Classic Peanut Butter Cookie Recipe [+Video]

Looking for the perfect peanut butter cookie recipe? Look no further! These classic peanut butter cookies are easy to make and sure to be a hit with the whole family. They are soft and chewy and everything you want in a peanut butter cookie!

I originally wrote this post for classic peanut butter cookies and then had the feeling that I should dedicate this post to my parents, and I try to always follow those little feelings. Thank you for taking the time to always encourage, patiently teach and most of all love me through anything and everything. You gave me the wings to fly anywhere and become anything.

Music and food. Two things that store up memories like nothing else. I can love a book but never remember what was going on when I was reading it. A certain song though, well suddenly I’m right back in college teaching a Pilates class, or driving to a marching band practice. Yup. Totally did that. haha, but seriously, music and food bring back so many memories and I bet a few of you have one attached to classic peanut butter cookies.

Making Memories in the Kitchen

This may seem ridiculous to some of you, but I so badly wanted to feel like I could do things on my own as a kid. With siblings much older than me I watched them doing all sorts of fun and cool things and I just wanted to be big like them. I know, I should have been more content with being little because looking back I am bummed I didn’t take more advantage of being carefree. Either way, I distinctly remember my mom making peanut butter cookies one day and she let me sit up on a stool and help her make the criss-cross pattern with a fork on top of the cookie dough.

How silly, a fork to press a pattern into a cookie and warm memories attached to just that. I can see the same desire in our oldest and I struggle as a mom to let her, even encourage her to be little and at the same time push her to be more and more responsible each year. It’s in these little moments that I feel balanced, a mom having fun and being little alongside her daughter and still teaching her as a mother should.

I first teach her that it’s all about the softened butter. Not melted, and not cold, perfectly soft where you see your fingerprint and indentation in the butter. Then whip it, forcing air into the sugar and butter for a fluffier cookie. I also tell her that there’s nothing more important in baking than first following the recipe, and second measuring correctly. Wet ingredients in a glass measuring cup, dry in regular cups. Flour MUST be measured just like in our tutorial.

And in the end, the fork comes out for the indentations just like Mom taught me. She’s a good mom like that.

Easy Brownie Batter Dessert Dip

Our girls have started cooking more and more, and while I love it, I also want to make sure that it always stays fun and not merely a means to eat. We found this darling new cookbook by Aimee from Like Mother Like Daughter called 50 Fixes for Brownie Mixes and knew it would be just perfect for Friday movie nights.

One of the most important things we want to teach our children is that family matters. We spend time together, we talk about silly stuff, real stuff and future stuff.

A good friend once told me that her mother taught her that her siblings were her best friends. If ever it became clear that siblings weren’t being nice to each other or constantly wanting to be with friends and not family, then they had a few days where it was sister time and they could only play with each other. What a lovely idea! To this day they are all the best of friends and that’s something to admire.

We now choose to do the same. In fact, our girls have been having sister dates. I take them somewhere and just sit back and watch them choose ice cream together or whatever.

I’m getting off topic, this brownie cookbook was a great chance for our girls to spend time together doing something fun. They can choose to cook from the cookbook whenever they want as long as it’s together. It’s so fun trying their new creations and this last weekend it was brownie batter dip. This chocolate dip is so good!!

Huge, soft green mint chocolate chip cookies are just what you need for celebrating St. Patrick’s Day. It’s a holiday that I don’t do much for, much to my children’s chagrin, but these cookies are totally in my wheelhouse!

I failed HARD last St Patrick’s day. You guys, my kids are older, who knew it would break some hearts to not make something green for St Paddy’s? I bought Lucky Charms that turn the milk green, I thought that would be so fun since I never buy marshmallow cereal. (No judgments if you do, I just hate that as they are putting away cereal bowls they are already asking for a snack because it didn’t fill them up.)

I mean, ok I do have a little guy, but he wasn’t even the upset one, it was the 10 going on 11 year old that was so sad. Yeash. I busted out some green cookies, borrowed a gold spray painted box from the neighbor and Cade bought all sorts of green candies and even pop to stuff inside.

I’ll probably never go to that extent again, it’s just not my holiday, but the winner of the night did in fact end up being these cookies and I just had to share them with all of you this year.

What is Scone Bread?

Scone bread is like traditional scones but in a loaf form. It has a texture and flavor similar to a scone, but is shaped like quick bread. You can slice the loaf and serve it in slices rather than individual triangular scones.

Ingredients for Chocolate Orange Scone Bread

Most of these ingredients are pantry and refrigerator staples, so chances are good that you can make this recipe on a moment’s notice. In case you need to hit the grocery store for an ingredient or two, here is what you will need:

  • Flour: just regular all purpose flour is all you need
  • Baking Powder: adds rise and fluffiness to the loaf
  • Sugar: adds some sweetness

Chocolate Covered Coconut Balls {6 Ingredients!!}

Chocolate covered coconut balls are a recipe from my childhood. My mom would make them every year for Christmas to take around to our friends and neighbors. I didn’t like them at all. Haha! Oh how things change!

Is there an age you reach that you start looking backward instead of forward or is this just a me thing? I’ve been very nostalgic lately and it seems to grow more and more so as the years move on.

Yes, I still hope and dream. I still am loving life and where it’s taking me, but I’ve found this fondness for time and our stories. As a little girl I had no idea that the past little moments would one day be big ones to me. Coconut chocolate balls were absolutely not on my radar as ever mattering. In fact, I hated them, but there’s a reason they are here.

Home was a Safe Haven

I grew up on a very small private road in Vancouver, Washington. Our street was shaped like the letter T. You entered at what would be the bottom of the T and drove down until you had to go left or right. I was off to the right and I can still see our big rhododendron bushes lining our yard and the way the fog hung in the air as we walked to school each morning.

Every Christmas, lights would appear on houses and Christmas trees in windows and as I wandered home from school careful to not walk too close on the right where the huge mean poodles lived, and quick to walk past a field on the left where occasionally the rottweilers got out of their fence and would chase us barking and nipping at our buns (it was horrifying to say the least) I would picture all of the goodies Mom would be standing at the kitchen island making.

As a kid you don’t really think about other kids and their homes. I just assumed all families were doing what we were. All kids were safe and happy. All moms were full time at home cleaning house and preparing wonderful meals and goodies. I know better now. I grew up in a safe haven. A place of love and peace. I find myself looking back as the mother of children now and understanding what I am to create and who I am to be because of these memories of my family.

Connecting in the Kitchen

Peanut butter balls were my favorite. All dipped in chocolate like a Reese’s peanut butter cup. But every year Mom made a batch of the dreaded coconut balls too. GAG!! Ugh, all those stringy strands of pungent coconut like you’re eating a hairball from our little Tabby cat.

But remember, I’m nostalgic, and looking back all while I’m circling my arms around my little ones so one day I found myself wanting to connect with our teenager and realized, she adores coconut and I have just the recipe to make with her. A grandmother’s love entered that kitchen as we rolled ball after ball of coconut. I was able to weave generations and hearts together and suddenly the hated coconut balls weren’t hated at all, but instead they became a treasure between a mother and a daughter.
