Pina Colada Hawaiian Pulled Pork Nachos Recipe

Hawaiian pulled pork nachos…crispy tortilla chips topped with tender pulled pork, loads of melty cheese, pinto beans, sauteed peppers and a creamy pina colada sauce! It’s what every nachos recipe should be!

Whether you eat them as an appetizer on gameday or a quick weeknight meal, these nachos will get devoured by all the people. My kids think they’ve died and gone to heaven when they get to eat chips for dinner!

This pork nachos recipe will knock your boots off. In fact, they will probably knock you naked. And it will be worth it. They are the best dang nachos I’ve ever had. EVER. And that’s saying a lot because I really thought we loved our Italian nachos with chicken, wontons, and that yummy alfredo sauce…mmmmmm. Seriously though, these rocked our world.

Ingredient for Pulled Pork Nachos

Here is what you will need to make this nachos recipe:

  • Pork Butt: 3-4lbs, if you have leftover pulled pork from the night before, that works perfectly
  • Pinto Beans: drained and rinsed, and heated through in a pan on the stovetop
  • Colby Jack Cheese: you could really use any cheese you want, but colby jack has such a delicious flavor for nachos and gets so creamy and melty
  • Tostitos Scoop Chips: I love using scoops because they make the perfect nacho bites, but you could us any type of tortilla chip you prefer.
  • Mini Sweet Peppers: I like to chop them into thin strips and then saute them.
  • Olive Oil: helps saute the peppers
  • Pina Colada Sauce: see recipe below…so creamy with the perfect blend of pineapple and coconut!
  • Other toppings: You can load these up as much or as little as you want. Feel free to add more toppings such as tomatoes, diced red onions, fresh pineapple chunks, chopped cilantro, sour cream, guacamole, black olives, jalapenos, etc.

For the Pina Colada Sauce

  • Crushed Pineapple: Be sure it is crushed and not the tidbits or chunks and no need to drain it. You want that yummy juice in there for flavor!
  • Cream Of Coconut: You can find this by the margarita mixes and alcohol. It is usually in a can.
  • Sour Cream: creates the creaminess for the sauce, you could substitute plain Green yogurt if you want

Creamy Avocado Cilantro Lime Dressing

Our creamy avocado cilantro lime dressing is fresh, tangy, a teeny bit spicy and delicious not only on salads, but also on tacos, rice bowls, or as a dip for veggies!

I’m slowly but surely gathering up all of my favorite salad dressing recipes… for my mom. Haha! I mean, I’m doing it for all of you as well, but this stems from a comment my mom made that I’m not completely ruminating on. She said she doesn’t know how to make a good salad. AND, FURTHERMORE, she doesn’t really eat salad in the winter because she associates it with summer. 

Oh heck no. 

Salad is one of the greatest things of my life, so I absolutely have to help her out! Salads are the easiest recipe because literally anything goes. You wanna add roasted sweet potatoes? DO IT! You want to mix cottage cheese in? IT’S DELICIOUS!

So, first up, Cilantro Lime Avocado Dressing because it’s healthy, and so bright and zesty! And look at that green color! All the heart eyes!

Ingredients for Avocado Cilantro Lime Dressing

This recipe uses all natural ingredients and is gluten free and dairy free. Here is what you will need:

  • Avocado: make sure it is ripe by gently grabbing the top and bottom between your thumb and index finger and giving it a slight squeeze, it should have a little give to it
  • Cilantro: grab a handful of the leaves and pull them from the stems
  • Lime Juice: you definitely want fresh limes for this
  • Jalapeño: remove the seeds and use more or less of the jalapeño to determine the heat you want
  • Tomatillo: have a tangy and almost citrus-y flavor
  • Garlic: fresh garlic, adds a little bite to the dressing
  • Apple Cider Vinegar: adds acid and flavor
  • Honey: mellows out all the acid and tanginess
  • Ground Coriander: adds a slightly sweet, lemony flavor
  • Olive Oil: adds flavor and healthy fat
  • Kosher Salt: adds flavor
  • Water: thins the dressing out, you can add as much or as little as you want to control the creaminess

Someone recently asked me what my favorite food is. That is quite possibly the hardest question to ask a food blogger! I could maybe narrow it down to a top 10 food. And if I was forced to choose, avocados would definitely be on the list. I am obsessed with them!

When I first saw a recipe for microwave lemon curd, I will admit that I was skeptical. I adore lemon curd, but I am such a slacker about making it. I never want to stand by the stove and stir it for the requisite 15 minutes.

Having tried this now, I may never make lemon curd on the stove again. Microwave lemon curd really works!

Microwave Lemon Curd

This recipe is SO simple, the hardest part is juicing the lemons. And if you’re lucky enough to have a kid who thinks juicing citrus is fun, it’s a total win. (Just don’t tell them it’s work, okay?)

Whisk everything together, microwave for a minute, whisk again, and repeat a couple of times. Try to refrain from drinking the warm lemon curd as it cools.

Did I mention that lemon curd is a weakness of mine? Eating it with a spoon is showing self-control in this house.

If there is one thing you need to know how to make from scratch, I vote that you know how to make whipped cream. Consider it a life skill.

Did you grow up scooping cool whip onto pie? or squirting it from those handy cans – sometimes straight into your mouth? My mom was team cool whip for every holiday and I never gave it a second thought.

My sister first introduced me to freshly whipped cream on Thanksgiving day many years ago. Watching her pour cream into the bowl and then beat it into fluffy peaks was a game-changer for me.

This vanilla whipped cream draws a “WOW” from guests every time. It’s as if no one knows how easy it is to make. I can speak to that from experience.

Once you taste homemade whipped cream, you will never go back. Your tastebuds and your family won’t let you.

Vanilla Whipped Cream

My family will happily put whipped cream on just about everything. When I finally triumphed over Gluten Free Pancakes years ago, I wanted to make them extra special. I had fresh raspberries in the refrigerator and decided to whip some cream for a special treat.

My youngest son called it “ice cream” and we all thought the flavor was a perfect match for our favorite vanilla ice cream.

Subtly sweet, richly vanilla flavored, and slightly melted into the fluffy pancakes: that became an immediate favorite pancake topping for the whole family. I’ve been whipping cream to top pancakes almost every weekend since then.

I’m trying to talk myself out of baking something now for dessert tonight, if only so I can make another bowl of whipped cream to top it. Writing about fluffy bowls of vanilla whipped cream makes me crave it all over again!

Creamy, avocado sauce seasoned lightly with salt, pepper, and lime is one of the simplest recipes I’ve made this year and yet, it stands out as truly amazing.

If you trust me on nothing else, take my word on this recipe, and buy a couple of avocados as soon as possible.

Avocado Sauce

If you like guacamole but occasionally find yourself in the need of something with a smoother texture, Avocado Cream Sauce is the recipe you need. It reminds me a little of the taste you get when your guacamole mixes with sour cream in a burrito or taco.

Tangy, smooth, and rich without being heavy, avocado cream sauce is one of my new favorite things.

It pairs well with Mexican and Southwestern Flavors along with just about any kind of meat. Drizzled on top or used as a dipping sauce, there’s no limit to the number of ways you can serve this avocado cream sauce.

Avocado Sauce for Tacos

On top of being completely delicious, this sauce couldn’t be any easier to make. Simply pop two peeled ripe avocados in a blender with sour cream, lime juice, and garlic and blend until smooth.

If you prefer, you can also use Greek yogurt in the avocado cream sauce instead of sour cream. I’ve tried the sauce both ways and enjoyed them equally. If you’re using Greek yogurt just be sure to use a variety that’s both plain AND unsweetened.

I garnished the finished sauce with freshly chopped cilantro leaves but it’s absolutely not necessary. The finished sauce is delicious served just as is.

This sauce stores in well in the fridge for up to two days as long as it’s covered tightly with plastic wrap.

Whenever we make avocado cream sauce it never seems to last long enough to have leftovers to worry about. We ate each and every last drop of the sauce each time I made it.

Avocado Crema

Equal parts tangy and creamy with a velvety texture, this sauce could also be called “Avocado Crema” if you’re feeling fancy.

Whatever you call it, this sauce is absolutely finger-licking fantastic. The next two recipes I share are going to feature the ultimate meats for dipping into what’s sure to be your new favorite avocado sauce.
