolling seeing the pics but even so, it worked.

I’ve been testing and testing to turn an often flavorless meat into dish for a Sunday dinner that wasn’t a hassle but looked and tasted like the best home cooked meal ever. The key? Letting the rub sit on the meat for a whole day. And what rub is that? Based off of an old orange and cranberry relish my sister used to stuff breaded chicken with. Oh it’s so good!

What Ingredients Do You Need for Orange Glazed Pork Tenderloin?

Aside from the pork tenderloins, you will need a few ingredients for the rub and few ingredients for the sauce. A phenomenal homemade meal is just this easy. Here is your shopping list:

  • Pork Tenderloin

How to Make Orange Glazed Pork Loin

I love when a Sunday dinner is quick and easy but tastes like you’ve been in the kitchen for hours and hours. That is this pork tenderloin recipe in a nutshell! Here are the basic steps:

  • Combine all the ingredients for the paste in a blender or food processor and blend until smooth.
  • Rub all over the pork and cover with plastic wrap. Keep in the refrigerator for at least 8 hours.
  • Remove from fridge and wipe off the excess rub. Let rest.
  • Combine all the ingredients for the sauce in a saucepan and let simmer until it thickens.
  • Preheat oven and bake, adding some sauce for the last 20 minutes.
  • Prep the veggies and add them the last 20-30 minutes.
  • Pour the remaining sauce over the top with fresh herbs for garnish.
  • Let rest then slice and serve.
