Italian Spaghetti Salad

Like so many pasta salads that I love, this one is loaded to the max with fresh vegetables. I like to add about ¾ of a cup of vegetables to the salad for every ounce of pasta (i.e. 6 cups of vegetables for 8 ounces of pasta).

That might sound like a lot, but I promise this ratio won’t result in too many vegetables. This is the best balance I’ve found for maximizing the textures and flavors in this Italian spaghetti salad.

You can make this recipe with any vegetable you enjoy snacking on or eating raw. Just cut the vegetables into somewhat uniform, bite-size pieces. This ensures the maximum variety of textures and flavors in every bite.

If at all possible, try making this salad with homemade Italian dressing. It takes less than five minutes to shake this dressing together, and it makes a world of difference.

Fresh pineapple, strawberries, grapes, blueberries, oranges, kiwis, and blackberries come together fabulously in this flavor-filled Rainbow Fruit Salad.

Any combination of fruits will work nicely in this recipe. You’ll need a total of 8 cups worth of chopped fruits. When prepping the fruits, I like to use this simple homemade fruit wash.

The fruits are then tossed with fresh lime juice, honey, and a sprinkling of poppy seeds to create a side dish worthy of any occasion.

This fruit salad can be arranged on a tray for a stunning fruit tray rainbow, layered into rainbow fruit cups for individual portions, or tossed and served in a large bowl to deliver a rainbow of fruit colors in every spoonful.

I’ve served this all three ways, but my go-to option for family meals is a large bowl simply for the ease of preparation and serving.

Honey Lime Fruit Salad

The simple honey and lime dressing brightens the fruit flavors nicely. I’ve used this dressing combination in several fruit salads and it’s become a favorite way to dress up a bowl of fruit for snacking or for dessert.

The Winter Fruit Salad and the Summer Fruit Salad are seasonal favorites. And this Rainbow Fruit Salad is everything I love about both of these, plus even more colors and flavors.

You’ll need the following fruits for this fruit salad:

  • pineapple or mango

  • red grapes

Avocado enthusiasts will love this dish but even if you’re not wild about the creamy green fruit, I encourage you to give this recipe a try. My family hasn’t always loved avocados, but they went crazy over this chicken salad recipe.

After my boys decided they loved guacamole a few years ago, the Roasted Garlic and Bacon Guacamole and the Pomegranate Guacamole have been on regular rotation. (Side note, don’t knock that Pomegranate Guacamole until you’ve tried it, my friends. It’s incredible!)

Chicken Salad with Avocado

We almost always have avocados in the house these days, because I buy as many as possible every time they’re on sale. I do my best to use them before they are overly ripe, but occasionally we wind up with several ripe avocados that need to be used asap.

There are worse problems to have than an overabundance of avocados, right? Whenever this happens, I take the opportunity to have some fun getting creative in the kitchen.

This Avocado Chicken Salad was the fortunate result of having a few too many avocados in the house along with a rotisserie chicken that was begging to be made into a salad for sandwiches.

When I made this avocado chicken salad recipe for the first time, we couldn’t believe how great it turned out! Everyone in my family opted to eat their chicken salad in a different way, so we can vouch that it’s delicious however you consume it.

My boys enjoyed theirs on top of toasted slices of sourdough bread. I ate mine with a handful of multi-grain crackers and Sean opted for eating it lettuce wrap style.

This would also be tasty in a wrap or on top of a garden salad. The last time I made this chicken salad, we ate it layered in between a couple of slices of bread for more traditional chicken salad sandwiches.

Creamy Pasta Salad

Light and slightly tangy creamy pasta salad, with just enough dressing to coat the noodles and vegetables, this is one heck of an awesome summer pasta salad.

Perfect on its own for a light meal or as a side dish for all the summer potlucks and barbecues. Homemade pasta salad is better than any deli salad you can buy at the store.

Summer Pasta Salad

This salad is filled with broccoli, cucumber, red pepper, black olives, and green onions. I am a big fan of pasta dishes that have a high ratio of vegetables to pasta, so don’t hesitate to add more or switch things up with your favorite vegetables.

Adding extra vegetables to a pasta salad is about more than just making it a little bit healthier. Vegetables add different flavors, textures, and colors to recipes like this one. This salad is about 50/50 pasta and vegetables and I often make it with more vegetables than are actually in the recipe.

Everything gets tossed in a light tangy dressing and the result is a fresh pasta salad that disappears quite literally almost as quickly as I can stir it together.

While I’d like to say that I’ve always been a fan of salad, that hasn’t always been true.

Salad Topping Ideas

I’ve always tried to love eating salad, but unless I went to the trouble of making a really great salad (something that often felt like a whole lot of effort in the past), it was hard to get excited about eating a salad most days.

That all changed when I topped my salad with a handful of Fritos for the first time. I know, that sounds completely ridiculous, but I’m telling you now that Fritos are a salad game changer.

Not only does that simple corn chip add great salty flavor and crunch to any salad, the Frito fits perfectly on a fork, it is bite-size, and it’s a fun way to tell all the greens that there is more to the salad life than just vegetables.
