This cheesy bacon quiche has been a favorite for many years. What’s not to love about a flaky pie crust filled with fluffy, cheesy eggs and plenty of bacon?

Bacon Cheddar Quiche

I adore make-ahead and casserole-style breakfast dishes, preferably ones with plenty of protein as well. This recipe combines some of our favorite breakfast foods into a single dish that everyone in the family loves to eat.

My sister first made a bacon cheddar quiche for me about 10 years ago while I was visiting her family. I loved it at first bite and immediately asked her for the recipe.

Quiche is one of the most versatile and forgiving of all make-ahead breakfast options. You can prepare the crust and filling a day ahead and wait to assemble and bake it.

Or if you need an even faster breakfast or brunch option, you can bake the quiche ahead of time and reheat it when ready to serve. You can freeze the whole quiche once it has been baked or slice it up and freeze leftover portions for easy reheating and lightning fast breakfasts.

Cottage cheese eggs are a simple dish that’s so packed with good-for-you ingredients and protein that it’ll keep you going well into the lunch hour. They’re truly a powerhouse breakfast and easy way to energize your morning!

Cottage Cheese Eggs

They’re so jammed with good stuff, in fact, that my boys used to (and technically still do) call them “Power Eggs.” The original title of the post here was “Cheesy Scrambled Eggs with Spinach a.k.a. Power Eggs.”

However, that title was a mouthful, albeit a delicious one, and the most important thing here is that these are just as tasty as can be, fluffy, cheesy, cottage cheese eggs. This is something we’ve been eating for well over ten years now, and the spinach in the recipe is optional. So, it was time to update this post. If you add spinach, though, Popeye will approve!

Many years ago, after watching Popeye eat his spinach and then grow stronger, my boys decided this breakfast should be called “Power Eggs.” Pretty much any time that we have spinach in the house, my boys request that I prepare their eggs this way. And now that they can cook for themselves, they often add in spinach too.

Yes, you read that right. My children are actually requesting that I add more spinach to their breakfast. If you give it a try, I suspect that you’re going to love these eggs just as much as we do.

How many waffle toppings can you think of off the top of your head? My family has a well-established weakness for waffles and with that comes a weakness for all the awesome ways that you can top a hot crisp freshly made waffle.

Is “waffle season” a thing? Or is that just me? We enjoy hot breakfasts all year long, but there is something wonderfully fall and winter about pulling out the waffle iron and watching the steam rise as they cook in the mornings.

All I know is that right now, we are deep in waffle season over here and we’re making all the toppings to pour, stack, and pile on top of our waffles.

From the sweet to the savory there are so many options when it comes to dressing up your waffles. A basic buttermilk waffle can be transformed from simple to spectacular with the right combination of toppings.

I recently shared a list of some of my all-time favorite waffle recipes. After spending all that time thinking about waffles, it became clear that I’d need a whole other post just to talk about waffle toppings!

Craving something sweet? My Grandmother’s Waffle Sauce will forever reign supreme, (just ask literally anyone who has ever tasted it!) but there are so many other delicious ways to top them too.

Sweet Potato Hash with Eggs

I prepared this recipe so many times over the course of my boys’ childhood. They always cleaned their plates when this was on the menu.

This breakfast hash first made its way to my table over 10 years ago. I can still remember the pride that my boys demonstrated when they figured out how to stack a little taste of everything onto their forks with each big bite.

They proudly informed us that doing so made the spinach taste so much better. I can empathize, as I well recall how much I disliked spinach as a child. I’m grateful my kids enjoy it most of the time now.

A spinach breakfast is a great way to get started on those leafy greens early. And, if you haven’t already been converted to the awesomeness that is eggs and spinach, I recommend trying my boys’ beloved Power Eggs too.

Make Ahead Breakfast Potatoes

However, as much as I love having roasted and pan-fried potatoes with our eggs for breakfast, it’s unlikely that I’m going to be willing to spend time chopping and roasting them most mornings.

Instead, I throw a tray of these in the oven at other times during the day when I might already have the oven on. They take about 45 minutes to roast, but when the oven is already on, it doesn’t seem like much effort at all.

Crispy Breakfast Potatoes

When I’m ready to use these potatoes, I simply put the amount that I need in a skillet over medium heat to warm them and let them get just a bit crispy again before serving.

And if I’m in a serious hurry, they reheat nicely in the microwave too.

Mix the flavors up each time you make them. Add whichever seasonings you like to your next batch of potatoes. Seasoning mixes, thyme, rosemary, garlic, or pretty much anything will work here.
