Roasted potatoes, green chile sauce, and black beans tossed with barely wilted baby spinach make a surprisingly delicious combination in this breakfast hash recipe.

If you’ve been here long, you know that I’m a huge fan of hash for breakfast. I’m here for it, whether it’s a classic sausage hash with cabbage and potatoes, or this roasted sweet potato and spinach hash.

Hash is a simple, yet versatile option, perfect for mornings when you want something delicious and customizable. With endless combinations of meats and veggies, it ensures a tasty breakfast that never gets boring.

And, it’s great for using up those last few handfuls of spinach before it gets lost in the back of your refrigerator. I also like this spinach and potato hash for that, with garlic and onion. And, this spinach quiche looks amazing too.

Breakfast Hash

To get the crispiest potatoes in your hash, make sure they are dry when you drizzle them with oil and roast them. Excess moisture steams the diced potatoes.

This tip holds true for any crispy potato recipe, whether it’s roasted red potatoes, roasted sweet potatoes, or even these roasted potatoes and green beans. I added green beans to my grocery list, after seeing that last recipe again.

Hash is a frequently requested meal at our house. Often it is breakfast, but of late, it has also been in the dinner rotation. How could it not be, with something as savory as this cabbage and corned beef hash

Ham and Potato Chowder

The first time I made this soup, I was staring into the refrigerator over Thanksgiving weekend and I really didn’t feel like warming up another plate of leftovers. (This is what tends to happen when you accidentally wind up with triple the amount of ham and potatoes your family could possibly eat!)

I saw the container -okay, technically, it was pretty much a vat- of potatoes and a big package of ham. So, I decided to see if I could improvise with what we had and come up with a new Baked Potato Soup recipe.

Potato Soup with Ham

The improvised soup turned out fabulously and there was hardly a bite left over.

We loved that soup so much, I wanted to make it again, but I don’t typically have a mountain of mashed potatoes just waiting around to be used on a regular basis.

If you DO happen to have a whole lot of mashed potatoes in the fridge already, just skip the diced potatoes in the recipe below and add the mashed potatoes in after the other vegetables have softened.

Simple ingredients come together in this belly-warming creamy potato chowder. The classic trio of celery, carrots, and onions work with the potatoes as a perfect base for the salty chunks of ham.

Once you have all the vegetables and ham in the slow cooker, season with salt and pepper and pour in the chicken broth. Set on low and cook for 6 hours. (If you’re in a hurry, this will finish in about 4 hours wh

Garlic Dill Fingerling Potatoes

Garlic Dill Fingerling Potatoes

a photo of a large serving bowl full of roasted garlic dill fingerling potatoes.

Little buttery fingerling potatoes braised with garlic and dill and topped off with fleur de sel salt are the next greatest thing to hit your Sunday dinner. You are going to love these potatoes!

To me potatoes are just the perfect family food. There’s just something about them that always brings back memories of Thanksgiving, Christmas, Sunday dinners etc, all home cooked by Mom. But times have changed, and so have potatoes.

I knew as a young girl that there were Russet potatoes. And that was all there was to it. I had no idea there were other kinds and that they are not only different but some potatoes cannot be subbed for other potatoes in recipes. For example, these brown butter braised dill fingerlings. Read on to find out why.

What are Fingerling Potatoes?

Fingerling potatoes are low in starch and extra creamy inside with a paper thin peel that crisps perfectly when roasted. There are lots of different types of fingerling potatoes – red, yellow, purple, golden or a mixture of all colors.

What Do Fingerling Potatoes Taste Like?

Once roasted these potatoes have a flavor that is mild, nutty and earthy, and their texture is firm and moist.

Why Use Fingerling Potatoes?

I mentioned earlier that you wouldn’t want to substitute other potatoes in this recipe. The reason for this is that fingerling potatoes braise better than other potatoes because you leave them whole since they are so small. They get soft and tender inside while the skin gets crispy and delicious. Fingerlings are also perfect for fast meals since they don’t have to be peeled and they cook through quickly.

The Ingredients for Dill Fingerling Potatoes

One of my favorite thing about potato recipes is that they usually don’t take many ingredients to make them delicious. This recipe calls for just 7 ingredients. Here is what you will need:

  • Butter: unsalted and used to braise the potatoes on the stove top
  • Fingerling Potatoes: rinse them but no need to peel them and you only need 1 pound of them
  • Kosher Salt: used to flavor the braising fingerlings
  • Black Pepper: freshly ground
  • Fresh Dill: You’re really going to want fresh dill here, but if you absolutely must use dried, use 1 teaspoon. You’ll also use part of the dill while the potatoes are braising and the rest will be added at the end before serving.
  • Garlic: adds flavor to the potatoes as they braise
  • Course Salt: fleur de sel or kosher salt, used to season the potatoes right before serving

The measurements for each ingredient can be found in the recipe card at the end of this post. You can save or print the recipe from there as well.

What Can You Substitute For Fingerling Potatoes?

If you cannot find fingerling potatoes, new potatoes are a comparable substitute.

What is Fleur de Sel?

Fleur de Sel is salt in its purest form. It forms as seawater evaporates leaving a thin crust on the surface. It is so pure that it has no bitterness and adds delicious flavor to food.

I’m going to guess that most people don’t have Fleur de Sel on hand, so any other coarse salt, including Kosher salt works just

Braised One Pan Sausage and Cabbage and Potatoes – St Patricks Day Dinner

a photo of a large white bowl filled with braised sausage cabbage and potatoes ready to be served for dinner.

I don’t know what it is about these three ingredients combined, but this braised sausage, cabbage and potatoes dish is my new favorite easy dinner recipe! Perfect for St Patricks Day dinner!

I don’t love St Patrick’s Day. I can’t ever think up anything cute and the traps, ohhhhh the traps! They are so fun and I love watching the kids work for hours on them, but I’m also not crafty so I don’t just have doodads and whatsits lying around waiting to be artified.

Last year I was feeling all the feels of an inkling that we would be moving soon and then the dreaded St Paddy’s Day hit. I immediately asked my friend Megan why we had to celebrate and she came back with, “just do the ol’ cabbage, sausage and potatoes in one pot and be done.”

Wait what? No whining alongside me? She actually had a plan?! And so I did, I followed her example and recipe and voila! Dinner was done in 30 and it was delicious! WHY IS IT DELICIOUS!? It is literally 3 ingredients but everyone ate the whole darn thing. AND what was leftover I put in the Food Saver and froze it and oh my goodness, it totally held up perfectly a few weeks later when we had it again!

Ingredients for Sausage, Cabbage and Potatoes

Are you ready for the 6 (possibly 7) ingredients you need to make this quick and easy dinner? This is what you will need:

  • Sausage: you can use any type of sausage you want…chicken, turkey, pork, etc…bratwurst also works or a kielbasa
  • Potatoes: I prefer the flavor of Yukon Gold potatoes, but red potatoes would also work or just plain Russets, peeling is optional
  • Red or Yellow Onion: either type works great, it just depends on which flavor your prefer
  • Cabbage: regular green cabbage is my go-to, but you could also use red. If you’re using this for St Patricks Day, then the more green the better!
  • Olive Oil: helps caramelize the onions
  • Salt and Pepper: adds flavor
  • Garlic: this is totally optional, it tastes great without it, but it does add delicious flavor if you are a garlic fan

The measurements for each ingredient can be found in the recipe card at the end of this post.

Tips for Making Sausage, Cabbage and Potatoes

  1. Cut the potatoes to be the same size so that they cook evenly.
  2. Use a dutch oven, it caramelizes the onions and cooks the sausage and potatoes perfectly.
  3. Don’t use too high of heat when cooking. The onions will start to burn before everything else cooks through.

Why You Will Love This Recipe

  1. Easy: you only need 6 (possibly 7) ingredients, and it is all made in one pot which makes it super easy to clean up and the prep work is minimal
  2. Quick: you can have dinner on the table in 30 minute
