Vegan Chocolate Ice Cream

Chocolate Ice Cream loaded with chunks of sweet peanut butter proved to be irresistible for my youngest two boys. The kids went a bit nuts over the peanut butter chunks filling this chocolate ice cream.

The whole batch was almost gone within a few minutes of my shooting these photos. (And then turning them loose on the ice cream in the freezer.)

When using plant protein milks, not all of them are created equal for the purposes of making ice cream. You want to choose a plant based milk that is higher in protein with a decent fat content.

Fat is crucial to the overall texture of the finished ice cream, so please don’t try to use a fat-free plant based milk. Likewise, the protein contributes body to the finished ice cream.

Bolthouse Farms® Plant Protein Milk contains 10 grams of pea protein per serving, making this a solid choice over some of the other alternative milks on the market.

If Bolthouse Farms alternative milks are not available in your market, try to choose a pea protein based milk that is similar in nutritional composition to it; somewhere around 10 grams of protein and 5 grams of fat per serving.

All the ingredients are easy to find, affordable, and pantry friendly so once you get them, they will last forever. Here is what you will need:

Peanut Butter Cup Ice Cream

The first time I made this chocolate ice cream and filled it with peanut butter cups, I stashed it in the freezer for a few days before sharing it with my boys.

I knew without a doubt that they would flip over this ice cream. (Yes, I enjoyed it daily. There just wasn’t the right moment to share it initially. You do believe me, right?)

I’ve been making this ice cream for almost nine years now and this is still one of our favorite ice creams. It tastes just like a smooth, creamy chocolate peanut butter cup!

Rich, nutty notes and rolled, hearty oats create true poetry in this creamy, dreamy Peanut Butter Oatmeal. It’s pure comfort food for breakfast.

Peanut Butter Oatmeal

I still remember the cringe I felt when my son suggested I make peanut butter and jelly oatmeal, so many years ago. Well, my kids loved this breakfast. How could they not, when it reminded them of their favorite sandwich?

The peanut butter thickens the oatmeal and creates a distinct peanut butter flavor. Combined with the jelly, this oatmeal really is reminiscent of my boys’ favorite sandwich. I actually enjoyed eating it, too.

Peanut Butter and Jelly Oatmeal

When I mentioned this new concept to my brother, he laughed and informed me that he stirs peanut butter into his oatmeal pretty much every day. I was simply late to the game.

We’ve since added sliced bananas and chopped apples to this oatmeal recipe for a fun variation. When adding apples, I add them at the beginning, so that they have a few minutes to soften.

I add slices of fresh bananas as a topping after the oatmeal has cooked. Personally, I prefer creamy over crunchy peanut butter for this recipe. But, if you like nuts in your oatmeal, it’s a great way to get them in there.

Just as with apples, be sure to add them early enough to let them soften a bit during the cooking process. Otherwise, the texture is too crunchy for me.

Rich chocolate, creamy peanut butter, and frozen bananas are blended together in blissful harmony to make this Chocolate Peanut Butter Smoothie – that tastes more like a peanut butter banana milkshake than a breakfast drink.

Peanut Butter Banana Milkshake

My kids were so excited the first time I handed them these smoothie milkshakes with chocolate sauce drizzled on top. It’s hard to believe that was over ten years ago. Their tastes may have changed, but desserts still disappear in the blink of an eye.

This smoothie really does taste like a peanut butter banana milkshake. When I say my kids were excited about it, that really doesn’t even cover it. They likely thought their mom had lost her mind when they were handed milkshakes for breakfast.

I love this treat almost as much as they do. The banana contributes just a hint of background flavor in this smoothie, leaving the peanut butter and chocolate as the stars of the show.

Peanut Butter Milkshake without Ice Cream

Frozen fruit and ice cream are the two main ways to get that signature smoothie texture. But, I prefer my peanut butter milkshake without ice cream. I use frozen fruit, so I can keep my ice cream in a bowl where it belongs.

This frosty concoction seems much closer to a milkshake than our typical smoothies. The fats in the peanut butter react similarly to ice cream in the blender, giving it that smooth, creamy finish.
