Is this really a Korean quesadilla? Hardly, but it is inspired by our affection for Korean flavors. (Though, now that I’m thinking about it, I’m hard pressed to think of an authentic Korean option.) Are there a lot of people making quesadillas in Korea? <- That’s a serious question, friends.

All I know is that my family, and many of you too, love this Korean-inspired ground beef skillet, (inspired many years ago by our love of classic Korean bulgogi), and we also love a great quesadilla, too. So, adding a bit of leftover Korean beef to my lunch quesadilla a while back was a particular bit of brilliance, if I say so myself.

As a result of that impulse lunch? I’ve made these quesadillas for the family multiple times now, and they have earned a place in our quesadilla recipes. And, side note, if you love Korean beef anywhere near as much as we do, you’ll want to put these Korean beef noodles on your must-try list too.

Ground Beef Filling

  • Ground Beef: The main filling. Choose something with a little fat so it stays flavorful.

We love this Korean beef so much that it makes regular appearances on our dinner menu. We typically serve it over rice, but last time I made it I was craving some old-school ramen noodles. I combined the two and this was the happy result. The whole family gave it two thumbs up!

And while I used ramen noodles, glass noodles and rice noodles work just as well in this dish. Use whichever of those three you have on hand or like best!

To whip up this fabulously fast meal-in-one dish, you’ll need the following ingredients:

  • ramen noodles
  • sesame oil
  • ground beef
  • fresh garlic
  • fresh ginger
  • brown sugar
  • cornstarch
  • soy sauce
  • chili paste
  • kosher salt
  • frozen peas
  • green onions

As mentioned above, you can swap in rice noodles or glass noodles for the ramen. In a pinch, you could even use spaghetti noodles! It’s a very forgiving recipe.

The result? A dish so good that no one even noticed the swaps. It all bakes together perfectly, and the zucchini melts right in, making it an effortless upgrade.
