Inspired by my years-long love of the truffle mac and cheese at Rusconi’s American Kitchen, this recipe is the result of my nearly begging Chef Michael for the recipe when I knew we were going to be moving away from Arizona.

Luckily, he’s been kind enough to share it and now I can share it with you.

Truffle Mac and Cheese

The Truffle Mac and Cheese has been my #1 favorite menu item at Rusconi’s for about as long as we’ve been eating at the restaurant. I’ve dearly missed it since we moved to Ohio.

As it turns out, with just a handful of traditional macaroni and cheese ingredients, plus a generous splash of truffle oil, you’ll have a whole new pasta at your fingertips.

Just a note about this recipe, this is not a make-ahead dish. I make sure the rest of the meal is ready to go before stirring the sauce together and adding the cooked pasta to it.

You’ll want to serve and enjoy it immediately for the best results. Due to the truffle oil, this recipe will not hold as well as other sauces might. The mac and cheese is fantastic hot off the stove.

The leftovers are still tasty, but they don’t present as well or look as quite as nice. (That said, I always stash any leftovers just for myself in the back of the fridge. They’re delicious reheated as well!)

The components of jambalaya are so well suited to serving with pasta. We love all kinds of noodle-based dishes, from simple Italian-inspired classics like Spaghetti and Marinara to Mongolian Beef with Noodles, and our beloved Stir-Fry Noodles with Chicken and Vegetables.

I’m always looking for interesting takes on pasta, since I know everyone in my family likes it. Recently, I posted this Cheesy Pizza Pasta Bake and Mexican Baked Pasta.

When I saw this recipe for Jambalaya Pasta in my friend Valerie’s new cookbook, The Foolproof Family Slow Cooker, I marked it to try first. This cookbook is full of both slow-cooker and one-pot recipes that are sure to make your meal planning easier.

And I’m happy to report that this first recipe I tried did not disappoint. I’ve already made it again, just to have more leftovers for my lunches!

What is Jambalaya?

Jambalaya is a classic Cajun dish that consists of chicken, shrimp, and sausage all cooked together in one pot, usually with rice. It’s a little like a stew, thick and completely satisfying with every bite.

Instead of rice, this Jambalaya recipe uses pasta. The version I’m sharing today has been a hit with everyone who’s tried it.

I’ve made it a couple of times now and I’m super happy to tell you it actually tastes even better the next day. I made it the second time, just to have it in the fridge for a few easy reheatable lunches.

Best Ever Tomato Pasta

Tender pasta and mouthwatering flavorful tomatoes are tossed together with a tangy-sweet dressing to make a versatile Tomato Pasta that can be served warm, cold, or at room temperature.

This is perfect for summer barbecues and potlucks, as it can be left out for a couple of hours without any issues.

While this just might be the easiest pasta recipe I’ve ever made, it’s also one of my favorites for flavor. I eat this pasta hot, cold, room temperature, it’s fantastic however you serve it.

With just a few ingredients, you can mix up a batch of marinated tomatoes in the morning, let them rest on the counter or in the fridge for the day, then toss the tomatoes with pasta for dinner.

This is delicious right after it’s stirred together, but it only gets better after spending a while in the fridge. I’ve found I like the leftovers even more than when first made.

So, take my advice and make the full recipe. The pasta will keep nicely for a few days and can be eaten cold for easy lunches or warmed up for a hot meal too.

With some sliced grilled chicken added to the pasta, this is a hearty dinner the whole family enjoys. I typically stir together the pasta and tomatoes as a pasta salad and store it in the fridge.

When I’m ready for dinner, I combine the pasta and chicken in the skillet and warm it up for a quick minute. You can even toss in a couple of handfuls of baby spinach or some sauteed mushrooms.

A sprinkling of Parmesan is another great way to finish the recipe. With this tomato pasta tucked in the fridge, you have endless dinner options at your fingertips.

It’s one of my favorite quick dinner ideas for summer – grilled corn and roasted tomato pesto pasta is so fresh and ready in just 15 minutes!

When you find something that the whole family will eat, you make it in every form possible! By some miracle, all my kids will eat pesto. PESTO! Of all the things! I’m not complaining because pesto is life!

We have pesto pizza, pesto paninis, pesto veggies, pesto chicken pasta, and even pesto tarts! See…all forms possible and every one is so delish!

This recipe is so tasty with a little smokiness from the roasted tomatoes and grilled corn. I love the addition of the bocconcini for the creaminess and added protein. It’s also healthy and so satisfying!

This pasta was entirely inspired by pizza. If it’s good as a pizza, it’s meant to be pasta and vice versa in our book. Cade could eat pizza every day of his life and be quite happy, and pasta is quickly taking hold on his heart as well. Cade and I love good food and the older we get it’s interesting to see how our tastes are changing. Cade never was into dessert and now he’s got a huge sweet tooth. I never was all that into peppers and onions and now anything savory hits the spot for me far more than treats.
