Delicious Peanut Butter Chicken Recipe [+Video]

I kind of have this thing for peanut sauce (hello, Thai peanut noodles with chicken!) and it’s grown even greater in my life because of my friend Kerri! She makes the most amazing peanut chicken with this mango cucumber salsa over the top and we might totally have to convince her to share the recipe on the blog because I can’t stop making all things peanut butter sauce after eating dinner at her house.

So this chicken recipe is totally different than hers. It’s kind of a fun takeout Feik out that even your pickiest of eaters should love. Heck it’s like a peanut butter sandwich, or I guess not. I mean it is chicken, but you see what I’m saying.

Peanut chicken is great for busy weeknights because you can have dinner on the table in less than 30 minutes.

The peanut sauce is to die for! The flavor is so addicting!

Peanut chicken is super family friendly. The flavors are familiar for children but elevated at the same time to satisfy adult palates.

This recipe is perfect for meal prep. You can make the chicken and then portion it out into containers with rice or noodles to eat for lunches or dinner all week.

Ingredients for Peanut Chicken

Sometimes when I see a recipe that leans in the direction of Asian cuisine, I get worried that the ingredients are going to be random and hard to find. This is not the case with this recipe! All the ingredients are easy to find, affordable, and pantry friendly so once you get them, they will last forever. Here is what you will need:

For the Chicken

  • Chicken Thighs: boneless, skinless
  • Soy Sauce: low sodium
  • Canola Oil: or olive oil works great too
  • Garlic: fresh and finely minced
  • Ginger: fresh is preferred

For the Sauce

  • Peanut Butter: we had the best results with natural pb
    • PRO TIP: If you have a peanut allergy, almond butter works great in this recipe too!
  • Hoisin Sauce: thick, sweet and salty and found by the soy sauce at the grocery store
  • Crushed Tomatoes: we love the brand Cento but any brand works great
  • Chicken Stock: helps thin out the sauce while adding flavor
  • Sesame Oil: gives that signature Asian flavor to the dish
    • PRO TIP: Don’t use sesame oil to sauté the chicken. The flavor will be too overpowering. Sesame oil is best in small quantities!
  • Honey: adds natural sweetness
  • White Vinegar: adds acidity and flavor
  • Ground Cumin: adds flavor

The first time I made this chocolate ice cream and filled it with peanut butter cups, I stashed it in the freezer for a few days before sharing it with my boys.

Peanut Butter Oatmeal

I still remember the cringe I felt when my son suggested I make peanut butter and jelly oatmeal, so many years ago. Well, my kids loved this breakfast. How could they not, when it reminded them of their favorite sandwich?

The peanut butter thickens the oatmeal and creates a distinct peanut butter flavor. Combined with the jelly, this oatmeal really is reminiscent of my boys’ favorite sandwich. I actually enjoyed eating it, too.

Peanut Butter and Jelly Oatmeal

When I mentioned this new concept to my brother, he laughed and informed me that he stirs peanut butter into his oatmeal pretty much every day. I was simply late to the game.

We’ve since added sliced bananas and chopped apples to this oatmeal recipe for a fun variation. When adding apples, I add them at the beginning, so that they have a few minutes to soften.

I add slices of fresh bananas as a topping after the oatmeal has cooked. Personally, I prefer creamy over crunchy peanut butter for this recipe. But, if you like nuts in your oatmeal, it’s a great way to get them in there.

Just as with apples, be sure to add them early enough to let them soften a bit during the cooking process. Otherwise, the texture is too crunchy for me.

I love these turkey lettuce wraps!  Years ago I was living in Chicago and we all went out to PF Changs for dinner. Everyone was ordering the lettuce wraps and I was like, “meat in lettuce??… yeah sounds really great…blah!” And then I tried them and they were awesome!!!!!!!! I was totally thinking it would be lame, but it was delicious.

This is one of my favorite meals to make in the summer months when you want a light easy meal!

Ingredients for Turkey Lettuce Wraps

A quick and easy recipe is just what I need in the summer time! It always seems like we are running to a soccer practice or rushing in from being at the pool, and simple and delicious is my summer jam! Here are the ingredients that you will need…

For the Filling

  • Ground Turkey: You can go as lean as you want, but know that the leaner the turkey, the drier the filling will be.
  • Celery: diced up nice and fine
  • Carrots: You can shred your own carrots or buy them already shredded.
  • Red Bell Pepper: You could use yellow or orange too, but I wouldn’t use green.
  • Onion: minced up small
  • Garlic: adds flavor
  • Slivered Almonds: adds the most amazing crunch to the wraps

For the Sauce

  • Peanut Butter: You want creamy and it adds all the great peanut flavor to the sauce.
  • Brown Sugar: adds a depth of flavor and richness to the sauce
  • Sugar: adds more sweetness to the sauce
  • Hoisin Sauce: a thick, dark colored sauce that is both sweet and salty
  • Oyster Sauce: a thick, dark sauce made from oyster extract that doesn’t taste fishy despite the name and adds an earthy flavor
  • Rice Vinegar: made from fermented rice and adds acidity
  • Soy Sauce: adds great umami flavor to the sauce
  • Red Pepper Flakes: adds heat to the sauce
  • Lettuce Leaves: you want whole large leaves with no tears in them

How to Make Lettuce Wraps

You only need about 30 minutes to make this flavorful recipe. It’s as simple as browning the turkey, sautéing the vegetables and whisking together the peanut sauce. Here are the basic steps…

  1. Brown the turkey until it is almost totally cooked. Remove to a bowl.
  2. Whisk together all the ingredients for the sauce in a separate bowl.
  3. Add all the vegetables to the skillet and sauté until tender. Then add the meat back in.
  4. Add the sauce and let it all simmer together for a few minutes.
  5. Spoon the meat mixture into the lettuce leaves and sprinkle with slivered almonds and sliced green onions.<
