Ingredients

  • 1 Tablspoon Olive Oil
  • 4 Chicken Breasts boneless, skinless, cut into 1" pieces (see note)
  • 6 Tablespoons Unsalted Butter
  • 6 Tablespoons Flour
  • 1 Cup Chicken Broth
  • 1 Cup Whole Milk
  • 1 Tablespoon Dijon Mustard
  • 1 Dash Nutmeg
  • ½ teaspoon Garlic Powder
  • 2 teaspoons Lemon Juice
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 8 oz Ham chopped
  • 4 Cups Swiss Cheese shredded, divided
  • 1 Tablespoon Butter
  • 1 Cup Panko Bread Crumbs

Instructions

  • Preheat oven to 350 ℉. Spray a 9×13" baking dish with nonstick spray.
  • Skip this step if using rotisserie chicken. In a pan over medium high heat, add a tablespoon of olive oil and season the chicken with salt and pepper. Add the chicken and turn to medium low. Cook 5-7 minutes per side, or until cooked through. Remove to a cutting board and rest 5 minutes before chopping.
    1 Tablspoon Olive Oil, 4 Chicken Breasts
  • Meanwhile, melt the butter in a saucepan over medium heat. Whisk in flour and let bubble until light golden brown and toasted, about 2 minutes.
    6 Tablespoons Unsalted Butter, 6 Tablespoons Flour
  • Slowly pour in the broth and milk, continuing to whisk and simmer until thickened, 4 to 6 minutes.
    1 Cup Chicken Broth, 1 Cup Whole Milk
  • Whisk in mustard, nutmeg, garlic powder and lemon juice along with the salt, and pepper.
    1 Tablespoon Dijon Mustard, 1 Dash Nutmeg, ½ teaspoon Garlic Powder, 2 teaspoons Lemon Juice, 1 teaspoon Kosher Salt, ½ teaspoon Black Pepper
  • Stir the chicken and ham into sauce. Stir for 2 minutes and add in 2 cups cheese and immediately transfer to the baking dish.
    8 oz Ham, 4 Cups Swiss Cheese
  • Top with the last 2 cups of the cheese.

  • In a pan, add the butter and once melted add panko and stir until browned and sprinkle over the top of the casserole. Bake 30-35 minutes and serve.
