Almost 20 years ago, I was handed one of the most delicious cookies I had ever tasted. The Pignoli Cookie is unique in flavor and texture; completely unlike anything I had tasted before.

The restaurant where I first tasted these cookie does not share their recipe; they simply called them Pinon Cookies (a.k.a. Pine Nut Cookies). Crunchy, chewy, sweet and nutty, these cookies are a perfect match for any almond-lover.

Pine Nut Cookies

I spent three years thinking about those cookies and wondering how on earth they were made. Many of the recipes for cookies with pine nuts that I found were merely sugar cookies or shortbread topped with or rolled in pine nuts.

I’m sure those cookies are delicious, but that was not what I was searching for this time. I eventually learned that these pine nut cookies are most commonly known as Italian Pignoli Cookies or Italian Pine Nut Cookies. In New Mexico where I first tried them, they are called Pinon Cookies.

As you can guess, I was beyond excited to share the recipe with you all after I finally found this recipe.

I followed the recipe, tasted one of these cookies, and nearly shrieked out loud with joy. The hunt was over. These Italian Pine Nut Cookies are every bit as delicious as I’d remembered.

Christmas Cranberry Pie

Have you ever made cranberry pie before? I admit that it’s not the first thing I think of when I think of pie but it makes total sense.

We eat a lot of cranberries around the holidays and even more pie so why not put the two together?

This Cranberry Pie recipe is also far less fussy than your typical Christmas Pie. Instead of rolling a delicate pie crust, you simply pour the cranberry filling into a pie pan and top with a batter made from butter, eggs, sugar and flour.

Coconut Lovers be warned, this coconut rice krispie treat is going to star in your food daydreams for years to come. I adore coconut and I also LOVE a great rice krispie treat, so this combination is pretty much my idea of snacking perfection.

Coconut Rice Krispie Treats

While I’m admittedly a sucker for an amazing rice krispie treat, not just any rice krispie treat will do. If it’s too hard and it scratches the roof of your mouth, that’s just wrong.

Falling apart in your hands? That is not cool. It needs to be just firm and sticky enough to hold together, yet soft and chewy and absolutely loaded with marshmallows. If I’m indulging in a rice krispie treat, it had best be worth the indulgence.

The ratio of butter to marshmallows to rice krispies is important. But the real secret is the marshmallows, you’ll reserve some of them to stir in at the last minute. Melt the majority of them with the butter but then stir two cups in just before the cereal is entirely combined.

The marshmallows will melt just enough to stick together with the cereal. Yet be soft pillowy pockets of sweetness mixed into the rice krispie treats.

My other rice krispie secret to keep in mind in order to achieve the perfect rice krispie treats. Don’t press too hard when you are spreading them into the pan.

Press as lightly as you can in order to spread them out. If you press them down too much, you’ll wind up with a very firm rice krispie treat, instead of perfectly stretchy slightly sticky treats.

Remember, don’t skimp on the marshmallows. I love the additional gooey-ness the extra marshmallows provide. It seems like a mountain of marshmallows initially, but I’m promising you now that these are amazing rice krispie treats!

4 Ingredient Peanut Butter Fudge

So before my friends stage an intervention over my love of all things fudge and specifically peanut butter fudge I HAVE to share this recent version with you.

It really doesn’t get much easier than my classic four-ingredient fudge recipe. Butter, peanut butter, powdered sugar and a dash of vanilla. For ease of making and amazing richness, you will be hard-pressed to find a better one.

While I have been making this specific peanut butter fudge recipe for over 10 years now, it is fun to mix it up sometimes with other ingredients. Hence the Oreos.

Oreo Fudge

The beauty of this 4 ingredient peanut butter fudge recipe is not only is it easy but it is easy to scale. Just want a small batch, cut it in half. Making treats to share during the holidays go ahead and double it. It is not a finicky recipe in that regard.

Side note – if you watch the above video for the peanut butter fudge it was made with a HALF recipe for this fudge. The recipe can easily be halved or doubled or multiplied however you like.

As pictured in the video, the fudge should be firm and almost crumbly when mixed together and pressed into the pan. It should not be liquid at all.

This simple four-ingredient recipe is made with real butter. (5 ingredients with the Oreos.) The results can’t be guaranteed if you choose to substitute margarine or another butter alternative. The fudge might be greasy and might not even set up without the original ingredients.

2 Ingredient Pancakes have been showing up all over the internet lately. Low carb pancakes that are easy to make, and tasty as can be, we’ve been making these 2 Ingredient Cream Cheese Pancakes for years.

Amazingly thin and delicate, these cream cheese pancakes are much closer to a crepe than a traditional thick and fluffy pancake. I like these pancakes best when simply dusted with powdered sugar, but by all means, try my buttermilk syrup.

These simple low carb pancakes are a completely different kind of breakfast treat, and I loved them from the first bite. My kids did too. They don’t care if they’re low carb or not, they just want them as often as I’m willing to make them.

I first stumbled across this Cream Cheese Pancake recipe about ten years ago over at I Breathe I’m Hungry. I whipped them up the very next morning for much smaller boys than I have now, and they’ve been a regular item on our meal plan ever since.
