Green Chile Carnitas are the perfect combination of two of my favorite savory things. It’s tough to find a combo that beats pork and green chile in my mind.

Carnitas are cooked until melt in your mouth tender; then roasted at high temperature until the edges caramelize.

Green Chile Carnitas

Deliciously seasoned pork carnitas are something we make as often as possible. Carnitas are delicious on their own but they become the star of so many dishes from salads to tacos, enchiladas, burritos, and countless other meals.

The crispy chopped bits of pork make the most delicious tacos. The meat is already full of flavor and perfect when topped with cilantro, onion, cheese, lime, and pico de gallo.

The beauty of this recipe is you can use the pork shoulder or a pork butt. I love finding them on sale at the grocery store and turning them into carnitas of all kinds.

My usual go-to recipe for carnitas is unique as it does not use traditional Mexican spices, but is deliciously flavored with citrus, onions, and salt and pepper.

Italian Slow Cooker Roast

The first time I made a slow cooker red wine roast beef (over ten years ago now), my husband requested that I please put that roast on the menu at least once a month. I was more than happy to oblige.

My family was still talking about that meal two days later. So, naturally, I decided to play with a pork version of that Italian flavor-inspired roast.

When I cooked that first five-pound pork roast, I expected to have a huge amount of leftovers. However, almost everyone went back for seconds and I wound up with far less than half of the roast left for another meal.

If you are fortunate enough to have leftovers at the end of the meal, they are delicious when combined with potato, onion, and apple to make this Roasted Italian Pork with Apples and Potatoes.

Italian Pork Roast

This Italian pork roast recipe is an absolutely hassle-free dinner. Less than 10 minutes are required to prep the roast; then just sit back and enjoy how wonderful it smells as it cooks through the day.

Cooking this roast in a slow-cooker makes it easier than you ever imagined to roast pork to perfection. This Italian-inspired slow cooker roast starts with a 7lb pork shoulder (shoulder blade is my favorite cut of meat for this roast recipe).

After layering thinly sliced onions on the bottom of a crock-pot, cook the roast with the onions, a blend of fragrant Italian herbs and spices, water, and red wine for 9 to 10 hours.

Pork Roast with Glaze

This slow-cooked pork roast is both company worthy and also perfect for a lazy weeknight dinner. I’ve served this pork with smashed potatoes, over rice, (it’s really great with this mushrooms pepper rice pilaf) and stuffed into soft rolls.

This roast was a delicious surprise the first time I made it. I’d originally planned to oven-roast the pork in a more traditional style. However, in the interest of not spending my weekend evening working in the kitchen, I decided to put it in the crockpot that morning instead.

I found the original recipe on allrecipes.com and tweaked it a good bit to meet our needs. (Truth be told, it doesn’t have much in common with the original, but credit where it’s due, right?)

I did not expect the meat to cook so quickly and be falling apart at dinnertime, but it was absolutely perfect and I wouldn’t change a thing.

The sweet, tangy glaze takes just a few minutes to simmer and whisk together and the resulting meal is well worth the extra moment to make it special!

My whole crew loves quesadillas so much, I tend to set aside a bit of whatever meat we are cooking for dinner, so we can make quesadillas the next day.

I made these with leftover buttered steak bites, just slice the cold steak bites as thin as possible and layer them into the quesadillas. (If you’re lucky enough to have mushrooms leftover, definitely add them too!)

Steak quesadillas are great made with Southwest steak bites, Cajun steak bites, and these Asian steak bites too.

Set aside some steak bites next time you make them. Then slice those leftover steak bites thin and pile the strips of beef onto the tortillas.

This easy-as-can-be Sheet Pan Chicken Thighs with Potatoes and Green Beans has become a favorite in many of your homes over the past two years.

This is such an easy dinner recipe and my family continues to make it at least once a month. It only takes about 5 minutes of effort to toss the chicken, potatoes, and green beans in a simple lemon and herb vinaigrette before roasting until tender and crisp.

Sheet Pan Chicken Thighs and Potatoes

Whoever invented the sheet pan really should be given a medal. I use my half-size sheet pans at least once, if not multiple times a day. Sheet pan dinners are one of my favorite ways to use them.

All other baked chicken aside, this recipe for sheet pan chicken thighs and potatoes is probably going to remain my favorite for a long time.

It takes less than 5 minutes to pull this entire chicken dinner together and get it into the oven. Just scatter the chicken, green beans, and potatoes across the baking sheet. Drizzle with the lemon vinaigrette and bake until done.
