Easy Beef Burritos

As soon as I saw these burritos in my friend Jessica’s new Beef It Up cookbook, I knew I’d be making them. Cheesy Beef Burritos? Yes, please!

I have a few other things bookmarked on my must-try list as well, but these babies? I made them for the first time the same day I received the cookbook in the mail.

Next up on my must-try list are Cheeseburger Soup, Pan-Fried Steak, and Beef Pot Roast. Everything in the Beef It Up cookbook looks absolutely mouthwateringly delicious!

I always (and I do mean always) have some of the Best Ever Taco Beef in either the fridge or freezer. So, I grabbed a package and started rolling burritos. I had a very happy family that night.

I’ve tweaked the recipe a bit for my family’s tastes and to provide directions for making the burritos with ground beef, versus with leftover beef that you may or may not have on hand.

From the very first bite, these Buttered Steak Bites and Mushrooms became an instant favorite for my whole family. This is the most tender steak you can imagine and my whole family goes nuts for it.

I have two boys who aren’t the biggest fans of steak. (Yes, I know, it’s hard to imagine!) However, they dive right into these steak bites and always ask for seconds.

Served with Salt Potatoes and Honey Sriracha Roasted Broccoli, I love every bite of this meal.

Bite-size pieces of tender steak are seared in a hot skillet just for a couple minutes until each bite is crisply browned outside and juicy inside.

Then the mushrooms are seared in the same pan to absorb all of that delicious buttery flavor left in the pan.

How To Cook Steak Bites

The goal when cooking steak bites is to create a crisply browned outside and a lovely pink and juicy center for each piece of meat.

As the meat is cooking, if a piece is slightly larger and has a side that looks like it hasn’t browned, flip to that side again for 20-30 seconds. Take caution not to overcook the steak.

Steak Bites with Mushrooms are a quick dinner favorite.

  1. Cut the steak into bite-size pieces, about 1/2″ – 3/4″ in size. Sprinkle the meat generously with 3/4 teaspoon salt and pepper. Heat a heavy, flat bottomed stainless skillet over medium-high heat and add 1 tablespoon of butter. When the butter has melted, swirl to coat the pan. Add about a third of the meat and spread it across the pan.
  2. Cook for 1 minute and then use a large spatula to fli

Ultimate Italian Sausage and Peppers Rigatoni

The ultimate Italian sausage and peppers rigatoni with caramelized onions and peppers, crispy pepperoni and juicy grape tomatoes. Just wait until you try it!

This pasta was entirely inspired by pizza. If it’s good as a pizza, it’s meant to be pasta and vice versa in our book. Cade could eat pizza every day of his life and be quite happy, and pasta is quickly taking hold on his heart as well. So if you think this is good we highly encourage you to bust out our Little Italy Pizza recipe too. Like, this weekend, for sure.

Cade and I love good food and the older we get it’s interesting to see how our tastes are changing. Cade never was into dessert and now he’s got a huge sweet tooth. I never was all that into peppers and onions and now anything savory hits the spot for me far more than treats. Which means this Ultimate Italian Sausage Pasta is one of our favorites, followed by a skookie for Cade. Ridiculous…

Ingredients for Italian Sausage and Peppers Pasta

Continue scrolling to the end of this post to see the measurements of each ingredient in the recipe card. This is a list of the ingredients needed:

  • Rigatoni Pasta – the ridges on the outside gather the sauce beautifully creating extra saucy flavorful bites
  • Italian Sausage – you can get mild or spicy depending on your need for heat
  • Olive Oil – mild in flavor and helps cook down the peppers and onions
  • Onion – we prefer a yellow onion, sliced thin
  • Bell Peppers – red, yellow
